I was lucky to travel to #newyork a few times last year and every visit I made sure to hit up @Brodo, and OMG, their recipes are AMAZING! I got their cookbook and have been inspired by their process of making broth and their flavors...soooo tasty!
The recipe below is my own recipe, but my process of making broth and flavor inspiration definitely comes from Brodo...you guys....great cookbook, outstanding cafe. Hope you get to check it out (they have two locations!) the next time you are in the city!
Turmeric Ginger Chicken Bone Broth with Apple (Instant Pot Directions)
Makes 10 cups
2 lbs. of mixed organic chicken bones (I used a mix of feet, backs, necks and wings)
1 yellow onion, peeled and chopped
4 celery stalks, chopped
2 carrots, chopped
1 apple, seeds removed and chopped
2" fresh ginger, peeled and minced
2" fresh turmeric, peeled and minced
1 Tbs. apple cider vinegar
1 Tbs. coconut aminos
3 dried bay leaves
1 tsp. ground black pepper
1 tsp. dried rosemary
8 cups of purified water or enough to reach the "fill" line
Place all ingredients in your #InstantPot. Secure the lid and set the steam valve to "Sealing". Set to Manual, High Pressure, for 60 minutes. Once it has pressure-cooked for 60 minutes, allow the steam to release naturally for another 60 minutes. Remove the lid and strain through a sieve into a large stockpot. Store in individual glass jars (do not freeze glass jars, they will crack!) for 3-4 days or in the freezer for 6 months or so. When ready to enjoy, heat and pour in a mug with a pinch of sea salt and ENJOY!
