RECIPE!  These are a hybrid of a pop tart, mini pie, and a sugar cookie.  But I don't have a name for them yet.  Thoughts? Here's the recipe: (Oven on 350*F) In a mixing bowl, combine: 1/2 cup cassava flour 1/2 cup almond flour 1/2 tsp baking soda 1/2 tsp salt 1/2 tsp vanilla powder (or extract) 1/4 cup oil (I use olive) 1/4 cup maple syrup Refrigerate the dough for a little while , then roll the dough out to be about 1/2in thick. Use a cookie cutter to make small (palm size) circles, bake half of them for 7 minutes. Remove them from the oven and place about a teaspoon or two of your favorite fruit preserves. Cover with another circle of dough, pinch the sides and slit the top, and bake for 7 more minutes. Let them cool and enjoy!

Cranberry sauce is one of my favorite things to eat on Thanksgiving and especially the day after. I love adding ginger and orange rind for extra zest. The flavors really come together nicely and continue to develop. I have been working on recreating my favorite cranberry sauce and this one brings back all the big flavors. 1/4-1/2 orange 1 Tbsp minced ginger 1 Tbsp ghee 1/2 cup apple cider, unsweetened 1 1/2 c. apples, diced 12 oz. cranberries 1/2 c coconut sugar 1/4 tsp black pepper (optional) Squeeze 2 Tbsp juice from orange and reserve. Remove pith and membrane from rind. Dice rind into small pieces and place in small saucepan with 1 cup water. Bring to boil and cook for 10 minutes. Drain and set aside. In large sauce pan melt ghee and add ginger. Cook 2 minutes. Add all other ingredients; rind, orange juice, apple cider, apples, cranberries and coconut sugar. Mix well. Bring to boil. Then reduce heat to simmer and partially cover for 5-10 minutes. Stir occasionally and cook until apple is tender and berries have begun to burst. No matter where or how often I drop in, there’s just something about @CrossFit that feels like coming home. Hell of a WOD to drop in on tonight, but I’m glad I did and could quickly see all of the progress I’ve made since July. First time I’ve felt like “me” all month. 🏋🏼‍♀️

H I L L T O P • store ✨in sawtell, I was recommended this place to stop at on my way up north to our new home, from one of my lovely followers (thank you Lan). I am staying in Coffs tonight, so only 15 mins to go. Oh my lord I have just had the best lunch I have had in a while. Kingfish Sashimi with asparagus, pea shoots & lemony creme fraiche, it was absolutely delicious 🤤 highly recommended stopping here if you are driving north ✨ thank you @thehilltopstore 👌🏼Rx
