Lunch: roasted brussel sprouts, compliant turkey breast, and green olives for lunch. Brussel sprouts (and most veggies in general) are so great and easy to roast up with minimal prepping required. These I just tossed with salt, pepper, garlic powder, and olive oil and roasted. Tonights #whole30 dinner was chicken enchilada soup with celery, peppers, tomatoes, broth and warming spices. I added mushrooms and crispy cavalo nero on top for texture. This would have been perfect topped with sliced avocado but I bought eight, TWO WEEKS ago and they are still hard as rock 🤷🏻‍♀️🥑

Hi, All! #BoneBroth recipe below! I L♥️VE bone broth. It's has so many benefits, it's like drinking a mug of healing golden magic! It has collagen protein, helps your joints, skin and hair and improves your digestion and immunity. Have you tried it?! # I was lucky to travel to #newyork a few times last year and every visit I made sure to hit up @Brodo, and OMG, their recipes are AMAZING! I got their cookbook and have been inspired by their process of making broth and their flavors...soooo tasty! # The recipe below is my own recipe, but my process of making broth and flavor inspiration definitely comes from Brodo...you guys....great cookbook, outstanding cafe. Hope you get to check it out (they have two locations!) the next time you are in the city! # RECIPE: Turmeric Ginger Chicken Bone Broth with Apple (Instant Pot Directions) Makes 10 cups INGREDIENTS: 2 lbs. of mixed organic chicken bones (I used a mix of feet, backs, necks and wings) 1 yellow onion, peeled and chopped 4 celery stalks, chopped 2 carrots, chopped 1 apple, seeds removed and chopped 2" fresh ginger, peeled and minced 2" fresh turmeric, peeled and minced  1 Tbs. apple cider vinegar 1 Tbs. coconut aminos 3 dried bay leaves 1 tsp. ground black pepper 1 tsp. dried rosemary 8 cups of purified water or enough to reach the "fill" line INSTRUCTIONS: Place all ingredients in your #InstantPot. Secure the lid and set the steam valve to "Sealing". Set to Manual, High Pressure, for 60 minutes. Once it has pressure-cooked for 60 minutes, allow the steam to release naturally for another 60 minutes. Remove the lid and strain through a sieve into a large stockpot. Store in individual glass jars (do not freeze glass jars, they will crack!) for 3-4 days or in the freezer for 6 months or so. Not the most gorgeous of lunches but it works. This week keeping it easy and AFFORDABLE with @applegate chicken dogs, green beans, roasted sweet potatoes, and some @farmhouseculture kraut on the side! While heating up today a co worker asked about a cafeteria in one of our schools on campus and if it was good, she then stopped herself and said “but wait, you always pack!” Hey, if that’s my reputation around here. 🎶Back to life, back to re-al-it-y. 🎶 Two or three of you may or may not have noticed my lack of posting over the last week or so?? 😬 It's been a doozy, folks... . ALL 3 kiddos had a tummy bug 🤢, mountains of laundry from said bug 🏔, I got the bug 24 hours before a scheduled weekend away with my hubby for our close friends wedding. Oh, and an urgent care trip thrown in the mix too. Guys. I'm *kind of* finally catching my breath. . Through ALL 👆 that I definitely carry a bit of guilt for abandoning you all, especially during our #januarywhole30!!! 😩 However, I know most of you have grace for me, and for that, I'm SO grateful! 🙏 . Ok, so truth time. I tried my very best to stay compliant but it ended up not happening. Honestly, after 24 hours of no food and just a few sips of water and green juice with a 6+ hour road trip over a snowy mountain pass ahead of us, I was SO hungry but the ONLY thing I could fathom stomaching was bone broth and a rice cake. 😬 I probably could have just had that and moved on, but I'm SUCH a stickler for rules and commitments so we went on with the wedding weekend and I started my #whole30 back at Day 1 yesterday. . It feels good to "be back" AND I have some REALLY fun announcements and things to share with you! Um, like my very first PODCAST interview 😬🙌 and some new fun things happening with my Safer Beauty Babes List AND a fun local class happening THIS weekend in Spokane!!! First breakfast at home in four days and it tasted amazing!! I went into #januarywhole30 knowing I’d give birth around the halfway point and as much as I tried to stick to Whole30 at the hospital, it was impossible. I’m no longer on the Whole30, but now that I’m home I can eat the foods I love most and make me feel good, and enjoy my postpartum journey. If you know me, you know I love paleo/clean eating. So I’ll be sharing those meals with y’all. Also, Im drinking coffee ☕️ again for the first time in eight months and it tastes better than I remember! 😍 I use @nutpods original creamer.

Day 15! THIS IS A GOOD ONE 🙌🏼 Loaded Baked Potato #Soup and this one is #glutenfree and #dairyfree. I decided to experiment because it’s been such “need a soup” weather and produced this goodness. It’s a family favorite now (to make it #plantbased, eliminate bacon and replace with 3 tablespoons of oil and use vegetable stock). . 4 slices of bacon 3 medium roasted potatoes (I use my instant pot) chunky diced 2 cups of finely chopped or riced cauliflower 2 celery stalks diced 1 medium onion minced 1 tablespoon of potato starch 1 box or 4 cups of stock 1 finely chopped scallion. . Cook the bacon and reserve the drained fat (get all those toasty bits out of there). In a pot, pour in the reserved fat, 1 diced potato, cauliflower, celery and onion. Season as needed with s&p. Cook for 5 min then add stock. Cover and let it cook for 10 minutes on low-medium heat. Use an immersion blender or pour into a blender and blend until desired chunky-ness is reached. Toss in the rest of the diced potatoes. Add about a quarter cup of water to make the potato starch into a slurry and slowly pour into soup while stirring. If a more thicker soup is desired, add another tablespoon of potato starch but add slowly because it thickens up quickly. Chop bacon, garnish and enjoy!

JANUARY WHOLE30 DAY 15 🍇🍇🍇🍇🍇 • Quick recap of yesterday! Breakfast was 3 eggs cooked in coconut oil with some raw veggies and TJ’s Vegan pesto. It didn’t fill me up completely which led to some snacking in the afternoon... For lunch I had leftover Butternut Squash Shrimp Curry. On the drive from Duluth to Minneapolis, in addition to tons of water and kombucha, I ate a @rxbar, a @chomps stick, and some seaweed snacks. I waited for awhile between each snack to see if I was truly satiated, but I wasn’t. I know it wasn’t boredom eating based on how my body felt. It’s taken me awhile to hone these signals, but sometimes the body just needs more fuel for whatever reason. I ended up eating a Turkey Burger with @tessemaes ketchup before Zumba last night and my dinner post Zumba was chicken with Tesse’s BBQ sauce and my first time trying @zupanoma. I chose the Beet Orange Basil because I honestly love beets and it sounded tasty last night. It was very thick and filling which was pleasantly surprising. I made a big batch of this spiralized sweet potato hash for the rest of the week! It had one huge white sweet, @aidellssausage chicken and apple, kale crunch salad, mushrooms, diced red onion, and salt+pepper. STOP THE SCROLL!! #transformationtuesday I have been procrastinating talking about what I have started this year because I didn't want to feel judged or vulnerable. But i am just really proud of myself so here it is! Some of you know that I decided to start out the year with a nutrition makeover. I had started to develop some food insensitivities and I just felt slow and bloated a lot. The reset is a 3 week commitment to fueling my body with real foods and slowly eliminating foods that might be causing me to sluggish etc. I gotta say that after 2 weeks with 1 to go I feel so much better already. My biggest accomplishment is that I am not feeling like I need an afternoon nap everyday. I'm notorious for my Saturday afternoon naps because I have to work so early that day, but i haven't felt the need for one the last couple! I have also cleared out my sinuses and breathe a lot clearer lately. I don't have that stuffy feeling in my nose and feel like I can take in so much more air. Let's get to the data. Yes I am also someone who needs results they can "see". So far I'm down 4 lbs and have lost 7.5 inches off my body! To me that is huge! I started and ended 2017 at the exact same weight and in a matter of weeks I got rid of the small belly bloat and an inch off my bra band. Before you start telling me it's all water weight and it will come back, I drink a gallon of water a day and 3 full meals of fruits, vegetables, and some grains/legumes. I also have my supper foods shake once a day for the healthiest and yummiest treat of my day. This had been the hardest part as there are still some leftover cookies in Tupperware and chocolates everywhere. But I promised myself this 3 week commitment and told myself that the chocolate will be there for me when I'm done. Anyway I just wanted to share with you all that I am working hard on making 2018 the healthiest year of my life. I hope you all are having a great Tuesday!

I liked my breakfast meal prep so much I made it again, but with ground chicken. It's definitely going to be in regular rotation. ( It's ground meat and lightly sauteed kale. 01.16.18: 3,000 yard swim this morning! My @apple watch doesn’t track my kick sets, so it’s showing about 1,000 yards less. We got over 6 inches of snow, so the roads are pretty crummy today but I’m feeling great, staying hydrated, and eating really well. 💪🏻🍳❤️

WHOA y’all. Made this chicken caesar spaghetti squash bake last night (recipe by @littlebitsof_realfood) and it is INSANELY good! Only 4 ingredients too!! It took 7 minutes in the instant pot for the squash and about 15 for the chicken — both of which can be done beforehand. The 4th ingredient? @tessemaes creamy caesar dressing 😍 Whole30 compliant and full of flavor, so we’ll definitely be making this again (& again)!

I just came up with this smoothie recipe and it is totally delicious!! It's 1 avocado, 1 banana, 2 tsp chia seeds, 1/2 tsp turmeric powder, 2 pitted dates, 1/2 tsp cinnamon, 2 tsp cacao nibs and almond milk. Even my non hippie friends will like this one! 😂 (even you @_gemmawatts)

You see that smile?! 😃 It’s the 1/2 way mark for my round2 of @whole30 ! 🖤 While this program is not for everyone- this second round has really proved to be great for me! I really can tell a difference in how my body feels in general...more specifically my stomach. Even if a full round of whole30 isn’t for you- try to pay attention to what you put into your body- read labels and ask questions! Sometimes it is mind blowing to see certain ingredients in products/food 🤔 and most of the time, there is another awesome option for that same type of product or food with less “mind blowing ingredients” 🤗 Happy Tuesday everyone!!!
