This week's FOTW: - 12 eggs, whisked. - 4 slices of #whole30 compliant bacon. - 1 yellow onion, diced. - 1 green pepper, diced. - 1 red pepper, diced. - 1/2 cup mushrooms, diced. - 2 large handfuls of spinach and arugula mix. - 1/2 cup water. . 1. Warm up a cast iron skillet on medium heat. 2. Cook your bacon and then remove to a paper towel-lined plate. 3. Keep the bacon grease in the skillet and add the onion. Sauté the onion for 5 minutes. 4. Add the bell peppers to the skillet and sauté for 3-5 min. 5. Add the mushrooms and sauté for 3-5 min. 6. Add the spinach and arugula, and stir until wilted. 7. Crumble your bacon, add it to the skillet, and mix everything together. 8. Whisk your eggs and water in a large bowl. 9. Pour your whisked eggs into the skillet and cook for 5-10 minutes, or until the eggs have set. 10. Finish the frittata in the broiler for 3-5 minutes, or until the eggs are fully cooked through and the top is golden. . Stopped at the local supermarket to pick up a few things to supplement the meats I have thawing in the fridge! If you know me then you know that I have a love/hate relationship with summer for one reason, the heat. I 💛the sunshine but I HATE to be hot. I try to spend the hottest part of the day somewhere air conditioned😂😂 but the summer time evenings are what I live for! My family and I spend almost every evening outside. Grilling out, eating dinner outside, and my kids play until the sun sets!🌤 . . Tonight we grilled up what is apparently my favorite meat, pork! (Brian swears it’s all we eat anymore)🙃I can’t tell you how much flavor this meal had! I consider myself a realist. I don’t do any extreme diets, at the most I might do intermittent fasting but I haven’t kept to that in a couple of months. I have goals but I want to get there by eating real food. ————————- When I was 18 I dated a guy who cared more about my weight than I did. While I dated him, I lost 30 pounds which is sad to me now because I hadn’t even lost anything close to that in basic training. I remember being 123 # and he told me I shouldn’t wear a sundress because “it makes your pooch look big”. Ie, my belly. I still remember taking my Special K 90 calorie bars to have only 1 as my mid morning snack in college and just being absolutely starving. That’s miserable. I don’t want that life. 👎🏼 ———————— This morning I woke up at 152 #. It has literally been 4 years or more since I’ve been that small. The Army says the most I can weigh is 152 or I have to get taped so even though I’ve finally achieved this, I won’t celebrate until I’m actually under 152 🤣. I weighed 178 # when I started my “weight loss” journey in December. It hasn’t been easy and my breastmilk production suffered for it but my goal is to be comfortably under 152 so that way when we try for #2 next year I won’t have to sacrifice my baby’s nutrition for big army. This pregnancy I was 172 starting out 😳😬 ————————— By the way, I bought a sundress to wear for pictures with my daughter. Super simple, no bake, sweet Lemon Pops. . INGREDIENTS 1/2 cup Cashews 1/2 cup Quaker Oats 1/4 cup Coconut Flour (more for coating) Lemon zest (from 2 lemons) 5-6 Kimia Dates 2 tsp Maple Syrup . METHOD (1)Soak cashews overnight or for 3-4 hours (2)Wash them nicely removing any coating that may have formed (3) Put everything together in a food processor and blitz a couple of times by scraping the sides in between. (4) Cashews are soft so this can be made in a mixer as well, but a food processor takes less effort. (5) Test for sweetness and lemon flavour and adjust as needed. (6) Scoop out the mixture on a plate, roll into balls and then roll them into the extra coconut flour till well coated. ⠀⠀⠀⠀⠀⠀⠀⠀ Coffee. I don’t “need” in the mornings, but I love the taste + it’s a favourite part of my morning routine. ⠀⠀⠀⠀⠀⠀⠀⠀ I use to think I need it + would drink 3-4 cups a day. Thankfully I have reduced the amount I drink thanks to chaga + reishi mushrooms, because I usually do a ratio of 1/2 coffee + 1/2 mushroom tea. I also only add grass fed butter, mct oil + collagen peptides these days, instead a bunch of creamer. ⠀⠀⠀⠀⠀⠀⠀⠀ So now I enjoy my coffee + if I want a second cup it’s 100% guilt free. ⠀⠀⠀⠀⠀⠀⠀⠀

Veggie success! 🥦 Fussy eaters at meal times can be very stressful (I get it!), and is often a battle between giving them food that you know they will eat vs giving them food that you know they should be eating. 🥦 Tonight I did a simple side of sauteed vegetables, starting with butter and garlic - flavour bomb! I made vegetables that I like, the way I like them cooked. It totally shocked me that George then proceeded to eat half a plate of them! 🥦 Encouraging kids to eat their vegetables can take some creativity, patience and consistency. If they expect veggies to be on the plate, they will get used to seeing them and hopefully, start to try them. Factors such as texture and flavour are really important, and varies between kids. George prefers savoury food, so butter, garlic and seasoning on the veggies was obviously a winner! 🥦 How do your kids prefer to eat their veggies?

Another family's favorite... My Amazing Meaty & Cheesy Lasagna. I didn't use Bechamel sauce. Just a cheese mixture of Ricotta and Parmesan then topped it with Mozzarella/Parmesan.
