Day late again. Away in Birmingham and so tired after my run that I just fell into bed after dinner. Breakfast was on the train, baked egg cups with extra bacon sprinkles on top (mmm). Lunch was cauli-tabboulah with steak. And dinner more steak, jacket potato, asparagus and cherry toms in the hotel. Yum yum! Not pictured was the naked bar and banana I had pre-run. THE HALFWAY POINT: I made to Day 15 of the #Whole30. No gluten, no sugar, no dairy, no legumes. To be honest, there have been some hard points. It’s definitely not easy. However, I can already say that it’s worth it. I’m learning to have healthy relationships with food and eating, that I’ll carry with me! I feel better than ever. My skin looks awesome (a combo of diet changes and Young Living skincare products), I’ve been sleeping better, and I feel better, overall. I promise, even making a small change is worth it.....I’m so lucky to have a community doing this with me. AND I have the support of the best Essential Oils. PLUS: this meal was delish, I love making new meals, just by combining a protein with veggies/healthy fats, and a small portion of fruit. Here’s to 15 more days, and a lifetime of better choices!

So I’ve been doing a Whole30 since Jan. 1. It has definitely been challenging at times, but I’ve been learning so much about food and clean eating. Since legumes are out for the Whole30, I decided to make a beet hummus. I directly swapped the chickpeas for roasted beets and it is so.stinking.delicious! (If you like beets, haha) Recipe: 1 lbs golden or red beets (about 4 medium) 1/2 cup tahini (homemade or store-bought, but it’s so easy to make!) 1/4 cup fresh lemon juice 3-4 cloves roasted garlic 1/4 cup Olive oil, plus more for serving 2 tsp red pepper flake (optional) Salt and pepper Preheat oven to 400, peel and chop beets, drizzle with olive oil, roast for about 1 hour wrapped in foil or until tender. Blend all other ingredients, add cooled beets when they’re completed. Salt and pepper to taste. Day 14 done. Struggled today with poor planning on the food front after my run; and so my energy flagged to epic lows. Breakfast was a hash. Not pictured was the post-run egg cups (same as yesterday, but only 2). Also not pictured was an Ella's energy ball (didn't give me energy), and a pack of king prawns (they helped!). Lunch was a Spanish omelette with avocado and balsamic dressing. Dinner was steak with sweet potato chips, asparagus, broccoli and a tomato. Didn't finish it all. The halfway point is in sight! Been a busy bee in the kitchen and already prepped breakfast and lunch for the next 4 days, so only need to worry about dinners. A bit late (had friends over for dinner last night and played Cards Against Humanity while trying to ignore the giant pile of washing up I needed to do 🙈) Anywho, day 13 done. Breakfast were 3 made up egg cups (fried up some sweet potato, courgette, onions and peppers and bacon, divided into the muffin tin and beaten eggs poured over the top and baked for 15min) Verdict - yum but more bacon needed 😍 Lunch was a hash with compliant sausages and dinner was curry with cauli-rice.
