Maybe it’s the cooler nights, maybe it’s the shorter days and less chance for exposure to sunny rays, (I’ve been craving mushrooms and they are rich in Vit D! 🍄) or maybe it’s the fact I’m totes jealous my sister is back in Japan enjoying all the amazing traditional ramen bowls I love 😫 Whatever the reason, all the above plus @maggie_beer’s Miso, Mushroom & Soba Noodles recipe, which is jam packed with traditional Japanese flavour made it well worth driving to three different grocers to get hold of 100% buckwheat soba noodles!! 🙌🏼 This could literally have come straight out of a ramen noodle restaurant ⛩I added some firm tofu for extra protein...and because that’s the way I like it! C xx ✌🏼🍏🍃 *Tip: try slow cooked umami broth vs regular stock for that extra hit of flavour to the soup broth!!
