It’s pretty common for me to buy bananas at the beginning of the week that we don’t end up getting to, so the whole banana + egg = pancake (panfakes, as Gerry calls them) has become a ritual weekend breakfast, but I wanted to experiment a little and also use a pantry flour so this is where I landed and we really dug ‘em. 😁👌 . PALEO BANANA BREAD WAFFLES 3 ripe medium mashed bananas 2 eggs 1 t ACV 2 T coconut milk 1/2 cup sifted @peregnatural plantain flour 1/2 t baking soda 1/2 t cinnamon 1/4 t sea salt coconut oil for greasing iron Preheat waffle iron. Combine wet ingredients making sure banana is broken to your liking. Add in dry ingredients and stir until well combined. Grease yr waffle iron grated and then scoop about a 1/3 cup waffle batter per square, and cook according to your irons directions. For me, it’s 5ish minutes per round. I have been on a salad kick lately and this BLT salad from @abountifulkitchen kitchen was EVERYTHING for lunch today! Came together in 30 minutes, and everyone gobbled it down! I Followed the recipe exactly except I used @jovialfoods farfalle brown rice pasta, and dried herbs and green onions since I made it on a whim. I also didn’t have buttermilk on hand so I improvised and made my own by putting 1/2 tbs. of vinegar in the milk and let it sit for 10 minutes. I love a good homemade ranch dressing (self proclaimed ranch snob here🤷🏻‍♀️), and this one was amazing, probably my new go to! Just a little Heavy Metal Detox Smoothie going on here! Aka a glass of healing deliciousness. I picked up my first @medicalmedium book a few months back and can’t recommend them enough. The healing food and drink ideas are so simple - there are no crazy bells and whistles. The ingredients are things we can all access. I now do 16oz of celery juice on an empty stomach every morning before breakfast. I started this the end of May. My stomach is so happy and functions so much better! No more surprise bouts of acid reflux in the middle of the night. Best way to describe it is that it feels like a gentle coating on my stomach and entire system. And my skin is so happy too! I have also been doing the thyroid healing protocol for Hashimoto’s and the changes have been fascinating! My body has gone through so many positive changes with all the healing fuel I am consuming. I really feel it is responding the most to 2 ingredients in The Thyroid Healing Smoothie - ginger and cilantro. My physical and mental energy levels are increasing and my brain is so loving the fruits and veggies which are helping my Gluten Ataxia! Same stuff, different week. Eating healthy isn’t always exciting, and I tend to buy the same stuff every week with some minor variations depending on what’s in season. Bananas (I have a bunch in the freezer already), kale/spinach, berries or fruit (fresh/frozen) and coconut water for green smoothies, a protein or 2 (usually seafood of some kind for me) and a ton of veg for meal prep for lunches and dinner, a grain (usually quinoa or farro). And ALWAYS eggs (Vital Proteins are the only ones I buy, which annoyingly means a trip to Whole Foods bc Trader Joe’s doesn’t stock them), avocado, some kind of nut milk - usually cashew - and hummus. I still can’t believe we are moving to Alaska. 🤯 We boarded the ferry (Columbia) in Bellingham, Washington on Friday afternoon and will arrive in Juneau Monday at 3:15 AM 😳. Our first stop is Ketchikan- which is where I am posting this from. We stopped at Trader Joe’s for the last time 😭 in a while and stocked up on snacks/meal options for the boat. I also grabbed 6 more bottles of coconut aminos because who knows if I’ll be able to find that up here. # # Our plan is to have dinner in the cafeteria Saturday & Sunday (more about killing time with the kids than about the food)... but eating our own food the rest of the time. Being on the boat is kind of like camping- my kids are “hungry” ALL day long. Are you REALLY going to only workout 4 days a week with the program you start TOMORROW?! . Seriously, I’m a little weirded out by it too! Mostly because what will I do with all that time?! I never have this problem. . Really, I’m going to use the time to LIVE LIFE. Rest days are not cheat days so I won’t be using it to eat chips on the couch. Rest day or not, I rarely sit down, #momlife you get me! . 3 years ago, I started with fitness. I started a program that led me to better nutrition, bettered my own habits, our portions, our consist & on going efforts in health. As fantastic as my ideas are, I didn’t come up with all those improvements all on my own. . From my first program I was given the tools I need to keep going! And I deeply believe in the programs & products I use! . So yeah, I’m only lifting 4 days a week! The other days I’ll be scheduling more self-care (on going struggle for me)! My kids like the trampoline park, nature trails & rock climbing gym. I love hot yoga but don’t normally go because I don’t need another workout. But now I can fit it in! . Today is Meal Prep Sunday and yesterday was Bagel-Making Saturday 😊 • I was inspired by my colleague who shared a 5 ingredient bagel recipe with me last week (you know I'm a sucker for a quick and eady recipe😉) I didn't end up making those bagels but found a great little paleo bagel recipe. It would be the dates that are of concern when it comes to smoothness, so if you don’t have a vitamix and don’t want to chance the dates, use stevia or another natural sweetner. Time and time again this dish is a winner!! . For a long while I thought slow cooked casseroles all tasted much the same; add some beef, stock, carrots & celery and voila an uninspiring stew that does little to impress! We picked up our CSA share from @robbensnestfarm yesterday afternoon, and used the summer squash and cilantro to make this Elote with zucchini noodles recipe from @inspiralized. In addition to subbing summer squash for zucchini, I used full fat coconut milk over yogurt, and grated @kerrygoldusa Dubliner Irish cheese on top over the queso fresco/feta. smoked salmon sourdough Sunday 💕 fresh sourdough straight from the bakery + 🥑 + smoked salmon = a savory trio I highly recommend 😎 after getting home past midnight from babysitting last night (and having quite the busy day at work right before that), I chose to sleep in a little, and then do some cross training + a yoga flow over my usual Sunday long-run. such a great decision - my body is already thanking me ❤️ as much as I love running + pushing my body, I’m not training for any particular race, I just run because I enjoy it. So if taking a few days off of running because life is busy/stressful is what I need for my body, then that’s what I’m doing! running is a stressor on the body - it’s easy to forget that! What does Sunday morning look like at your house? . @coachblue834 house we started a tradition of having waffles every Sunday. We used to use a pre-made mix because it was easy and tasted very good(at the time). . Somewhere around 2 years ago we participated in a clean eating challenge with our gym. The first week went great and then Sunday hit.... wtf do we do?! . After a little scrambling and some Google searching we came across a recipe from PaleOMG. It was fantastic! Soo much better than our old pre-made mix! . It must have been fall because the recipe calls for pumpkin puree. Incase you are like us and don't keep that on hand- use half coconut flour and half almond flour. That should keep them moist without the puree. . Don't be afraid to experiment either! We typically double the recipe and sometimes add cinnamon or fruit. . In fairness we still keep a box of the pre-made stuff in the pantry for lazy Sundays or when we don't have all the ingredients. But our paleo version tastes so much better we rarely use the other stuff. . Remember routine is your friend when trying to clean up your diet. I make enough so I can have a waffle in the morning with my bullet proof coffee for breakfast. Which sets me up for success during the week. . Find what works for you and stick to it! . Sunday traditions 🙌 Growing up, my dad made pancakes every single Sunday 😋 I tried to continue that tradition for a while, but I kind of let it go. Maybe I’ll pick it back up when I have kiddos! Do you have a Sunday morning breakfast tradition?? My go-to pancake recipe (pictured above!)👇 Fluffy Banana Pancakes * 4 pasture-raised eggs * 2 medium bananas * 3 Tbsp Coconut Flour * 1 Tbsp Arrowroot Starch * 1 tsp baking powder * pinch of salt * pinch of cinnamon * grass-fed (Kerrygold) butter to grease skillet 1. Add all of the ingredients (except the butter) to a large mixing bowl. Mash the bananas roughly with a fork. Then use an electric hand mixer to thoroughly combine your ingredients into a smooth batter. The batter should be about the consistency of a muffin batter. You may have a few chunks of banana. 2. Heat a small non-stick skillet over medium-low heat. Add a small slice of butter to your heated skillet, and allow it to melt. 3. Once the butter is melted, add about 1/4 cup of batter to your skillet. 4. Cook the first side of your pancake until the edges become dry looking, and the underside is golden brown. Flip with a spatula, and repeat on the second side until both sides are golden brown. 5. Remove your first pancake and place on a plate to rest. In between pancakes, I like to wipe the skillet down so the excess butter will not burn, and remove the skillet from the eye to let the pan cool down for just a few seconds. This helps to not burn the next pancake. 6. Repeat the process until the batter is gone. Add more butter with each new pancake. 7. Top with your choice of add ons, and enjoy! Makes 6-7, 5″ pancakes

🐟Grilled Chipotle-Mustard Salmon! This is my go-to salmon recipe. I just love it. It couldn’t be easier or tastier! In a small bowl, combine 1/4 cup prepared horseradish, 1/4 cup stone ground Dijon mustard, 1/4 cup mayonnaise, 1 tsp chipotle powder, 1 Tab fresh snipped dill. Lay 1 pound of salmon on sturdy foil. Spread with 2/3 of sauce. Grill until fish flakes with fork. (You can also bake this fish at 350°F if you don’t want to grill it, but I would put it in a pan with sides so the sauce doesn’t drip on your oven.) Serve with remaining sauce. Yum!!!
