Zingy Pork a la King...
Had this a couple of nights ago it was delicious. I was feeling to rough and sorry for myself to post yesterday.
500g Pork fillet
1 yellow pepper, diced
1/2 Courgette, diced
2 tsp mustard powder
2 tbsp Gluten free flour
350 ml Lactose free milk
275 ml Homemade chicken stock
3 gherkins, rinsed and diced
Roast the pork fillet for 30 minutes at 180 degrees, allow to stand for 15 minutes then dice.
In a little oil flash cook the yellow pepper and courgette.
Place the butter in a pan and gently melt, add the mustard, black pepper and gluten free flour and stir to form a paste. Remove from the heat and while stirring gradually add the lactose free milk and stock. Once all mixed return to the heat, stirring continually until the sauce has thickened and starting to come to the boil.
Add the yellow pepper, courgette, pork fillet and gherkins and simmer gently for 15 minutes.
I served with rice, it would also be tasty with gluten free pasta or just a gluten free loaf of bread.
