Happy Friday! For this edition of my #fridayfavorites, I can’t wait to tell you about my new FAVORITE way to sneak in veggies for kids.
On Monday, I made a big batch of taco filling for us to eat over the course of the week. However, I made it with a twist -- I added a can of black beans AND a bag of riced cauliflower. (I added an extra packet of taco seasoning because I had a lot more in the pan than normal.) I have been loving these taco sliders all week, so today I thought I would make up another batch for the kids to have for lunch. I couldn't tell there was cauliflower hidden in them and I am a picky eater -- but the true test would be putting it up against the daycare kids. I am happy to report... ZERO complaints!
So, you're welcome. Next time you're making tacos for your family, mix in a bag of frozen riced cauliflower for some added veggies, sit back, and smile as you fool them. For small kiddos, I like to make them more like quesadilla style; the melted cheese helps minimize the mess and they are able to pick it up and eat it easier.
