One of my absolute fave @whole30 dinners. This is a sun-dried tomato and pistachio pesto zoodles past with chicken. @inspiralized veggie burrito bowls with spiralized peppers + onions. This was my first time using the #inspiralizer for peppers + onions and I don’t think I’m ever going to stop. Soooo easy! I’ve loved to bake as long as I can remember and in the past I’ve just put that on hold when I was trying to eat healthier. But this time around I’ve tried to incorporate my love into my healthier lifestyle with just healthier recipes. Right now that means more paleo treats made with ingredients like nut butters, coconut sugar, and almond or coconut flour and less refined sugar and all purpose flour. That’s not to say it’s just a paleo-treat-apolooza over here, it’s still a balancing act to get all the greens and healthiness in every day so I can feel good indulging once and awhile. Balance, people, balance. This was my foray this week, @fitmittenkitchen paleo banana chocolate chip skillet cake. So good with a really moist crumb and lots of loft! Best served warmed with a melty drizzle of @crazyrichardspb. You won’t be sorry.

I don't know about you, but I used to shovel in the Skippy. Rather, I'd restrict my meal to one piece of wheat bread with like a TBS of PB, called it healthy, thought that the fact that I still wanted food afterward was just a matter of willpower, then binged on a ton of peanut butter later & beat myself up about it. Phew. Sound familiar? I hope not, but it's a thing a lot of people go through. 🥜 Anyway, I began to let go of the idea that less food was healthier when I started eating paleo nearly two years ago. Peanuts are off the menu on paleo since they're a legume, but being in school with @ntatraining has taught me a lot more about individual tolerance. Yesterday I had an idea that would've seemed pretty bananas to me not so long ago: maybe my body can tolerate peanuts. 🥜 I don't know if this is true, at least not yet. Legumes in general can be hard on the intestinal lining because they contain a lot of lectins. Lectins are a sort of protective mechanism for the plant so that it can continue to reproduce. When we eat too much stuff that's hard to digest, it ultimately starts to affect the immune system. As someone with an autoimmune disease, my gut has been beaten to a pulp. Still, I've done some healing & figure I'll give this a shot. 🥜 General tips for legume consumption: Soaking & sprouting legumes reduces the lectin content & makes them easier to digest. 🥜 General tips for peanut butter selection: Peanuts are really susceptible to mold. It's best to buy organic PB + stay away from processed oils/sugar. PB that contains high fructose corn syrup, soybean oil, or canola is best avoided. 🥜 Have you reintroduced something you thought you wouldn't do well with? How'd it go? I had such a great time meeting one of my sisters, @carries12345, in Nashville today! Mmmmm idk what to call this but it's soooo good!!! Asian basil beef stir fry? I'll keep brainstorming... Broccoli, peppers, onion, mushrooms and carrot sauteed with coconut aminos, olive oil, garlic, salt, ginger. Beef with fish sauce, coconut aminos, onion, garlic, salt, fresh basil and dried basil and ginger. Serve with rice or cauliflour rice to make it Paleo and whole30! Top with loads of cilantro and more fresh basil!

#tbt ....This is the hill that started my weight loss workout journey. I started by walking this hill almost every day, then jogging, then pushing myself to run it. Running backwards, side by side, just to get up this darn hill. Now, I can run it. Today, I could run with no back pain and no shin splints. Some days are amazing and some days are a brutal struggle. Guys it's here! The new bar on the block and I'm hooked 😍 this baby has 150 calories, 10 g of protein and SINGLE DIGIT SUGAR grams. Oh and it's gluten free. And has chocolate all over!! Currently spreading this homemade avocado tomatillo salsa (recipe below) on just about everything. I sautéed up some shrimp, mixed in some @cecesveggieco zucchini spirals (ad), and then sauced it up with the salsa for a quick and easy meal. You have until May 13th to submit your recipe!⠀ avocado tomatillo salsa - in an oven preheated to 350 degrees, cover 7 tomatillos, 6 pearl onions, 3 cloves garlic, and 2 jalapeños in a little oil and roast for about 30 mins. Add to a blender with 1.5 tablespoons lime juice, red pepper flakes, and s&p and blend until smooth. Add a whole avocado and blend again. Add 1/8 cup cilantro and pulse until combined. This morning, I had a “choose your hard” moment. I woke up naturally before my alarm, and decided to prepare an egg bake for breakfast before work. In the midst of chopping my veggies, I had a moment where I felt angry that I sacrificed getting out of bed early in order to eat a healthy breakfast. But then I remembered that this is a lifestyle I am choosing, and I’d rather spend time preparing a delicious meal than eating a convenient breakfast that makes me sugar crash later. Hai! I’m back! Back from vacation and trying to get back into a routine is never easy, am I right?! + Whipped up some Whole30 Chicken Salad because sometimes you’ve just gotta force yourself back into normal! + Give it a try! + Bacon, Jalapeño, and Sun Dried Tomato Chicken Salad! * 1 lb Boneless/Skinless chicken thighs. Cooked and chopped small * 1/2 cup cooked and chopped compliant bacon * 1 small jalapeño, seeded and diced * 1/4 cup sun dried tomatoes- diced * Pinch of salt (go easy) * 1/8 tsp ground black pepper * 1/2 tsp lemon juice Mix it all up and throw in the fridge to chill! I like at least a couple of hours so the flavors combine! Serve with lettuce cups, or on top of a bed of spinach! ENJOY! ~serves 2, maybe 3 depending on how hungry you are 😜

I never really cook with bok choy, but half the fun of eating Real Food is trying new food. I stuck pretty much to the recipe except I used sweet potato noodles instead of butternut squash because that’s what I had on hand, and I topped it with a bit of sesame seeds for an added crunch. The flavors are mostly peppery and creamy. # If you haven’t tried Jovial pasta, it is the best grain free and bean-free pasta I’ve had, texture and flavor wise! If you’ve had brown rice pasta and thought it tasted tough or like dirt, give this one a try. Your kids probably wouldn’t even know it isn’t wheat. Mine didn’t! # Tarragon is an herb that I’ve not used much in my kitchen. It’s peppery and has a slight fennel-like flavor. I’ve only used it in a white wine lime sauce after trying it at a restaurant several years ago. I would love more ideas for it, that aren’t cream based. If you caught my IG stories the other night you would have seen me making this spicy chorizo skillet. It includes @preschoice mild chorizo sausage, red bell pepper, green bell pepper, onion, mushrooms, @salsavalentinaoficial hot sauce, @rizopia brown rice noodles, & topped with cheese and @peasoutfarms pea shoots for garnish. Using rice noodles made this dish #glutenfree and could be made paleo if you skip the cheese on top! It seems like life never slows down! Busy week this week, and I am so grateful I spent all afternoon in the kitchen Monday preparing my meals for on-the-go. I reheated this lovely dish in the microwave, and my lunch was ready in 3 minutes! Can’t beat that. 🤗 Chicken thighs, mushrooms, onions, and kale, roasted carrots, and 1/2 an avocado. I cooked all the veggies and chicken in @fourthandheart grass-fed ghee.

So, real talk: I am (slightly) emotionally exhausted and STRESSED to the max right now. And instead of running to sugar-laden-processed garbage that I would have done in a former time, I’m grateful that through #whole30, I’ve figured out garbage doesn’t make me feel better - It makes me feel worse. Way worse. Healthy, whole foods - they make me feel in control in a time I feel like I can’t control anything else. And Honestly, I have no idea how much I weigh or how many inches I’ve lost in all my rounds — but this feeling of calm and power (and after I ate, pure happiness because it was damn delicious) - is better than any number a scale or tape measure could ever show me. # Lunch is chicken apple sausage on baby spinach with some @tessemaes creamy ranch. Feeling a #throwback Thursday! I usually only post a transformation type picture once a month but feeling wild today 😂 - On the right is me in 2008. I was depressed, in law school, and rapidly gaining weight. Hadn’t hit my peak (weight) yet. On the left is me earlier this week, around 100 pounds lighter and way happier and healthier 😃. I’m really starting to see more definition in my arms and it’s got me like 💪😁
