Even though I’m not on a round I decided to start logging each day on a calendar because I’m a very visual person and I like to see things clearly! This reminds me that my food is actually going really well. There has been one day that I was not comfortable with marking off and it was when I ate too much paleo granola. I didn’t like the way I compulsively ate it but I would say I overate rather than binged. I’ve had thoughts and urges but I haven’t acted on them. I might be struggling a little mentally with my ‘food freedom’ but I must stop punishing myself for having compulsive thoughts. My habits were created years ago so of course I’m going to have urges - I think it’s a good time for me to look at this, realise all of the successes that I have had and remember each time that I’ve had a win, no matter how big or small ☺️ Ps - might get my water bottle out haha

EASY @WHOLE30 MASHED POTATOES 🥔 this is my fave simple way to make a white potato mash on the Whole30- chicken stock is the secret! I actually used @kettleandfire mushroom chicken broth this time around and it tasted AMAZING 🙌🏻 Here’s how I like to make my mash. Here’s what you need: - 5 medium-sized russet potatoes, peeled - 1 1/2 C. Chicken Stock - 1 Tbsp. Salt - 2 Tbsp. Avocado Oil Here’s what to do: 1. Chop peeled potatoes in half and boil for 40 min. Test with a fork for done-ness, drain, and return to pot. 2. Wait for potatoes to stop steaming, about 10 min. This keeps the texture from going gluey by mashing too early! Then, mash the potatoes. 3. Slowly pour in chicken stock, about 1/4 c. at a time, stirring continually, until texture becomes smooth. 4. Stir in salt and avocado oil. Add more salt to taste if necessary. Serve immediately! I have LOVED how my body responds to eating homemade, filling, colorful meals. I have not necessarily loved the prep behind all of it. One of my solutions is to prep in little ways: packing breakfasts to go, making large meals to ensure leftovers for lunch the next day, crock pot dinners and freezing what's left. You don't have to meal plan and prep a week of food every time if you don't want to! Do what works for you! Meal prep on repeat for half of this work week; taco salads! Quick Pickled cabbage: celery seed + lime juice + garlic. Blended guac: cilantro + lime juice + garlic + jalapeño + salt + avocado in food processor until creamy + stir in diced red onion - top on salads (and everything else!). My eight year weight loss journey - My weightloss journey is a lengthy one and nonlinear- I’ve had so many ups and downs, so many times regaining the same weight I had lost. Overweight since I was very young, and obese since high school, the picture on the left was a “final straw” to where I am now. I didn’t recognize myself anymore. For the first few years of my journey I focused on food only, and cycled through almost all the diets out there: weight watchers memberships, atkins, calorie restriction, dukan, keto, whole30, master cleanse, liquid diets, vegan cleanses. All the while losing weight, gaining back a large portion of it, losing, plateauing, repeating for months at a time. The death of my mother at 49 years old was my second wake up call- she was obese and her high blood pressure was unchecked. I had inherited high blood pressure from her, and have been medicated for it since I was a teen. I realized that I too would die before I turned 50 if I didn’t start taking my health seriously, so I focused more on losing weight, and including exercise to improve my heart health. (My exercise journey warrants its own separate post later this week) At some point, after a year of plateauing, I decided i’d hit goal weight; it wasn’t my goal, but I assumed it was all I could do. I then slipped in and out of my maintenance range over and over again, always frustrated. Yes I was keeping the bulk of 90lbs off my body at this point, but while gaining and losing 15lbs over and over again. Then I saw my IRL friend @ketoandcheese start the keto diet in early 2017 with remarkable results. I watched her for several months before quietly deciding I wanted to give keto another try- after all, majority of my weight loss success had been on low carb diets. So I scaled back on exercise in order to give my body time to adjust to the new way of eating, and began a low carb high fat diet. And miraculously- stuck to it! I took a few days off at Christmas/my birthday, and then again on a trip to New York city, but otherwise stuck to it and felt happy and satisfied doing it (what worked for me to be explored in another post). I lost that 15 pounds, and then 15 pounds more 😃🎉

ROUND 2 DAY 2: My original Whole30 Stuffed Acorn Squash! Perfect for the fall! • Ingredients (for two people) 1 tbsp coconut oil 1/4 tsp salt 1/4 tsp pepper 1/2 tsp cumin 1/4 tsp onion powder 1 garlic clove 1 carrot (peeled and chopped) 1 apple (I used a Gala apple, chopped) 1/4 cup Apple cider 1 tbsp apple cider vinegar 1/2 pound ground beef 1 tbsp olive oil • DIRECTIONS: 1. Preheat oven to 375 degrees. Cut acorn squash in half and scoop out the seeds. Coat with coconut oil and the salt, pepper, onion powder and cumin. Put in oven for 45 mins. 2. While the squash bakes, add olive oil to a large frying pan with medium heat. Add the ground beef and minced garlic. Add salt and pepper to taste. Cook until meat is browned. Drain excess liquid if needed. 3. Add the apple cider, apple cider vinegar, carrots and apple. Cook on low heat for 10 minutes. 4. When the squash is done baking for 45 minutes, take it out of the oven and scoop out some squash to add to the meat and veggie mixture. Then add the mixture to the squash and return to oven for 10 more minutes. Enjoy!!! I loved this and it was fun to experiment with these flavors.

Artichoke Antipasto Chicken with Feta . In my stories I was showing off some huge filet mignon I was preparing for dinner. Even made the cheesy spinach to go with it. But then my husband got some bad news regarding his dads health. And he’s feeling down so we’ll save the massive steaks for tomorrow when he’s hopefully feeling a little better. Thankfully I had just cooked this chicken to be used for my lunch for the remainder of the week. So we’ll have that instead! 1 lb chicken tenders seasoned with salt, pepper and garlic. Spray pan with olive oil and cook chicken. Once cooked add 2 tbs light Olive Garden dressing to the pan and 2 tbs Trader Joe’s artichoke antipasto and toss chicken in it. Place chicken in a baking dish and add 1 more tbs of artichoke antipasto (spread around) and 1 oz Trader Joe’s Fat Free Feta. Bake at 400 until edges a little crispy on the chicken. **TACO SKILLET** • • ____Did you have a specTACOlar day? ⬇️ I’ve been uber busy with work and travel, so I’m now back on track to counting my macronutrients. This taco skillet is packed with protein and plenty of vitamins and minerals with all of the veggies. What I love about this recipe is it took less than 20 minutes to make. It’s ugly as hell. But this cheesy spinach I just whipped up is so good. Like really, really good!! I’m trying to not eat it all before my husband gets here to cook the steaks. I cooked 4 bags of spinach and it only gave me two cups cooked. Good Lord what a rip off. I sautéed a diced onion and 2 cloves minced garlic in a little olive oil, then strained the spinach and added that. Salt, pepper and garlic to taste. Then I added 2 oz light cream cheese, 1 oz light mozzarella and mixed that all in. I put in a cast iron skillet and topped with 1/8 c Italian bread crumbs and 1 tbs Parmesan cheese. 🤤 It’s so good! Easy. Simple. Clean ingredients. This continues to work for me. As long as I cut out most sugar/desserts/Chick-fil-A cookies, I still lose the baby weight. My clothes continue to get more loose, but I'm still eating big portions. I'm not about eating tiny amounts of food and starving my body to fit into some skinny jeans. I'm about eating real, whole foods that nourish my body (and keep my nursing baby happy too). But YOU have to find what works for your body. Macros, weight watchers, whole30, paleo, it goes on and on, and I have so many inspiring friends that do each one. This style of eating won't work for everyone, but it sure works for me! 👊🏼💪🏼

Normally I’m on the side of “If I have to lettuce wrap it, I’d rather just make a salad out of it for convenience.” But eating @dollyswholelife Cheeseburger Skillet out of Romaine lettuce boats was an excellent life choice! Dolly nails the flavor palette of this dish giving it that “cheesy” taste without any dairy. I topped mine with some @primalkitchenfoods ketchup, which is 💯 percent worth all of the hype. I think I’ll throw this into my meal prep rotation. It’s soooo good! 😋

Chili is such a comforting dish for me! I make a batch almost weekly through the fall and winter. It’s cold and rainy and I’ve got a sick babe, so I thought it was the perfect time to throw together my first batch of the season. Legumes were the first food I identified that bother me. I used to load my chili with 3 or 4 different beans and I would be bloated and in pain the rest of the week. Hello Insta-friends! 👋🏼 I am excited to be back after taking a nice break from posting on social media. (Did anyone miss me?? 😜😜) My kids are also back to school today after Fall Break (minus my feverish 5 yr old next to me 😞). This past week we’ve had so much rain with some beautiful cool weather in the 70’s, which is not typical for AZ this time of year. It has been so wonderful!!! 🙌🏼 # Now about this delicious breakfast sandwich — I recently discovered @mikeys english muffins and muffin tops. So delicious and gluten free, grain free, dairy free, soy free, etc. (They are sold at @sprouts, in the frozen section!) My favorite go-to recipe for a delicious Whole30 meal is this buffalo chicken casserole from @paleomg . A few nights ago I finished off the last of the casserole with some greens, fried eggs, avocado, and the last of my purple sweet potatoes which I roasted with cinnamon in vanilla bean ghee from @fourthandheart. I drizzled the sweet potatoes with @rxbar vanilla almond butter for the most perfect combination! 🤤🤤

This is nacho typical taco Tuesday. See what I did there? 😂 Here we have bbq chicken nachos and it’s one of the easiest thing to make. I’m willing to bet you have most of these ingredients. Ready? — One bag of @artisantropic plantain strips or cassava strips (I used both here because they’re awesome) Leftover chicken shredded and tossed in bbq sauce Crumbled bacon Sliced red onions Diced tomatoes Vegan shredded cheese (or regular cheese if you can tolerate it) Fresh chopped cilantro Pickled jalapeños Guacamole Sour cream — Preheat oven to 425°F. Layer half the bag of @artisantropic strips on the bottom of a cast iron skillet or baking sheet. Top it with bbq chicken, crumbled bacon, red onions, diced tomatoes, shredded cheese, and cilantro. Repeat to get two layers. Put skillet into oven for 10-15 minutes or until cheese melts and everything is heated through. Serve with guacamole and sour cream on top. — Sponsored by @artisantropic
