New recipe for dinner!
4 boneless skinless chicken breasts
4 medium-large potatoes
Equal parts salt, pepper, smoked paprika, Italian seasoning, savory
Half part cayenne pepper
Broccoli, cut into small florets
Preheat oven to 450F.
Cut potatoes into nice sizes.
Coat chicken on all sides with olive oil & half of spice mixture. Lay out on baking tray.
Coat potatoes in olive oil & remaining spices. Lay out between chicken breasts.
Bake 25-30 minutes. Let rest out of oven 10 minutes.
While it’s resting, steam broccoli in small saucepan with small amount of boiling water & lid (5 minutes or so). This is a good time to steep some tea for dinner, too - I chose peppermint with almond milk. .
I ate half a chicken breast, so that left me 7 leftover chicken servings (froze 5, refrigerated 2), 3 potato servings, 1 broccoli serving. .
