When @lowfodmaplondoner invites you round for a sleepover and you create the most delish dinner! We tried the @sainsburys Gluten Free Crispy Beef which was quite good, wishing there was more beef in there though as a lot of it was just batter. However, it felt weird to have something ‘fried’ and ‘naughty’ that was gluten free?! And then we created the best aubergine bake you can imagine!!! So soft and full of flavour 🤤 all paired with some Kale and Green Beans. Honestly had one of the best weekends, seeing Rhii and all the other girls and then spending the rest of my time with Lauren being absolutely treated like a queen. 👸 More times like these are needed for sure!! ___ Who else thinks this looks and sounds delicious? 😳

💥High Protein + Fat meal prep going down💥 Yes purposely high fat because 1. Yum, 2. It's super filling, and 3. It's hopefully going to aide my digestion and help to clear up my skin 👌 - Soooo it goes a little like this: ▫️Breakfast: smoothie with berries, almond milk, water, peanut butter, cinnamon and egg white protein powder ▫️Snack 1: Cheese and cucumber - made into lil sammies 😍 ▫️Lunch: Turkey, avocado, spinach and coleslaw salad ▫️Snack 2: 2 hard boiled eggs and 30g mixed nuts ▫️Dinner: Some form of protein + fat + veggie combo - My macros for tomorrow are for about 1500 cals, with 19g of carbs, 94g of protein and 117g of GOOD fats 💙 last time it took me a good 3 days to get used to this macro split, but then it was easy peasey and very satisfying - even the sugar cravings were gone!! Throwback to Saturday’s brunch at @wearemommi in Clapham to celebrate @glutenfreerhii’s birthday. I had the baked pachamanca ham & eggs with a few changes to make it low FODMAP. This turned out to be ham, fried eggs, spinach and tomato. It was really tasty, especially the ham (however the toast was an additional £2.50 - bit extravagant!) But most importantly it was great company and I had the chance to catch up with lots of lovely gluten free bloggers.

Monday night dinner is actually Saturday night leftovers ‘jazzed up’. Here goes... the curry is chicken tenderloins with spices (turmeric, paprika, coriander and a tiny bit of chilli powder). I marinated the chicken in the spices with extra virgin olive oil and 5 TBSPs of almond meal to bulk it up. To cook, I browned the chicken then added a tin of light coconut milk and lactose free sour cream. Simmer for around 30 minutes to thicken up. Today I just added green beans and spinach as there wasn’t much left. Our last meal in Krakow was perfect. We went to @podaniolami in the Old Town. It was another charming restaurant where you go down into the cellars. For starters I had goose carpaccio which came with poached pears, spiced cranberries and spiced plums. None of the fruit were low FODMAP but I ate it all as I wanted to have one non restricted meal on our trip. It tasted amazing. The flavours were Christmassy and so delicious! For my main course I had wild boar steak with red cabbage, potato and a juniper red wine jus - this was all low FODMAP. It was amazingly yummy. It again had Christmas flavours which I love. My husband had pierogi which are polish dumplings which he said were amazing, and a steak for his main course. Low FODMAP Hawaiian pizza is the perfect lazy Monday night meal! Here’s our super basic (but YUMMY) recipe for you to enjoy! We made this dairy-free by using @angel.foodnz cheese. SERVES 2 INGREDIENTS 2 gluten-free pizza bases* 8 tbsp tomato paste 1 ½ tsp dried oregano 113 g (1 cup) mozzarella cheese or vegan cheese* (grated) 120 g shaved ham* (chopped) 145 g (1cup) fresh pineapple (peeled and cut into small pieces) 90 g streaky bacon* (cooked & crumbled) Low FODMAP salad (to serve) *Check for high FODMAP ingredients METHOD ⭐️Preheat the oven according to the pizza base packet directions. Line a flat baking tray with baking paper. ⭐️Fry your bacon in a frying pan over medium-high heat until browned and crispy. ⭐️Place the pizza bases on the oven tray and cover with tomato paste. Sprinkle with oregano, cheese and salt, and pepper. Then top with cubed ham, pineapple chunks, and crumbled bacon. ⭐️Bake the bases according to packet directions, until they are golden and the cheese melted. ⭐️While the bases cook, make the salad. ⭐️Serve the pizzas hot with the salad on the side. 🍊Instant Pot Orange Chicken🍊Googling for Instant Pot recipes and found this one from “Sweet & Savory Meals”. It took about 14 mins to reach pressure and then it’s just 5 minutes on Manual. I omitted the garlic to keep it low FODMAP. I also used only brown sugar as this recipe calls for both and white and brown. The orange zest is mandatory as it really helps intensify the orange flavouring. Served with Basmati rice and steamed broccoli. The goal of that is to build the strength of the muscle and progressively lift heavier with lower reps in the 4 to 6 range. I’ve been stuck in a rut. Taking one step forward and two steps back. While I’m proud of keeping up my exercise all year I am not proud of my eating. New recipe for dinner! . 4 boneless skinless chicken breasts 4 medium-large potatoes Olive oil Equal parts salt, pepper, smoked paprika, Italian seasoning, savory Half part cayenne pepper Broccoli, cut into small florets . Preheat oven to 450F. Cut potatoes into nice sizes. Coat chicken on all sides with olive oil & half of spice mixture. Lay out on baking tray. Coat potatoes in olive oil & remaining spices. Lay out between chicken breasts. Bake 25-30 minutes. Let rest out of oven 10 minutes. While it’s resting, steam broccoli in small saucepan with small amount of boiling water & lid (5 minutes or so). This is a good time to steep some tea for dinner, too - I chose peppermint with almond milk. . I ate half a chicken breast, so that left me 7 leftover chicken servings (froze 5, refrigerated 2), 3 potato servings, 1 broccoli serving. . First of all, be open and honest with your provider if you're not understanding the advice you've been given. Try bringing along a list of questions if you know you get flustered during appointments. If don't feel comfortable speaking up then bring a friend or relative for support, or find a new provider you feel more comfortable with. Sometimes you just don't click with your provider and that's okay - we aren't offended if you need to find someone else who better meets your needs!

But......the last ingredient in this quick lunch fix lunch in the sauce is onion! 6. I will have to say that I handled it well. It might be that the #onions were the last ingredient so the ratio might have been small! I didnt EAT it all I only had one serving. But yeah... I'm getting there! 🙋

My food allergies, sensitivities and sub-optimal GI reactions leave me so BORED with my tiny palette of meal options, I could weep. Today, in desperation, I took a plunge and bought a whole starter kit of dried fruit. I'd never let myself buy dried fruit at @kowalskis_markets before because it's SO EFFING expensive, but I'm so burnt out on All The Other Snacks, I had to do something. So far I've had a flattened pear, some mango filings, and chocolate covered banana chips. They're ok. I wouldn't say they've changed my life yet. I might have to acclimate to longer periods of mastication. I dunno. 10 minute salmon lunch! I had to be up at 3:15 this morning to catch my flight ✈️ home, so it’s safe to say I just needed a super fast and easy meal once I was done traveling. Y'all, seriously - if you have not tried delicata squash, you are missing out. This beautiful winter squash is a great source of fiber and potassium and super tasty!! There are tons of great ways to cook it, but I love this simple roast. . . Preheat oven to 400°F. Wash squash and cut ends off. Cut in half lengthwise and scoop out the seeds. Slice into 1/2 inch pieces. Toss with ~1 T olive oil and a handful of San Marzano or cherry tomatoes. Season with 1 t parsley and 1/2 t thyme. Salt and pepper to taste. Roast for 20-25 minutes, turning squash halfway through. . . Unlike most winter squashes, the skin will soften while cooking and is edible!
