▪️F O O D P O R N ▪️ . This afternoon when I got off work I was CRAVING unhealthy food (Panda Express). I decided to make a healthier version of my favorite dish at home to help stop the craving. I made sweet chili shrimp over rice. I substituted the sugary unhealthy store bought sauce with a mix of sriracha, garlic, honey and avocado oil. Let me tell you guys it was SO good! . ▪️ ▪️ ▪️ On another note I forgot how much I enjoyed to cook! I’ve been so busy and with studying abroad last semester this was the first time I was able to cook a nice meal in a while. And REALLY easy to make.😋 . 🥕Preheat oven to 350 🥕Chop carrot in half 🥕Take top half of carrot and chop it lengthwise to create a “fry” shape 🥕Repeat for bottom half 🥕Toss “frys” with 1tablespoon of olive oil & Parmesan cheese, 1tsp of garlic powder & parsley, half tsp of salt&pepper. 🥕Arrange on a baking sheet and bake for 15-20 minutes. . Confession: prior to macro counting and #strongeru we were salad haters. To be fair, I didn’t know how to construct a good salad. Funny what you learn when you get deep into a cut- you want the most macro bang for your buck! Also worth noting... I’m an embarrassingly fast eater and cabbage is really hard to eat fast, so this is a filling winner! Strongly recommend adding cheese to this- I’ve tried goat and feta! Red Cabbage Green Apple Walnut Salad 1000g red cabbage, chopped 150g red onion 1 garlic clove 3.2oz green apple, chopped 30g walnuts, chopped 2 tablespoons olive oil 2 tablespoons apple cider vinegar 4 tablespoons Apple cider Over medium heat in a nonstick pan sprayed with olive oil spray, sauté garlic and onion until onion is soft. Turn heat to medium low, spray again and add in cabbage. Sauté cabbage until it softens and begins to change color. Add in apples and walnuts and sauté for another minute or two. Remove from heat. In a small bowl combine olive oil and apple cider vinegar. Pour over salad and mix well, then pour apple cider over and mix.
