Weeknight Taco Soup 🍁🍂🍃 {Simple, savory, warming, nourishing, and satisfying...all the things we crave from an evening meal!} makes about 3-4 servings  Ingredients: 1 Tbsp avocado oil, or olive oil  1 medium yellow onion, diced  2 fresh garlic cloves, pressed  1 lb. grass fed ground beef  15-oz. canelinni beans, black beans, or favorite beans of choice 1.5 cups organic, frozen corn  15-oz. jar fire-roasted tomatoes  1 Tbsp Taco Seasoning  1.5 cup water, or bone broth Garnish ideas: sliced green onions, for garnish  fresh chopped cilantro or parsley, for garnish diced avocado  diced tomatoes  lime wedges Instructions: Heat oil in a large stock pot over medium heat. Add onion and cook until soft, 4-5 minutes, then add garlic and cook for an additional 1 minute. Add in ground beef and cook until no longer pink.  Drain grease, if any. Add beans, corn, fire-roasted tomatoes, taco seasoning, and water/broth.  Simmer on low, covered for 15 minutes or so. Garnish with cilantro/parsley and green onions. #Repost @nutritiional ・・・ Banana Chocolate Chip Muffins. Gluten free, grain free, almost added sugar free (the chocolate chips have some). These are one of my favorite sweet treats to make. They are super easy and a great way to use up some old bananas 🍌 . . All you have to do to make these muffins is throw all the ingredients minus the chocolate chips in a blender and pour it in a muffin tin. Top with a few chocolate chips. Bake at 400F for 8 minutes. Each muffin has around 100 calories if you make 24 of them. A lot of these calories come from the peanut butter. You could certainly get creative and come up with some ways to reduce the amount of peanut butter if you are interested in being more calorie conscious. There are other nut/seed butters that are lower calorie but more expensive. . . Give these a try next time you have some bananas that are about to go bad. Make sure you understand that while these use healthier ingredients they are still very easy to overeat. You need to be cautious you stay within your goals. Because they are mini muffins, it is super easy to just pop them in your mouth mindlessly. Just because they use bananas and peanut butter as the main ingredients doesn’t make them “healthy”. Make sure you are aware of how these fit into your own personal equation of calorie balance!! . . Instant Pot Zuppa Toscana BY @jocooks 📷 * Ingredients 1 tbsp olive oil 1 lb Italian sausage casings removed, (I used mild, but spicy can be used) 1 large onion chopped 4 cloves garlic minced 1/4 tsp red pepper flakes 1 tbsp Italian seasoning 1/2 tsp salt or to taste 1/2 tsp pepper or to taste 4 medium potatoes cut in cubes, I used russet potatoes 6 cups chicken broth low sodium or no sodium added 4 cups kale chopped (1 small bunch) 1 cup half and half or heavy cream * Instructions : Turn your Instant Pot to the saute setting. (See your manufacturer's guide for detailed instructions on how to use your instant pot.) Heat the olive oil in the Instant Pot, then add the sausage and brown for 3 minutes until it's no longer pink, breaking up with a wooden spoon. Stir in the onion and garlic and cook for another 3 minutes until the onion softens and becomes translucent. Stir in the red pepper flakes, Italian seasoning, salt and pepper. Add the cubed potatoes and the chicken broth. Give it a stir. Close the lid (follow the manufacturer's guide for instructions on how to close the instant pot lid). Set the Instant Pot to the Manual setting and set the timer to 5 minutes. Once the Instant Pot cycle is complete, wait until the natural release cycle is complete, should take about 10 minutes. Follow the manufacturer's guide for quick release, if in a rush. Carefully unlock and remove the lid from the instant pot. At this point you can adjust the salt and pepper if necessary. Add the chopped kale and set the Instant Pot to the saute setting again. Cook for two more minutes uncovered, until the kale cooks a bit. Stir in the half and half or heavy cream. Turn off the Instant Pot, by pressing the cancel button. Serve the soup warm garnished with Parmesan cheese or bacon bits if preferred.

Thin sliced sweet potato chips with lots of delicious add ins 😋 Believe it or not this wasn’t even that big of a sweet potato 😅 I sliced it really thin to make them even crispier 😍 Similar to my breakfast, you get more bang for your buck this way 😏 I always forget how much I love jalapeños 💕 TBH I took some seeds out before I started eating because I didn’t realize how many there were 😳 I like spice but not thattttt much spice 🤭 Just feeling all the carbs today but that probably just means my body needs them, right? 😎 So, I feel like I’ve been a little MIA on my stories and stuff lately but it’s been a weird adjustment moving, figuring out my next step, and I’ve been feeling a little off, I don’t know how else to put it 😕 This period of life post grad is full of so much change and sometimes that’s hard to adjust to. I know it will be okay and I’ll get used to the new phase of life but the transition period can be a little tough. But we’re redoing the kitchen this weekend though so I promise that next week I’ll be (hopefully) back to myself with more behind the scenes of my meals and meal prep! Anyways, just wanted to be real with you guys 💕 For anyone else feeling a little off, you’re not alone! Everyone goes through ups and downs in their life and it’s totally normal. Prepped by @amircannon . Details: Prep done! Approx 2700 calories / macros 214/276/70 P/C/F. Meal 1 - 140g minsley steel cut oats, 1/4 cup golden raisins, banana. Meal 2 - 6oz 93/7 ground turkey, 1/2 cup brown rice, onions, tomato, romaine lettuce, guac (use water on top to somewhat prevent browning). Meal 3 - 6oz lean steak, 8oz yams. Meal 4 - 8oz grilled chicken breast, 10 oz mixed bell peppers. Supplement - Post workout protein shake. Meals seasoned with @flavorgod seasonings. No random additives and also that they are low sodium. Q & A: Q:Isn't eating the same thing for 5 days boring? A: Nope! It's easy, convenient and I save money = less stress and a higher quality of life, can't put a price on that! Q: How often do you eat? A: About every 2-3 hours, but I haven't seen any study proving that eating small frequent meals speeds up your metabolism. Point me to it if you have one👍. Q: Do you freeze your meals? A: No, I only refrigerate them. Never have problems doing this. Your call here. Q: Why don't you freeze your meals? A: 1. I personally believe you don't need to, ur call here. 2. I'll forget to thaw the meals, it's bound to happen, then what? 3. Space! My freezer is a lot smaller than my fridge. Q: How long does it take to prep these meals? A: Usually takes about 2 hours, but about 4-5 hours at first. Q: How does the food taste after a few days? A: To me food properly stored tastes the same on day 1 as it does on day 5. 🍅🍃Deets: arugula, roasted fingerling potatoes seasoned with herbs (Roasted on 450 for about 25 minutes in my cast iron pan), avocado and crispy sautéed chick peas (peeled them then tossed in coconut oil and some @primalpalate Seasoning and sautéed for a few minutes until crispy!) Roasted red pepper ketchup: 1 small jar roasted red peppers (7 ounces), 1 15 ounce can crushed tomatoes, 1 small onion, 1 clove garlic, 1/3 Cup coconut sugar, 1/4 Cup apple cider vinegar, 1/2 tablespoon black pepper, 1 teaspoon salt. Sauté chopped onion and garlic over medium heat in a tablespoon or less of oil until soft, add in the rest of ingredients and bring to a boil and mix well.
