Breakfast combo on repeat 💯 Another egg breakfast plate at the beach this morning 🙆🏼‍♀️ Added in some leftover sweet potatoes for some carbs and some avo for some healthy fat plus paired it with a little fruit and leafy greens 🤗 Hitting all the bases with this plate 🙌🏻 Not pictured is the other egg I had and a few more sweet potatoes 👌🏻 That’s why I always say to try your best not to compare yourself to people, you never know what they’re actually eating/not eating! On the menu this week is masala dosai with bhindi and coconut chutney 😁😍 Got premade dosa batter from the Indian grocer, then fresh okra from the farmers market sautéed up with garlic, onion, tomatoes, turmeric, chili powder, garam masala, cumin, coriander powder and cilantro. The masala was made with par boiled potatoes with mustard seed, cumin seed, turmeric and chili powder and salt. Topped up with kalonji (onion seeds) and served with coconut chutney consisting of water, shredded fresh coconut and mustard and cumin seeds fried in vegetable oil.

Two fantastic options for your lunch and dinner preps this next week. For lunch is Buffalo Chicken Lettuce Wraps and for dinner, Chicken Burrito Bowls (my #1 favorite meal prep dish 😎) The recipe Buffalo Chicken Lettuce wraps is posted on my website under the recipes tab and the recipe for the burrito bowls is included in the 1st Edition of my digital cookbook The Meal Prep Manual. . . The best part about the lettuce wraps is that you can eat them cold! I know some of you are unable to reheat your meals during your workday so this is definitely one for you to try out. I use Buffalo sauce quite often in my meals for two reasons 1) because I like it and 2) because it’s just vinegar and spices. It is extremely macro friendly while providing mountains of flavor. If you wanted to reheat the chicken, I would store these wraps deconstructed to make your life easier when it comes time to microwave them. You can serve these with avocado, lime, or even shredded carrots for some extra vegetables 👍👍 . . I don’t know if Burrito Bowls will ever be topped as my favorite meal prep dish. They just work so well and always taste great. Sometimes I like to cook huge batches of the chicken and freeze it for later use because I enjoy eating it so much. I use chicken thighs in my bowls because I think it makes for a better tasting dish and they keep better throughout the week but if you wanted something more calorie conscious, chicken breasts would work just fine. And yes, my guacamole stays green all week because I put a lid on it and create an airtight seal 😎😎 . . New week, new vegetarian meal prep! . FROM THE TOP: . Meal option 1: vegan chickpea Buddha bowls (Recipe is free on workweeklunch.com) with Brussels sprouts instead of zucchini . Meal option 2: zucchini veggie cheese bake! This is another take on my spaghetti squash bake for people who can’t easily find it. Recipe is in WWL Meal Plans (sign up in my bio link) . Breakfast: high protein cinnamon quinoa breakfast bowls with blueberries and coconut flakes. Have you ever tried sweet quinoa? It’s AMAZING. recipe in the WWL Meal Plans. . Meal option 3: vegan fajita bowls with jasmine rice! This meal is sooo easy and will appear on the WWL Meal Plans next week. A meat version will be available too! . These are one of my favorite sweet treats to make. They are super easy and a great way to use up some old bananas 🍌 . . All you have to do to make these muffins is throw all the ingredients minus the chocolate chips in a blender and pour it in a muffin tin. Top with a few chocolate chips. Bake at 400F for 8 minutes. Each muffin has around 100 calories if you make 24 of them. A lot of these calories come from the peanut butter. You could certainly get creative and come up with some ways to reduce the amount of peanut butter if you are interested in being more calorie conscious. There are other nut/seed butters that are lower calorie but more expensive. . . Give these a try next time you have some bananas that are about to go bad. Make sure you understand that while these use healthier ingredients they are still very easy to overeat. You need to be cautious you stay within your goals. Because they are mini muffins, it is super easy to just pop them in your mouth mindlessly. Just because they use bananas and peanut butter as the main ingredients doesn’t make them “healthy”. Make sure you are aware of how these fit into your own personal equation of calorie balance!! . . There are many reasons WHY burgers are cheaper than salads; things such as production costs, transportation, storage etc. ⠀ Did you know that the average 18 year old is 15 pounds heavier then the average 18 year old in the late 1970s? ⠀ But, just because this is our reality doesn’t mean that’s the end of the story✋🏻⭐️ Being aware✅and mindful✅of these types of statistics can be the first step to ensuring that we are making informed decisions for ourselves and families. ⠀ Planning your weeks groceries in advance✅ or meal prepping on a Sunday✅ can be some helpful ways to be sure that healthy food can be convenient and come in at a similar cost as junk food. Meal 2: 4oz chicken, 1/2 cup chickpeas, 1/4 avocado + 1 cup mixed greens = 411 cals Upgraded with 1/2 yellow bell pepper, 1/2 orange bell pepper, 1/4 cup red onion, 1/2 cup cherry tomatoes = 490 cals Final macros = 40g protein, 45g carbs 16.5g fiber, 14g fats . Meal 3: 2 eggs + 2 egg white scramble = 222 cals Upgraded with 1 cup yellow squash, 1 cup zucchini sliced & 1/2 cup cherry tomatoes = 281 cals Final macros = 25g protein, 12g carbs 4g fiber, 13g fat . 🍄 Creamy Vegan Mushroom Pasta . Recipe📝 . 1 lb pasta of choice ¼ cup olive oil or vegan butter 4 cloves garlic, minced ⅔ cup shallots, finely chopped 8 cups mixed mushrooms, sliced 3 tbsp unbleached all purpose flour 3 cups unsweetened almond milk 1 tbsp nutritional yeast, or ½ cup vegan parm, optional ⅓ cup fresh parsley, chopped, plus extra for garnish 2 cups frozen peas, thawed saltand pepper to taste Instructions In a large pot bring salted water to a boil. Cook pasta according to package directions and drain. While the pasta is cooking, prepare the sauce. Heat olive oil or butter in a large skillet oven over medium heat. Add garlic, shallots, mushrooms and ½ tsp salt and cook stirring occasionally, until mushrooms are browned and tender, about 10-15 mins.Turning down to medium low after 5 mins. Sprinkle flour over the mushrooms and stir to coat, allowing to cook for 30 sec-1 min. Bring heat back up to medium-high. Add 1 cup almond beverage, stirring constantly and it let simmer for 1 min. Make sure to break up any clumps. When completely smooth and thickened slightly, add remaining almond milk and pepper to taste, return to a simmer, stirring constantly. Cook until the sauce thickens slightly again, about 3 mins. Remove saucepan from heat and stir in nutritional yeast or vegan parm, if using until melted and or well incorporated. Add peas, and salt & pepper to taste and cook for 1 additional minute or until peas are heated through. Add the pasta to the mushroom sauce and toss to coat. Making Vegetables Suck Less: Part 2. Carrots. For all of you new followers to this page, welcome. You will find very quickly that one of the common themes on this page is my disdain for vegetables. I hate all raw vegetables and I tolerate some cooked ones. One of my goals for this page is to help all of you learn to create meals where eating vegetables isn’t a chore. Believe it or not roasted carrots are one of the few vegetables i don’t have a deep hatred for. But raw carrots can take a hike. One way to make them better is to hide them in sweet potatoes😎😎 . . When it comes to hiding vegetables in our food there are 5 major factors I’ve found that contribute to a large percentage of how well a vegetable can be hidden into another food. They are texture, flavor, size, smell, and sight. You want to try and match or better the vegetable to whatever you’re trying to hide it in. Vegetables usually have poor texture and flavor which are the two most important factors. You must either match or overpower these two variables with whatever you are hiding the vegetable in. For this example, boiled sweet potatoes and carrots really arent that different in flavor and mashing/blending them matches textures. Size isn’t so much a factor here so we can omit that part and smell and sight is essentially the same as regular mashed sweet potatoes. . . So I came up with this value I call a Vegetable Satisfaction Score which is determined from the following. each term is ranked on a scale from 1-10: VSS = (.35)texture + (.35)flavor + (.2)size + (0.05)looks + (0.05)smell. A perfect VSS is 10 and means that the hidden vegetable is equal to the satisfaction of whatever it is hidden in, this is very unlikely. A score of 1 is equivalent to the raw vegetable. I find that texture and flavor are equally important when it comes to hiding vegetables. The size of the vegetables plays a 2nd place role and smell and looks play a small role because they are important when it comes to food enjoyment, but not as much as our other factors. Here is what I score this combo at. ➖VSS=0.35(10)+0.35(8)+0.2(10)+0.05(10)+0.05(8)=9.2. 9.2 is an excellent score meaning this is a great way to hide carrots!!

Happy Sunday! It is super dark and rainy here in Boston today, so I plan on getting a lot of work done! I wanted to have a slow start to the day, but my body had me up at 5:15am. All you need is 1 hour, let's go! ⏳ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat your oven to 400F. ✅Chop sweet potatoes, broccoli & cauliflower. Banana Chocolate Chip Muffins. Gluten free, grain free, almost added sugar free (the chocolate chips have some). These are one of my favorite sweet treats to make. They are super easy and a great way to use up some old bananas 🍌 . Chosen by 🔎 @foodfuly All you have to do to make these muffins is throw all the ingredients minus the chocolate chips in a blender and pour it in a muffin tin. Top with a few chocolate chips. Bake at 400F for 8 minutes. Each muffin has around 100 calories if you make 24 of them. A lot of these calories come from the peanut butter. You could certainly get creative and come up with some ways to reduce the amount of peanut butter if you are interested in being more calorie conscious. There are other nut/seed butters that are lower calorie but more expensive. . . Give these a try next time you have some bananas that are about to go bad. Make sure you understand that while these use healthier ingredients they are still very easy to overeat. You need to be cautious you stay within your goals. Because they are mini muffins, it is super easy to just pop them in your mouth mindlessly. Just because they use bananas and peanut butter as the main ingredients doesn’t make them “healthy”. Make sure you are aware of how these fit into your own personal equation of calorie balance!! . . Sunday morning grocery shopping and prep! 💁‍♀️ I don’t really meal prep, but something that I like to do is have pre cooked essentials for the week so that I can throw together various meals! It’s also nice to have prepped snacks ready and available for when that hunger hits. I find filling my fridge with such allows me to avoid stuffing my face with chocolate bars, and reach for something healthy and nutritious when I’m hungry 🤗 have a great Sunday 💕
