My usual approach to overripe fruit is to bake it into bread or muffins. I had a sad banana, and didn’t want to make the usual banana bread, so I tried a recipe from betterbaking.com that uses Chunky Monkey (a Ben and Jerry’s ice cream flavor, for anyone living under a rock) as inspiration. I had to use almonds instead of cashews, since that’s what I had, but miraculously had all the other ingredients: the usual flour, baking soda, eggs, butter, etc., plus white and semisweet chocolate, coconut, almonds, brown sugar, and my one sad banana. I had one for breakfast, although it is decidedly a dessert muffin. It made 3x the amount of topping I needed (and I put on as much as possible), so I was also able to rescue a sad pear by mixing it and some leftover topping into a bowl of plain yogurt. A twofer fruit rescue day!
