🥑How long have you been vegan?: Almost 3 years
🥦What inspired you to go vegan?: Initially I just wanted to see if I could do it. For most of my life I was a pescatarian, and then in 2015 I eliminated seafood from my diet and became a vegetarian. One day it occurred to me that the only animal products I was consuming were eggs, cheese, and ice cream (never been a fan of milk). So I decided that on January 1st of 2016 I would go vegan. Never looked back since!
🍅Grocery list must-haves: My shopping list is heavily produce focused. Fresh veggies and fruit are a must - at the least, I always need to have bananas and spinach on hand. I usually switch up which fruits I buy based on what's in season. Rice, pasta, and oats are pretty essential carb staples to have around. Dried fruits, nuts, popcorn, DATES (!) - all great for snacking. Almond milk, coconut water, cold brew - gotta have them too.

Some of my faves in Charlotte: Living Kitchen, Fern, CO, Ru Sans, Queen City Grounds, YAFO Kitchen, Sunflour Bakery, Chopt. Cafe Sunflower in Buckhead. La Cuisine in Cozumel, Mexico. Aloha Vegan Delights in Valencia. Cornucopia in Dublin.
🍠Tips for someone who is curious about going vegan: First of all, my advice is if it's something you want to try, it's worth it. It might be difficult at first and you might spend more as you dive headfirst into the lifestyle, but if you truly want to go vegan, it's worth it.
