I’m really going all out right now by sharing my weight. My biggest fear has always been someone knowing how much I weigh. Honestly I’m not sure why. Like what’s the worst that could happen?? You think I’m fat?! 😂 Yeah, me too. 😉 Because I am, and well that number changes nothing. I’m still ME. ☺️ So those of you who really know me know that prior to all of this crap I deal with, I was in the gym like crazy. I meal prepped. I took supplements. But nothing changed. Fast forward to Jan 2015. I started following a zero carb, meat/egg/cheese diet and I started losing. I went from 280 to 255. I was 255 the day they removed the first half of my thyroid. Fast forward to Jan 19th, 2017...I weighed in at 291. I was miserable. And angry at my body. I managed to lose 10lbs between then and September but it was SO difficult. I’ve lost 12 more pounds since September after eliminating nightshades, dairy and eggs. That was without effort, just from removing them (another post for why). See, without my thyroid, nothing has been the same. Add in fibromyalgia, Hashimoto’s and PCOS...yeah, talk about a struggle. It feels like every odd is against me. But I never give up. I keep readjusting my plan. I continue to research. I continue to be my biggest advocate at every dr appt. I read...A LOT. I can’t exercise yet because, oh I forgot to mention...I have coronary heart disease. I had a stent put in my main artery in September and because recently I’ve had pain, I’m not allowed to exercise until they run tests. Anyway, this is just the medical stuff. Spinach Blender Crepes with Berries 🍓🍇🍓 🛒8 ingredients ⏱15 minutes 👥2 Servings 📊577 Calories - Ingredients: • 4 cups Baby Spinach • 1cup Unsweetened Almond Milk • 2 Egg • 1 cup All Purpose Gluten-Free Flour • 1 tbsp Coconut Oil • 1/2 cup Raspberries • 1/2 cup Blackberries •1/4 cup Maple Syrup - Directions➡️➡️➡️ 1️⃣Combine spinach, almond milk and eggs in a blender and blend until smooth. Turn blender to the lowest setting and slowly add flour until thoroughly combined. 2️⃣Melt coconut oil in a large skillet over medium heat. Once hot, pour some batter in the skillet and gently swirl to spread it into a thin layer. Cook for about 1-2 minutes or until small bubbles form on top. Flip and cook other side for about 30 seconds. Repeat with remaining batter. 3️⃣Divide crepes onto plates, fold in berries and drizzle with maple syrup. Not the prettiest picture, but does that matter when it was SO tasty?! #nightshadefree Beef Soup, or a liquidy stew- whatever you want to call it 😉 ______________________________ I resisted the Instant Pot craze for a long time for a myriad of reasons, but when I found out how it could actually help me battle my ailments more effectively, SOLD! My hubs decided I needed to have it too, so cyber Monday had it sitting on my doorstep not too many days later. Since then, this has become a game changer in my life! And since I’ve only recently been able to eat red meat, red meat is what I’ve experimented on the most! Oh my goodness- amazing. ______________________________ What’s in it: - ghee or coconut oil - chuck roast stew cuts - 2 Japanese Sweet Potato, chopped - 1 cup green beans, chopped (I used frozen for ease) - 1 cup carrots, sliced (again, frozen for ease) - 1 medium onion, chopped - Turmeric, to taste - Sea Salt, to taste - (if you can have black pepper, add it, I cannot have it.) - garlic powder, to taste (this is a new reintro for me) - any Dried herbs you like to add (fennel has become my favorite with red meats) - 4 cups broth . Directions: - Hit the sauté button on the instant pot and melt some ghee/oil - add the stew meat & brown the outside. - add all other ingredients and hit the stew button for 30minutes. - let the steam release on its own. - serve. eat. Rabbit stew Ligurian style I love traditional dishes as they are tried and tested and this one from the late Antonio was amazing! and so simple- combining herbs rosemary, thyme and sage with olives, onion, stock, nomato sauce(for those avoiding nightshades), white wine & tapioca coated rabbit pieces, browned in coconut oil. Avoiding grains I went with cauliflower rice sautéed in coconut oil. I really love this dish, I can’t wait for leftovers tomorrow! It’s a mussels-kind-of-Monday and I need a seafood fix! Recipe as follows, direct link is in my bio for printing or pinning 💕 🍴 🛒 1.5 lbs mussels, beards 🧙🏼‍♂️removed 🛒 2 tbsp pastured butter 🛒 1/2 c dry white wine 🛒 2 whole shallots, minced 🛒 2 whole garlic cloves, minced 🛒 1 handful Italian parsley, stems removed 🌱 🛒 Maldon salt flakes to season ✨ Heat a large pot (I prefer cast iron) over medium high heat with butter. Add shallots and garlic. Once golden brown, add mussels with wine and put a lid on it (!) Cook for 3-5 minutes, depending on your stove, until mussels have opened. It may need a minute or two longer, but don’t over cook 💕. I didn't get to do a big prep session last weekend due to all the family activities, but I had my slow cooker pick up some of the slack today. I made a variation on one of my favourite recipes from @mickeytrescott's cookbook, the Moroccan lamb stew. I used beef heart instead of lamb because that was waiting in the freezer to be used up soon, I used apricots instead of dates, I used half parsnip/half carrots rather than all carrots, and I added a pinch of ground cumin because it's a successful #aipreintro for me and I love it. Oh, and I chopped up the oranges whole instead of zesting and juicing them, I like how it adds little flecks of soft bitterness to the final dish. But otherwise I strictly followed the recipe! And honestly, this is as strict as it gets between me and recipes. I decided to get creative with breakfast this morning ✨ This is what I came up with! # It’s a pho inspired soup with sweet potato noodles, sautéed mushrooms and onions with garlic, ginger and coconut aminos, hard boiled egg yolks and fresh parsley all in ginger infused bone broth. It hit the spot on this (very) cold morning. # I’ve got a long list of things that I would like to get done today. It’s so cold though, all I truly wanna do is get back under the covers 🙋🏼‍♀️ At least I’ve already done my yoga for the day! # Ps. This is the first time I’ve ever made OR eaten a soup like this! The contents of my fridge dictated that lunch would be a salad with leftover smoked mackerel, sweet potato, arugula and endive, and I added a handful of olives and a green onion to jazz it up. But despite the deliciousness of the ingredients, the horrible weather made me eat the first office lunch of this week without much enjoyment. I'm cold, sleepy, and feeling like stews and soups and tea - anything hot and comforting. Chicken bone broth & Rabbit Stew Ligurian style It’s been a while since I’ve made chicken broth as Its needed in this dish today. As a novice to rabbit my dilemma was how to cut it into pieces, the meat has no fat and is darker than chicken. These were then dusted in tapiaco flour. Which is where I stopped as I was called into work! My plan is to brown the rabbit pieces, then slow simmer with black olives, garlic, onion and white wine. You will have to wait for my next post to see how it turns out.
