That’s my idea of a Sunday roast 🎃🤤
Super easy to prepare, nutritious option for those nights when spending hours in the kitchen is the last thing you want to do! •
Start by Massaging some olive oil, Himalayan salt, pepper, oregano and rosemary onto the half pumpkin and bake for 30-40 minutes until soft •
- While the pumpkin is cooking fry off some chickpeas, finely diced onions and mushrooms with a whole range of spices to suit your palette 🌶🤣 •
- Once the pumpkin is soft, scoop out the centre of the pumpkin and add the cooked chickpea mixture into the centre.
• - Place the centre bit of the pumpkin that you scooped out over the top covering the chickpeas and lather in spices of choice.
• - Bake in the oven for a further 5-10 minutes and then enjoy 😍🙌🏼🎃 •
This whole pumpkin can be used as meal prep for he week or even feed a whole family. With foods from all macronutrient groups (carbohydrates, proteins and good fats) it makes it a wholesome choice through winter ❄️
