Y’all. I went to a new 5:30 am bootcamp workout this morning and DANG it was good! My booty is still shaking 😅 I seriously love workouts that push you to be the best you can be. Put me in a competition setting, and the inner athlete just comes right out... takes me back to my high school track days! Needless to say, had to come home to fuel these muscles after that major burn 💪🏻🍳 Got myself some sautéed bell peppers, mushrooms, kale, two organic eggs, a @hilaryseatwell breakfast veggie patty (so good!!) topped with cilantro and a tahini drizz 🤤 Scarfed it up and feelin on top of the world – and it’s only 8 am!! #nailedit

TYPICAL DAY OF EATING AT WORK . Yesterday I asked on my story what you wanted to know about being vegan and majority of questions were about getting enough protein, some sources, go to meals etc so here ya go! ____________ 🌱 Tempeh is one of my favourite sources because I LOVE the texture and it is a complete protein. I love grainy or nutty tasting foods and this resembles that completely. The bottom left I have tempeh, sautted broccoli, and baked potatoes. 🌱 Tofu, also from the sky family is a delicious complete protein. Per 100g it offers 15-20g protein. For my second work meal (upper left and bottom right) I brought some baked siracha tofu, avocado, and put that on some corn thins for a little crunch. 🌱Snacks at work I usually bring some sort of bar, protein ball, fruit etc. This day I brought a mini salted caramel dark chocolate nut bar (bottom right). Everyday changes. Some days I know I will want something sweet and othersI know I will want something more refreshing such as fruit. Keep in mind, if you choose fruit, try and choose something that is fibrous like an apple or you will likely not feel satisfied. 🌱Salads! Salads are always an easy go to for meals (upper right). Upside down salads are great for meal prep as you can make a bunch ahead and down have to worry about the ingredients getting mushy. The tip for this is to put the dense ingredients at the bottom which is usually the protein source and the lighter ingredients towards the top. In this jar I put a chickpea veggie patty (can sub for plain chickpeas, beans, or whatever other protein source you like), along with my dressing. I used a bit of honey Dijon mixed with apple cider vinegar. Dressing goes at the bottom with the protein the avoid getting the other veggies mushy. I then added some chopped pepper, a few mushrooms and some fresh lettuce and kale. __________ There are so many endless possibilities when it comes to meal and eating vegan, you just have to be creative! I will be making more recipe videos/sharing more meal ideas so stay tuned!
