[Banana Pancakes]⠀ ⠀ You know you want them. And I'm going to teach you how to make them! 👇⠀ ⠀ It's inevitable after a long week that you'll have a few overripe bananas on the counter, so grab them and let's get cooking! ⠀ ⠀ Ingredies:⠀ ⠀ 1 cup whole wheat / wholemeal flour⠀ 1 cup almond milk⠀ 1 egg⠀ 1 tsp vanilla⠀ 1 ½ tsp baking powder⠀ 1 tsp cinnamon⠀ 2 very ripe bananas mashed⠀ Pinch of salt⠀ ⠀ What to do:⠀ ⠀ 1. Mash bananas on a small plate or bowl and put aside⠀ 2. Add flour, baking powder, salt and cinnamon in a large mixing bowl and stir to combine⠀ 3. Add egg, milk and vanilla into a small bowl and stir to combine⠀ 4. Add liquid mixture with dry mixture and stir well to ensure all ingredients are combined⠀ 5. Fold in mashed banana⠀ 6. Heat frying pan on medium-low and grease with your choice of butter, oil or cooking spray. Add 3 tbsps. of mixture to the pan and allow pancake to cook fully on both sides, approximately 2 minutes each side. Whilst the mixture may not bubble as with traditional pancakes, the sides will become golden which can be used as a guide of when to flip.⠀ 7. Serve immediately and enjoy!⠀ ⠀ You can serve these pancakes with sliced fruit, maple syrup, peanut butter, strawberry jam, almond butter, nutella... your options are endless. ⠀ ⠀ Sunday breakfast never looked so good.

Sweet potato toast time! 🍠🍞(SWIPE RIGHT FOR WALKTROUGH ➡️) After failing to do it properly a long time ago, I thought I'd give this one another go tonight and it worked out much better! Using a sandwich press (yep, you heard me!) to make the sweet potato toasts in 10mins, all I had to do was add my favourite toppings for a quick, simple and nutritious spring dinner⌚ I added a basic guacamole and scrambled eggs/mushrooms/tomatoes/onion to mine, but the great thing about these is that you can add whatever you like - sweet or savoury! 😋 All you need to do is... Slice a sweet potato lengthways into 3-4 pieces, each around 1cm thick Place the slices in the toaster or on a sandwich grill and cook until soft and coloured on the outside Prepare the toppings 🍳🍅🍄 Serve up and enjoy! It's so basic, but so satisfying! Cheap, quick, delicious! Going high carb low fat plant based has been a game changer for me. I was at the max dealing with constant chronic pain from internal scarring, #pcos #ashermans #endometriosis and fatigue. 💚Kale pesto with edamame pasta from @explorecuisine 💚 Recipe below! 🌱 🌱 🌱 🌱 Kale pesto 2 cups kale, shredded 1 cup basil 3 cloves garlic 1/3 cup toasted walnuts 1 tablespoon nutritional yeast 1/4 cup water (to cut down on oil content) 1/4 teaspoon salt 2 tablespoons olive oil 🌱 Combine all but oil in food processor and process until smooth. 🤩 Pastaaaaa bake ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 👩🏻‍🍳👨🏼‍🍳 °Preheat the oven to 180 degrees celsius. You will need a large dish to hold the pasta that is appropriate to put in the oven. °Boil the pasta for 6-7 minutes and stir often to prevent it from burning or sticking at the bottom. °Whilst the pasta is boiling, you can cut the mozzarella into small slices and set aside. °You can then cut the broccoli into smaller florets and boil for 2-3 minutes. °Drain the pasta and rinse under cold water. Pour the pasta into your pasta dish and stir in the tomato sauce. °Drain the black beans and rinse with water. Then add these to the pasta dish. Add the boiled broccoli and add in the prepared mozzarella. °Bake the dish in the oven for 15-20 minutes. This can depend on how crispy you want the top of the pasta (I like mine crispy).

Enjoying a warm turmeric latte out at the cabin with my dad ☀️ It is such a beautiful day today! We went for a walk to the beach, and now are jammin to Prince, Elton john, The Beach Boys, etc. - I have been so incredibly busy lately I feel like I haven’t been able to slow down. Coming out to the cabin is my favourite way to reconnect with myself. - Going to get some work done in the sun, and maybe convince my dad to get ice cream and walk down the boardwalk... because why else come to Gimli, right ? 🤷🏻‍♀️ Enjoy the last bit of your weekend everyone!

One of my very favorite nut butters ever @georgiagrinders changes their branding so now their jars don’t have this same labeling but I’m sure they taste just as yummy. As I write this I’m slowly savoring the last creamy rich maply tastes of the almond butter with yogurt and fruit and some brownie. . . . What’s your favorite nut butter brand and why? . . . . Blackberry Creamsicle Smoothie!! 💪 - - - - - - - - - - - - - - - - - - - - - - - - 1/2 cup fresh blackberries - 1/2 cup milk - 1/2 banana - 1/2 fresh orange peeled - Optional: Vanilla protein powder - - - - - - - - - - - - - - - - - - - - - - - This is a great smoothie to have as a healthy dessert! The taste from the fresh fruit is amazing and full of vitamins! We love using fresh ingredients in our smoothies!! 🍊🍌

Blueberry & Apple Millet Breakfast Loaf 💕 3 Granny Smith apples, peeled and diced 1 cup GF oat flour 1/2 cup whole GF oats 1 cup millet flour 1t baking powder 1/2t baking soda 1/2t salt 1/2t cardamom 1t cinnamon 1 large mashed ripe banana 2 flax eggs (2 tbsp ground flax mixed with 6 tbsp water and set aside to thicken) 1/2 cup melted coconut oil 1/2 cup almond milk + 1 tsp apple cider vinegar (mix and set aside) 2/3 cup unrefined sugar of choice (or granulated sweetener if wanting sugar free) 1/2 cup frozen blueberries 1. Preheat oven to 180C 2. Mix together the dry ingredients & chopped apples, set aside 3. Mix together the banana, flax egg, coconut oil, almond milk and sugar until well combined. 4. Fold this gently into the dry ingredients until well incorporated into a batter. Add a splash more almond milk if needed. Fold through blueberries last. 5. Pour into a lined loaf tin and top with a sliced banana. Bake for 50-70 minutes (may need a little longer depending what flour or size loaf tin you use) until a toothpick comes out clean. Allow to cool completely before slicing. Store it in an airtight container in the fridge and simply warm in the morning and serve with a little vegan butter, nut butter or yoghurt. ** These can alternatively be made into muffins, but baking time can be reduced to approx 35-40 minutes depending what size muffin you make!
