Artichoke : what a beautiful and intringuing vegetable 🌱 It looks like a flower with many petals 🌸 ° First time I cook fresh artichokes and I found it pretty simple! Rinse it, slice off the top quarter and stem with a knife, and snip the ends of the petals off with scissors to remove the thorns. Can be grilled, baked or steamed. I used the pressure cooker for a few minutes. ° Remove the artichoke petals by gently pulling. Dip the base of the petals in your favourite sauce. Don't forget the heart which is the best part 😋 ° High in fiber and low in fat, artichokes are an ideal weight loss food. They are highly beneficial for the liver as they regenerate liver tissue making a great food for those trying to cleanse and detox the body 🙌 ° FOOD IS MEDICINE 💚🌿

Following the cobbled streets to Prague! Lyon was a blast and was a city we just needed to see at the right time. We are getting exhausted moving every 4-5 days and Lyon was just easy! Great parks, great food, great history. We only took public transport once and it was a 3 minute tram ride up the hill, other than that walking was all we needed to do. A lot of the more touristy things didn’t even cost a dime to see, which begs the question, how much longer can we stay away for?!

Got to attend the trial weekend of the new @theivydublin for breakfast this morning. Great menu - loads of healthy dishes and #glutenfree and #dairyfree options. Staff were great at answering any questions I had about the menu too. I opted for the gluten free avocado toast with lime, coriander, pomegranate and toasted seeds (which they put on the side for me) and got poached eggs on the side. A lot of pre-made meals/sauces can be high in sugar, salt and saturated fat. Cooking meals from scratch is a good way of choosing the ingredients in your meals and altering the flavour of your food. If you are buying a ready made meal/sauce remember to check the label and choose options lower in salt/sugar/saturated fat. When cooking meals ✅use olive/rapeseed/vegetable oil instead of butter ✅use herbs and spices to flavour food rather than salt ✅grill/bake foods where possible instead of frying ✅remove visible fat from meat/choose leaner options ✅ Bulking out meals with veggies/beans can help you achieve the #5aday target, or more, and add extra fibre to your meal 💩 • ENCHILADA SAUCE: Onion Garlic A shake of cumin, black pepper, oregano and paprika 1/2 a stock cube (optional) Tomato purée Tinned plum tomatoes Whizz through the blender once cooked and make your enchiladas • GUACAMOLE: Blend together avocado, low fat natural yoghurt, onion, jalapeños and lime juice.
