Warm cauliflower rice bowl with grilled shrimp!
1 lb shrimp, deveined and tails removed
1 head of cauliflower, riced
1 onion, finely chopped
1 green pepper, diced
1.5 cups loose kernel corn
Handful of fresh chopped parsley
Salt and pepper and seasonings of your choice
Prep your veggies by cutting the cauliflower into florets and putting them into a food processor. Pulse until fine. Place in a bowl. Chop onion, by hand or with your food processor. Chop green pepper. In a large sauté pan, add some oil and set heat to medium. Add onions. Mix and cook for a few minutes not to burn the onions. Add cauliflower rice and green peppers. Mix well and lower heat to med-low. Add salt and pepper and your favorite seasonings. Mix and cover. I used frozen corn. I simply added the corn to a hot fry pan and cooked until thawed. I then added some olive oil to allow the corn to slightly brown. When done, add the corn to your cauliflower rice mixture and mix. Turn off heat. Place cauliflower mixture in a large bowl to cool. In the same fry pan or sauté pan, add some olive oil over med-high heat. Season your shrimp and cook on both sides for 3 minutes or until browned. When done, transfer to the bowl of cauliflower. Chop your fresh parsley and add to the bowl. Mix everything together until well combined and taste test, adjusting to your liking. Done. You have a healthy delicious warm bowl to satisfy your hunger!
