☆ pumpkin oat bars ☆ I wanted to make an all inclusive pumpkin bar so these ones are gluten free and vegan! they may not look as good as a bar with wheat flour and eggs, but they sure as hell taste good (& they’ll have the whole house smelling like fall). plus they only take about a half hour in total to make so they’re an afternoon pick me up that you can whip up real quick! they’re THE BEST when they’re warm. check out my highlights for step by step instructions! you’ll need: 3 cups of oats (only use 2 1/2 cups once blended) 2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 1/2 teaspoon pumpkin spice (@traderjoes) 1 teaspoon olive oil 1/4 cup 100% maple syrup 1 cup canned pumpkin 2 teaspoon vanilla extract 1/2 cup unsweetened apple sauce Any add in you’d like! Try these gluten-free double chocolate zucchini muffins🍫🍫 : 1/3 cup Dutch processed cocoa powder 1 3/4 cup GF oat flour (look for certification, otherwise there might be cross contamination) 1 cup whole GF oats 2 tsp baking powder 1 tsp baking soda 1 heaping cup mashed banana (about 3 medium bananas) 1 heaping cup shredded zucchini (press out excess water using cheese cloth, nut milk bag, or towel) 1/2 cup dark maple syrup 2 eggs 1/2 cup dark chocolate chunks : Preheat oven to 350F. Combine dry ingredients in one bowl and whisk wet in a separate bowl. Mix wet into dry and fold in the chocolate chunks. Using an ice cream scoop or large spoon, divide batter into 12 lined muffin tins. Bake for about 20 minutes or until firm in the middle. So today was a healthy-donut kinda day. Took me a while to get it all right but I got it at last!!! The top ones I had to adapt as I didn’t have chickpea flour (used oats). It is a funny taste, but I suppose a lot of non-gluten things are. The chocolate and toasted coconut topping does make it very nice. The chocolate ones dipped in cinnamon sugar were a BIG hit and you’d never think they’re healthy! Nothing like satisfying your sweet tooth without spiking your blood sugar and wreaking havoc in your stomach. Pumpkin Spice (Sourdough) Waffles. Made with ground up oats for the flour, lots of yogurt and warm spices. Really, really good and a much healthier weekend breakfast than regular white flour ones. Real butter and real maple made them go down even easier. Oat my god 😛 | ‘Cherry Almond Oat Bars’ recipe by @sasha.swerdloff . . Ingredients: . FOR CRUST AND STREUSEL TOPPING: . + 1/4 cup ground flax + 1/4 cup warm water + 2 cups almond meal + 1/2 cup coconut sugar + 1/2 tsp salt + 1 tsp baking powder + 1/2 cup melted coconut oil + 1 tbsp almond extract + 1 cup rolled oats + 1/2 cup oat flour . FOR FILLING: . + 2 cups cherries, pitted + 1/4 cup coconut sugar + zest and juice from one lime + 1/2 cup chopped semisweet chocolate . Steps: . 1) Preheat the oven to 350 degrees. . 2) Place ground flax and warm water in a bowl and stir to combine. Let sit for a few minutes while you measure out other ingredients. Combine almond meal, coconut sugar, salt and baking powder in a food processor. Add coconut oil, almond extract, and flax mixture. Blend. Separate half of dough into a bowl, stir in rolled oats and set aside. Add oat flour to food processor with remaining dough and mix until combined. Transfer dough from food processor into a tart pan with removable bottom. Press dough out with fingers until it forms even layer on bottom of pan. Bake crust for 15 mins, until opaque and just beginning to brown. Remove from oven and allow to cool. . FOR THE FILLING: . 1) Place cherries in food processor and pulse till coarsely chopped. Transfer to bowl. Add coconut sugar, lime zest and juice and stir to combine. . TO ASSEMBLE THE BARS: . 1) Once the crust is cool, spread cherries evenly in the pan. Sprinkle chopped chocolate on top of cherries. Not everything is as perfect as this stack of banana oat pancakes 🥞 topped with grass fed butter, raspberries, hazelnut butter and maple syrup. Summer is officially over, Andrew is back at work after a couple months of blessed parental leave and my babies are feeling sick so it was a long sleepless night. This summer has truly been “the summer of fun” as we dubbed it, but it’s also had some deep difficulties that I haven’t shared on here. One day I wrote this in my journal: “My circumstances don’t dictate my happiness. It comes from the inside and I have the power to respond with a positive attitude”. This became something I meditated on and repeated throughout my days and it has sunk into my heart. And it’s become truth as I’ve lived it out! Even on the worst day, when everything seems shaken and out of place, I look to Jesus and he is always faithful and constant. My attitude shifts and suddenly, although the circumstance may not have changed, I feel joyful and powerful because I’m the only one who can choose the attitude that sets the tone for my days. Friends, be filled with gratitude and hope today! 🖤

Últimamente estoy obsesionada con los muffins porque son mega deli y aparte tienen la porción ideal. 🤫 Esta receta la vi en @tastyvegetarian , solo que le hice algunas adaptaciones para hacerla saludable. 😋 . Ingredientes: -2 plátanos muuuy maduros. -1/3 taza de aceite de coco. -1 huevo o 2 claras (yo use el huevo entero). @huevosanjuan @huevosanjuanfit -1 cdita de vainilla. -1/4 taza de leche de almendra sin azúcar. @costco_mexico -1/2 taza de azúcar de coco. -1 1/2 taza de harina de avena. @morama.mx -1 cdita de polvo de hornear. -1/2 cdita de bicarbonato de sodio. -1 pizca de canela. -1/2 tableta de chocolate amargo sin azúcar picado. -1/2 tableta de chocolate amargo sin azúcar derretido (para el relleno). -5 cdas de yogurt de coco (para el relleno). @yogana.mx . Procedimiento: -Precalienta el horno a 180 grados centígrados. 1. Machaca los plátanos y mézclalos con todos los ingredientes líquidos. 2. Agrega el azúcar y mezcla muy bien. 3. Con un cernidor incorpora los ingredientes secos y bate hasta tener una mezcla homogénea. 4. Por último agrega el chocolate picado. Vierte la mezcla en un molde para muffins previamente engrasado y hornea durante 20 min. 5. Mezcla los ingredientes del relleno y vacíalo en una bolsa o manga pastelera. 6. Deja enfriar los muffins y hazles un orificio en el centro, cuida que no sea hasta el fondo (yo lo hice con un artefacto que se usa para quitarle el corazón a la manzana). 7. Rellénalos. 8. Hello healthy people👋🏼 I'm learning more and more about plant based🥗 nutrition, so check out some facts BELOW⬇️ _ Protein: The combination of oats and chickpea flour packs a protein punch👊🏼 The recipe I use calls for 1/2 a cup chickpea flour 3/4 cup which = about 24g protein. I try to meet the RDA for protein intake, but I don't obsess. Why not? Because.... plants have protein; some have more amino acids and some have less (1). I eat more plant protein because It is lower in calories and associated with better health outcomes (2). _ Plant based Iron: Personally, I get my iron from plants. I grew up vegetarian, but didn't understand how important iron is, or how it's absorbed. My son studies public health and he mentioned studies showing a whole food plant based diet ensures women will meet adequate iron intake (3). Furthermore, heme iron has been linked to coronary artery disease (5). _ Fiber: Filling fiber is essential for feeling full and satisfied without blood sugar crashes or hunger pangs (4). I've noticed how good I feel when I opt for chickpea/oat pancakes for lunch. Much better than mindless shopping for food. I like to #mealprep these fiber rich pancakes t save my appetite. _ Who else is fueling up with plants?
