HERE’s the Oatless Gingerbread Granola Recipe!! It’s gluten free, grain free, and paleo! . . I’ve been eating this very thing every morning last week and probably this week. Not ashamed and totally satisfied! And addicted! . . Oatless Gingerbread Granola . 3 Cups Nuts (I used 1 1/2 cups each of pecans and cashews) 1 Cup Shredded Unsweetened Raw Coconut 1/3 Cup Honey 1/4 Cup Coconut Oil 2 tsp Cinnamon 1/8 tsp Cloves 1/4 tsp Ginger 1/8 tsp Nutmeg 1 tsp Pure Vanilla Extract . Preheat oven to 275 degrees and line a baking sheet with parchment paper . I’m a food processor, pulse nuts and coconut. You don’t want it too small, think granola size 😁 set aside. . In a saucepan on medium heat combine honey, coconut oil, and spices. Melt and stir together. Remove from heat and add vanilla. . Stir nuts into honey mixture. . Spread on baking sheet and bake at 275 for 15 minutes. Toss around and then put back in for 15 minutes. It will be sticky but let it cool and harden. Then crumble into desired size. . Serve with milk and fruit or just by the handful! Enjoy! . . Recipe is also on my blog for future reference. Breakfast on this sunny morning. @birchbenders paleo pancakes 🥞 cooked with virgin coconut oil, homemade raspberry chia seed jam, and crispy bacon 🥓 (the crispier the better 👅). . The chia seed jam was so easy to make. I heated up about a cup of #traderjoes frozen organic raspberry jam on low heat. Once soft, I mashed with a fork to help break down into a chunky puree. I added three tablespoons of water, two tablespoons of chia seeds, a few drops of stevia and the juice of half of a lime. 😋😋 . So good and helps not miss the full sugar versions or syrup. 😋 . Paleo is a plant based diet. Its based on 9+ cups of veggies per day. Eating that many veggies requires eating them at every meal. Breakfasts on a paleo diet are usually what people struggle with the most. This breakfast is filling nutritious, and will keep my blood sugars stable for hours. These are my go to meal prep containers for my salads that I take to work. They fit the perfect amount of greens for a big salad! When I buy the large container of spring mix, I will portion out a several days worth and keep them ready to grab in the fridge. On the same day, I’ll be sure to make enough salad dressing for the week. I love a dressing made from lemon juice, olive oil and garlic salt. Good morning beautiful people ☀️. Big, loaded smoothie to kick off this week and bring some color into this very gloomy Monday. I feel very energized, fresh and super productive this morning (have no idea why) but maybe it has something to do with this smoothie? IDK but it’s worth to try.. it’s low sugar which is good especially in the mornings, super thick and creamy, flavorful, fiber rich (to keep you full for longer) and loaded with the good fats to keep things going 💩(sorry for the TMI lol...) . . . Blueberry smoothie bowl: • 1 cup steamed and frozen cauliflower florets • 1/2 frozen banana • 1/2 cup frozen blueberries • 1 scoop @vitalproteins collagen or vanilla protein powder • 1 tps ground flaxseed or chia seeds • 1 tps @philosophielove coconut butter or coconut oil • cinnamon or vanilla for flavor • 1 cup cashew milk + 1/2 cup water Blend until creamy and top with some crunchy things and some fresh fruit.
