Need a quick fix dinner in less than 30 minutes? Spiralize some zucchini. Pan cook some cubed chicken tossed in coconut flour seasoned with salt, pepper and garlic powder. Once the chicken is cooked, add steamed broccoli (I use the microwavable ones found in the frozen aisle). Toss in 2 tbs butter, a tablespoon of soy sauce and red pepper flakes. Melt the butter down and then add the zucchini. Cook for another 5 minutes, constantly stirring so the zucchini evenly heats. Enjoy!

Do you eat bee pollen? I like to think of it as ‘nature’s sprinkles’ ✨ but it also happens to have some pretty cool nutritional attributes. 👇🏻 🐝Fights inflammation, which is great for overall health since we tend to be inflamed af. But also, bee pollen has been shown to have potent anti-inflammatory activity which (in animal studies) helps with acute liver disease (caused by Tylenol, but that’s another post…) 🐝Immune support, which is why I added some to my chia pudding this morning thanks to this cold. 😷 It might also stop mast cells from activating, which means it could help prevent allergic reactions. 🚑 🐝Great for the girls, as it contains flavonoids which are shown to prevent breast cancer from developing. 🍈🍈 Plus, it seems to help with menopausal symptoms so that’s pretty cool! Kale YEAHHH!!💥✌🏽🙌🏼 ———————————————————————— My @wholefoods was having a 2 for $3 sale on organic kale so I snagged some and made these killer kale chips! (Ps. Sorry about the horrible lighting, late night cooking makes for ugly pictures 🤷🏼‍♀️)———————————————————————— 2 bunches of curly kale (thoroughly dried) 3 tbsp avocado oil or olive oil 2 handfuls of @simplemills Sun dried tomato crackers 4 tbsp nutritional yeast 1 tbsp garlic powder 1/4 tsp salt ———————————————————————— Directions: -Preheat oven to 300 -In a food processor or blender blend together the crackers, nutritional yeast, garlic powder, and salt -Combine oil and kale and massage until all kale is covered -Pour cracker blend all over kale and mix to combine -Lay kale on a baking sheet in an even layer (I used 3 big baking sheets) -Sprinkle with a little more nutritional yeast -Working in batches, place the kale in the oven for 15 minutes. Then flip and bake for another 10 minutes or until crispy . *these are best right out of the oven because they start to loose their crispness after a day or two. La cena de mis dos peques. Crema de calabaza y zanahoria con pipas de calabaza tostadas y de segundo, pavo rebozado en almendra tostada y molida con patatas gratinadas al horno. Las almendras y las pipas las dejo 24 horas en agua templada para eliminar los antinutrientes, una vez bien escurridas las tuesto a fuego lento en el horno. Las patatas las tenía asadas y enfriadas en la nevera para favorecer la formación de almidón resistente. Whole30 Day 7 recap: I’ve made it one week! I also just started week 2 of my gym program. I’m burning a lot of calories each workout and finding that my meal timing is really important for sustaining me throughout the day. Another interesting thing is that my grocery bill hasn’t changed at all. I’m buying the same amount of food, just swapping in starchy vegetables for off-limit carb sources. . Starting a new training program and dedicated diet at the same time has really gotten me in my flow and super in tune with my body. .
Meal details: * Late brunch: eggs scrambled in bacon fat with zucchini and baby kale, baked sweet potato, bacon, and half an orange * Post-workout snack: half a sweet potato, salmon, and blueberries * Dinner: Whole Foods hot bar mix of salad greens, pork, guacamole, carrot salad, Brussels sprouts, and potatoes .

Creamy Paleo Chicken Skillet with Mushrooms and Bacon. 2 boneless skinless chicken breasts, cut into 1-inch pieces 3 slices bacon 1 small yellow onion, chopped 1/2 red bell pepper, diced 1/2 yellow bell pepper, diced 6 oz. white mushrooms, sliced 1/2 tbsp white wine vinegar 1 14.5-oz. can coconut milk 2 cups fresh kale, stems removed and shredded Salt and pepper, to taste Instructions: 1. Cook the bacon in a large skillet until crispy. Remove to a paper towel-lined plate & crumble. Set aside. Discard the bacon fat from the pan except for one tablespoon. 2. Add the onion to the pan & sauté for 4-5 minutes until soft. Push the onion to one side & add the chicken to the pan. Lightly brown the chicken, & then stir in the bell peppers & mushrooms. Cook for an additional 5 minutes. Stir in the bacon. 3. Add the white wine vinegar to the pan to deglaze. Add the coconut milk & kale. Cook for 3-4 minutes until the kale is wilted & the sauce is slightly thickened. Season to taste with salt & pepper. Serve warm.

My current two fitness goals: . . 5 unassisted pull ups by March. 7 by May. (Currently at 2) . . Get my trail legs back after not running for the last 2+ months. Aiming for 9:30 min miles ish. Did I mention I’m not really a runner?! The real goal is to not embarrass my team at the Ragnar Trail Relay in April! 😂 I don’t really care what my time is. I just want to have a good time running trails, ya know? Sometimes I feel like I should be all into my stats and tracking but you know what? That’s a total buzz killer for me. I only run trails so I can be “lost” in the woods and dance with the rocks and roots, get sweaty and gross, and feel my breath and my muscles, at my own pace. . . Breakfast salads like this are a part of how these goals get chipped away (you CANNOT outrun a bad diet): power greens, parsley, 1/2 avocado, roasted golden beets and butternut squash, 2 eggs, a little (Tessamae) lemon garlic dressing.😋
