Today was definitely Monday. The universe reminded me over and over. And over. I didn’t sleep well, woke up much earlier than normal for no reason and the day went downhill from there. . At one point, I found myself on the phone with Apple (for the third time in a matter of days) about an issue I’ve been having with my Apple ID. They were unable to help me (again). I hung up and started crying out of frustration. It wasn’t just about the Apple sitch. It was a slow build of multiple things — plus being overly tired. And yes, I’m aware I was being a lil over-dramatic. . Then BOOM — the universe put my ass in check! A friend texted me out of the blue about a tragic medical diagnosis. She is young and well aside from this new revelation, so I refuse to believe anything other than that she will be able overcome this hurdle and go on to lead a long, healthy life. But what the hell was I just blubbering about moments earlier?! Nothing even 1% important. Nothing I will likely even remember months from now. Meanwhile, that friend just received news they’ll NEVER forget and likely be dealing with for some time. . In light of this incident, I dried my ignorant tears, took a couple deep breaths and settled down. My takeaway is stop bitching. Realize what is important. Live in the moment, and live life to the fullest. Take care of your health, because without it, you have little. All clichés. All important. All too true. . I promise a return to light-heartedness tomorrow. Do you take 5min a day and think about your day...your plans...your goals? You don’t need a lot...maybe just take little time in a day to start doing something on your goals, intentions, anything you put your mind into! I learnt for myself that I can’t follow monthly ‘challenges’ or sth that’s why I think about maybe read a book every day for at least 10min for a week...that’s it 🙌🏼 i don’t do things such as read every day for a month or do yoga every day for a month...I’m just not that type...even tough I know making habits takes time but the most important is to listen to yourself 💞 Let’s make a deal. Today you stop, take a pen (ok also a phone works 🤷🏻‍♀️) and write down what you want to achieve today, what are you grateful for and at the end of the day what good happened🙌🏼 It doesn’t need to be anything major! monday night meal prep✔️ Didn’t get around to cooking for the week yesterday, because we were busy watching the @patriots do what they do best 🏈. But had some catching up to do in the kitchen tonight. On the menu this week 👩🏻‍🍳 • organic whole chicken roasted • zucchinis with avo oil, salt, pep • acorn squash with coconut oil, and cinnamon • dino kale with sesame seeds • cucumbers for snacking • rainbow carrots hiding under the chicken soaking up all the delicious flavors from roasting 🤤 Having food prepared makes it so much easier to throw together quick meals especially when the winter weather’s got us feeling extra lazy. Paleo Coconut Shrimp with Mango sauce Ingredients 1 lb. raw shrimp, peeled and deveined 2 egg whites 4 tbsp. tapioca starch 1 cup. shredded unsweetened coconut Sea salt and freshly ground black pepper Ingredients for the mango sauce 1 cup mango, chopped 1/3 cup hemp milk 1 tsp. lime juice 1 jalapeño, thinly minced 2 tsp. raw honey Preparation Preheat your oven to 400 F. Line a pan with a wire rack. Add the tapioca starch to a bowl and season to taste with salt and pepper. Place the egg whites in a second bowl, and the shredded coconut in a third. Line all the bowls up on your countertop in order (tapioca starch, egg whites, then coconut). One shrimp at a time, dredge in tapioca starch, then egg whites, then coconut. Place on the wire rack. Once all the coconut-covered shrimp are on the wire rack, place in the oven and bake for 10 minutes on each side (20 minutes total). While the shrimp are cooking, combine the mango, lime juice, jalapeño, coconut milk, and honey in a blender. Blend until you get a smooth sauce. Serve the shrimp hot with the mango dipping sauce. These are also AMAZING with the Ginger Cilantro dipping sauce by @stevespaleogoods

Tonight’s dinner was delicious as ever: smoked oyster chowder (dm me for recipe) BUT this Paleo pumpkin chocolate chip mug cake was the bomb 🍰🏆💣 The texture, the flavors, the subtle sweetness. 💯 I altered the recipe (swipe to see) and used @lakantosweetener maple and half MCT oil, half melted ghee. A delicious, low glycemic index dessert in 5 minutes y’all 💁🏼‍♀️ I jazzed it up by mixing in a handful of 70% dark chocolate chips and pumpkin seeds into the batter. The chocolate reallllllly makes the cake. 😑When you're on a diet and you're eating at a caloric deficit, you're going to get hungry. There is really no way around it. However, there are ways to reduce hunger or basically 'mask' your low caloric intake. - 1️⃣Load up on veggies. Veggies are high in volume and low on the caloric density, so they fill you up pretty quickly. - 2️⃣Add meal 'fillers'. Meals fillers are basically very low calorie foods that add volume/bulk to your meals in the form of fiber. Pasta zero, wheat bran, and oat fiber are all good examples.. - 3️⃣Drink diet soda. Zero calories, carbonated, and sweet , so drink up. - 4️⃣Schedule your largest meal for when you're the hungriest. This is kind of a no-brainer, but you'd be surprised at how many people think they have to eat a large breakfast and a small dinner because they've read in some magazine that eating that way will promote fat loss<- which is incorrect. Eating your largest meal when you're the hungriest, regardless of the time, would simplify your fat loss efforts. For most people, dinner would be their largest meal of the day, and if it allows them to better adhere to their diet, then why not? - 5️⃣Chew gum. This tactic may work for some people and blunt hunger, but for others may increase hunger. See what works for you. - 6️⃣Drink sugar free hot cocoa. 25 calories for 1 bag of cocoa mix; you can't go wrong with this. - 7. Experiment with intermittent fasting (IF). Do you know this fruit?? Have you ever had the bless to eat this piece of Sunlight?🙌🏻🎉☀️ This is commonly called Custard Apple, and it's definitely on my top 5 fruits, along with mangoes, jackfruit, banana and papaya🖐🏻🌟✨ So sweet, so creamy, so gentle to our bodies, so nourishing that even having said all this, I'm still not going to be able to make justice to what you really feel like when you eat it🌈 The best country in the World to enjoy this fruit is Australia, it is by far THE FRUIT that represents this country. Why I say this? Cause I've tried maaany many many custard apples already in different countries, but Australia has the best ones. They are Bigger, Sweeter, creamier and with the less amount of seeds I've ever seen (which makes it much more enjoyable to eat✌🏻😄). This ones in the photo are really unripe, so I cannot say whether Thailand has better ones or not. But it is for sure that they will need to be meditated by one thousand Tibetan monks in order to be better than the ones from Aussieland jajaja😋🇦🇺🌟 Last day in Chiang Mai today, and tomorrow... Super Simple Homemade Spaghetti Sauce! 1 can of D.O.P. certified San Marzano tomatoes. Sprig of Basil Tomato paste Yellow onion Some garlic cloves Salt Pepper Done Saute the garlic and onion in some olive oil. Add the paste. Add the tomatoes. Stir in the basil. Simmer at least an hour slightly uncovered. To really deepen the flavor, toss in some butter. FACT: it would not be a whole30 without one of @paleomg’s spaghetti squash casseroles. tried the chicken pad thai tonight! as written, it isn’t whole30, but it was easy to modify. i swapped out the honey, and substituted 3 dates, that soaked in the 1/3 cup of (hot) water for the sauce, plus used @wildbrine sriracha. DAMN. #januarywhole30
