Everyone in my house was looking forward to dinner tonight! We had pulled pork that my hubby made topped with @thenewprimal mustard bbq sauce and Brussels sprouts. I went with mashed sweet potatoes from @traderjoes on the side while the rest of the family had mac and cheese. Brussels sprouts are definitely my favorite side dish when doing #whole30 - I like them extra crispy (and with bacon...because bacon, duh!)

🍅🍃Deets: arugula, roasted fingerling potatoes seasoned with herbs (Roasted on 450 for about 25 minutes in my cast iron pan), avocado and crispy sautéed chick peas (peeled them then tossed in coconut oil and some @primalpalate Seasoning and sautéed for a few minutes until crispy!) Roasted red pepper ketchup: 1 small jar roasted red peppers (7 ounces), 1 15 ounce can crushed tomatoes, 1 small onion, 1 clove garlic, 1/3 Cup coconut sugar, 1/4 Cup apple cider vinegar, 1/2 tablespoon black pepper, 1 teaspoon salt. Sauté chopped onion and garlic over medium heat in a tablespoon or less of oil until soft, add in the rest of ingredients and bring to a boil and mix well. Reduce heat for about ten minutes and allow to simmer. Blend ingredients until smooth. • . By @starinfinitefood 📷

I finally decided to make my own kombucha! I bought a kit from @thekombuchashop. It came with everything I needed. The process was incredibly simple. 1. Bring 4 cups of water to a boil. Turn off heat. 2. Place organic loose leaf ceylon and oolong tea in tea bag (or any caffeinated tea, preferably black). Brew in water for 5-7 minutes. Remove the tea bag. 2. Add 1 cup of sugar. Stir until it has dissolved. 3. Transfer the sweet tea to a glass gallon container. 4. Add the SCOBY (symbiotic culture of bacteria and yeast) and stir once. 5. Cover with a cotton cloth and secure with rubberband. 6. Place in a warm place with good airflow. Make sure it is out of direct sunlight, but do not place in a cupboard or enclosed space. Yasss! First pizza (cauliflower crust) in almost 3 months since going Paleo😋 I can't even describe how happy I was to finally add some pizza back into my life. I remember telling myself even if it was with Cauliflower Crust, that I had to earn it back into my diet. Working toward goals and healing my chronic illness deserve to be rewarded, but I wanted to be sure that I was no longer easily triggered back into eating the junk I used to eat. Happy Monday! 💕 I’ve been making these roasted veggies pretty often lately and I love them! 😋 You can pair them as a side with anything you want, like steak, chicken, fish, in a casserole. So many options! The veggies I used are halved baby carrots, quartered mushrooms, broccoli, halved cherry tomatoes, and sliced onion.🥕I threw them on a sheet pan and tossed them with avocado oil, lemon juice, himalayan salt, black pepper, garlic powder, chopped fresh parsley, and chopped fresh cilantro. I roasted them for about 22-25 minutes in a 450 degree oven.
