I spent about an hour cooking waffles and pancakes 🥞 and I actually got to eat some while they were still hot. I'll call that a motherhood win! 😜 I even got to enjoy some HOT coffee with them, what?! ☕ . . Oat flour pumpkin waffles recipe: 3 cups oat flour, 1 can pumpkin puree, 4 eggs, 1 1/2 cups milk, 1/2 cup coconut oil, 4 tsp baking powder, cinnamon, salt, sweetener if you want (I blended 4 medjool dates in). Add in more milk if you need to. Cook it in the waffle maker on medium high heat for 4 1/2 minutes or fry like pancakes. Top with maple syrup and just a LITTLE bit of @kerrygoldusa butter like I did 😜 . . Happy Sunday! #sundaymorning #breakfast #waffles #thrivingonwellness

We are swimming in okra from our @loamagronomics CSA delivery which means one thing... our FAVORITE summertime breakfast. Everything in this dish is seasonal, fresh, and oh so tasty. You can’t argue with the fact that food that’s in season taste 100 times better than when it’s not in season. There’s not much to this dish because the fresh ingredients do all the work. * Okra is a misunderstood veggie, but it’s jam packed with beneficial nutrients and gut healing properties. The “gooey” property of okra helps protect the stomach and intestinal lining and also keeping things “moving” in the colon. Okra has also been shown to help manage blood sugar and lower cholesterol. * This dish is so simple. Cook up some pork pan sausage and set aside. In the leftover drippings, cook up some summer squash (zucchini and yellow squash), okra, tomatoes, and onions. (FUN FACT: The acid from tomatoes keeps the okra from getting too mushy and goopy). When the veggies are done, add the meat back in. Season with salt, pepper, thyme, and oregano. Corn 🌽 isn’t necessary, but adds a really nice flavor to it. 1. Prep and plan as far in advance as your need. Sometimes that months in advance, sometimes you can swing it in a day, but planning is *so* crucial to week 1 success. It’s going to be a tough week with all of the symptoms, so being overly prepared is key. 2. Brace yourself - this week can be rough. The first week of #whole30 is always the toughest for me. I have to ensure I have every meal and snack planned out so I don’t fall back on old habits (like eating out.) I need to have healthy, filling meals and snacks to keep me satiated and sane. Your body is making a big adjustment and can’t rely on quick carbs and sugars for energy and it’s throwing a huge fit because you’re not giving it what it wants. Lean into that discomfort and know that it will pass. 3. Save time, money and sanity by having some kind of routine in your meals. This week I ate pretty much the same thing for breakfast and then had three options for lunch and dinner, which I switched up. I found this saved me time during #mealprep and I’m thinking what I wanted to eat. It saved me money because I wasn’t buying all these ingredients only to waste them by not being able to eat it all, and it saved me sanity (hopefully for obvious reasons haha.) Some nights I came home ravenous and if I needed to come up with a meal or do heaving cooking, I don’t think I would have survived. 4. Emergency food is your friend this week — but I am not talking about loading up on rxbars, larabars or meat sticks. Those are great for those true emergencies you run into (like when your bus is late and you’re in the city-equivalent of the middle of nowhere.) But in this case, I’m talking about real, whole foods like fruit, compliant deli meat, nuts - that kind of thing. These foods keep the #sugardragon at bay but don’t feel as indulgent to your brain as a bar would feel. 5. Be easy on yourself - You’re making a HUGE change and it’s ok to ease into it. This week I didn’t make it to the gym - and that’s ok. Do what you need to do to make this positive change work for you. Week 2 does it get easier and by Day 30, you’ll be a complete pro at this whole30 life. Take it one week/day/meal at a time. WE can do it! 💖

You’ll love these choc-a lot! . Holy shit balls y’all! These chocolate almond butter cups are sofa king delicious! The best part is there are only 3 ingredients in them! Yes, you read that correctly....3 ingredients! . This recipe is from @thejoeduff (The Diet Chef) so head over to his YouTube page and check out all his recipes. . The 3 ingredients are: - @lilys_sweets_chocolate (stevia sweetened w/o added sugar) - coconut oil - almond butter (or use whichever butter you want) . His recipe had 1.5 net carbs when made into a mini size muffin pan. Since I used the standard muffin tin I’ll say these are about 3 net carbs per piece. Not bad when you compare it to similar types bought in a store. . Hello gorgeous and awesome people 💖! Have I told you I ❤️these bowls😀!!! Another bowl meal-and it’s bibimbap!! Marinated beef, carrots, bean sprouts, Chinese broccoli,purple cabbage and onions!! I cook them all separate and keep them in the warming drawer..... oh!! I also made some quick pickled watermelon radish and onions 🤤🤤🤤 ( water, white vinegar and maple syrup, all to taste, brought to a simmer, then poured over thinly sliced veggies, use a heat tempered glass jar or bowl, cover and let cool- then enjoy!!!). happy saturday friends 🤩!! i whipped up this quick + easy dinner for my dad and me this evening, and lemme tell ya — this was insanely delicious 🤤. i was inspired by the amazing @balancebymolly to make this dish, and it turned out even better than i could have ever imagined! this is the perfect gluten and dairy-free dish for a quick meal. i used gluten-free brown rice/quinoa pasta, TONS of veggies i that had in the fridge, and added in some pasture-raised, organic chicken breast for protein 🙌🏻. and one little secret for this pasta... i added in some zoodles 🙊! i love mixing zoodles and pasta to get in extra veggies (💁🏼‍♀️) and it also adds texture. it doesn’t get any better than that if you ask me 😎! have a wonderful evening 💛! • • dinner deets 👉🏻 gluten-free quinoa/brown rice pasta tossed with zoodles, sautéed broccoli + spinach, artichoke hearts, and diced roasted chicken breast all tossed with olive oil, fresh lemon zest, and topped off with oven roasted cherry tomatoes ✨.

What the dill with these fries?! . All I know is you’ll pig out once you try one of these Bacon Pickle Fries. . The recipe comes from the geniuses at @delish who are quickly becoming my favorite place to get ideas for quick, healthy and tasty Keto meals. . All you do is wrap up some pickles with bacon, pop them in the oven at 425 for about 15 minutes. Truth be told I had to leave mine in for about 30 minutes until I got a nice crispy bacon shell. I think it’s because I’m using sugar free bacon. No big deal...still tastes damn good! . I would recommend using some sort of low carb dipping sauce to take it up another level. Turkey and Zucchini Meatballs: a Colwes family favorite. In fact, our son asks for these over the @traderjoes Frozen ones we always have on hand. Now that this is our 3rd summer with a csa from @kretschmannorganicfarm, the wife has assembled a collection of recipes for when we get an obscene amount of certain veggies. These meatballs have a ton of hidden shredded zucchini in them (and I would know because yours truly was sous chef this evening and did all the grating 💪🏻 ) and she serves them with whatever veggies we have around, some spicy hummus, a lemony tahini yogurt sauce (using @kitehillfoods almond milk Greek yogurt), and for the kiddos and myself, white rice and pitas. #foods4thought #shitmywifeeats #droolclub #paleoish #primaleating #mediterraneanfood #meatballs #foods4thought #whatsfordinner #whatsonmyplate

Tonight’s dinner was absolutely delicious even if it did warm our house up way too much for July in Alabama. Cooking a whole roast chicken is one of my favorite things. I normally make one with fresh herbs, but decided to mix things up this weekend. • Recipe: I used a 3lb chicken patted dry and placed in a roasting pan. • Mix together this spice mix: 2 tbsp olive oil 1/4 tsp cayenne 1 tbsp fine sea salt 1/4 tsp cinnamon 1 tsp paprika (sweet) 1/2 tsp fresh ground black pepper 1/2 tsp garlic powder 1/2 tsp onion powder 1 tsp cumin • Fill the cavity (after removal of giblets) with: half a lemon cut into wedges, 4 cloves of garlic,and half of an onion cut into wedges. • Use 1/4 of the spice mix to rub under the skin if you can to add extra flavor the the breast of the chicken. Spread the rest of the mix all over the chicken. • Place the chicken in a preheated 450 degree F oven for about one hour or until the internal temp is 165. Let rest 10 minutes. #feedfeed

When your paleo vegan cookies make an unbelievable cookie skillet 😍😍😍 This baby is vegan, dairy free, grain free, gluten free, and paleo friendly! 😋 sub erythritol for the coconut sugar, and it’s Keto too. It’s not cakey like some other paleo cookies out there- it’s crispy, gooey, and chewy 😍 Recipe below: 1. In a small bowl, combine 25 g almond flour, 7 g coconut flour, 1/4 tsp baking powder, and a 1/8 tsp salt. Set aside. 2. In a separate bowl, cream together softened 1 1/2 tbs vegan butter, 1 1/2 tbs almond butter (I used @barneybutter), 3 tbs coconut sugar, 1/2 tsp vanilla, and 1/4 tbs flax mixed with 3/4 tbs water. 3. Gently fold the dry mix into the wet. Once your dough has formed, add 1/4 c of chocolate chips (I used a mix of @enjoylifefoods chips and chopped @mastbrothers almond butter chocolate) Pour the dough into a small cast iron skillet. 4. Bake at 350 for 20 minutes until cooked, but gooey 😋😋😋

Getting in one last hometown run before I fly back to NYC tomorrow 🗻🛫🗽 I always miss my mountains when I leave, but I know they are always here waiting to welcome me back again! I'm also pretty proud of my current training program. After a childhood of HATING running with a passion that cannot be matched I discovered the joy and power of solo running about 10 years ago, and have been running off and on since then. My first real race was a half marathon in 2008 (because I'm insane), which I trained for and then never ran distance again after that. When @dagooch1979 asked me to run a 5K with him this summer, I enthusiastically agreed, but decided I wanted to challenge myself a bit more than that. I've been doing 3ish miles pretty comfortably for years so I wanted to go beyond that and give myself a goal again, which is why I'm currently training for the Governor's Island 10K - I can run the first 5K loop with Will, and then the second 5K loop on my own. With hitting 5 miles today, this is officially the farthest I have run since completing the 2008 Philadelphia Half Marathon! Yes, I'm slow... Right now I'm just working on endurance and consistency, speed will come later. I have 3 more weeks to build up another 1.2 miles and make sure I can complete that distance in 90 min or less. I'm feeling strong, I'm feeling confident, and I'm feeling on track to achieve my goal, which is the most important part. rainy days call for a comforting dinner!! enter, gluten free chicken marsala!! warms the heart and the belly. served over @jovialfoods farfalle and some roasted broccoli and tomatoes!! now, over to the couch before the food coma sets in... . dredge 1.5-2lbs of boneless, skinless chicken thighs in about a cup of gluten free flour (i like @bobsredmill) seasoned with salt and pepper. heat 2 tbsp of evoo in a large skillet and cook chicken in batches, roughly 3-4 minutes per side. remove chicken and add another tbsp of oil, add 3 cups of sliced baby bella mushrooms until they begin to soften. add 2-3 chopped garlic cloves and mix with mushrooms. deglaze pan with 1/2 c of marsala wine, scraping brown bits from pan. add a 1/4 c of water or chicken broth and nestle chicken back in and simmer till chicken is cooked through, roughly 15 minutes. season with salt and pepper to taste and top with fresh parsley! serve as is or over pasta, rice, caulirice, whatever your heart desires!!!!!

There was a special held each Friday and Saturday at the Pho Vietnam here in town and although I like my lobster straight out of the ocean this was an amazing spin on #flavor Thank you to an impromptu visit with a good friend when I got back.

Last night’s dinner was baked tilapia! It’s super simple. Just follow the recipe for my baked rainbow trout on my website and add in chopped fresh parsley! . Hope everyone is having a relaxing Saturday. We had an easy morning with an eggs and bacon breakfast and then did laundry and played sports in the park before the rain comes. #workhardresthard

That, my friends, is some fresh squeezed lemon/lime concentrate. . . We are not super strict with diet in our house or with our daughter (by my standards, at least). We eat whole foods, mostly homemade, about 80-90% of the time. The rest? Well, it happens to be a balance of steering clear of food sensitivities, and enjoying what is offered to us, with gratitude. . . I’m at my mom’s right now, and it will be a sliding scale. Whatever I eat, I try to eat with gratitude for those who made it/offered it, and joy in the company that it is shared with. Our yummy dinner tonight! 💚 I gave the chicken breasts a good herb and spice rub (smoked paprika, ground garlic, rosemary, basil and thyme) with a drizzle of extra virgin olive oil, and roasted them in a hot oven for 40 minutes, in an oven dish on a roasting rack. The sides were steamed mange tout and spring onions, along with smashed sweet potatoes with extra virgin coconut oil, smoked paprika and a little pink Himalayan rock salt. One dollop of delicious raw basil pesto, and that completed this delicious dinner plate! ℳⒶℊⓘℂⒶℒ MATCHA Pancakes I didn’t have much in my fridge today, but I managed to whip of these simple pancakes and was more than satisfied 😋 Make It 2 eggs 2/3 cup coconut milk 1/4 cup of melted grass fed butter 3-5 drops of monk fruit extract 1 tsp vanilla extract 1 cup almond flour 2 TBSP matcha powder 1 TBSP baking powder 1/8 tsp sea salt Toppings: I like plain coconut yogurt and fresh raspberries, macadamia nuts, chia seeds! Today I kept them plain 🤗 Directions In a bowl, whisk together the egg, coconut milk, melted butter, monk fruit and vanilla extract.Add the almond flour, matcha powder, baking powder and salt. Whisk until combined and the batter comes together. It will be thick and, of course, very green. Heat a cast-iron skillet over moderate heat. Brush with butter. Using a 1/4 cup measure, transfer small mounds of pancake batter onto skillet. Use a spatula to help even out the circle if need be. Once bubbles appear and pop on the surface of the pancake, carefully flip the pancakes and cook for another minute or so.Stack the pancakes and serve with your favorite #cute toppings! #eatcute
