When your paleo vegan cookies make an unbelievable cookie skillet 😍😍😍 This baby is vegan, dairy free, grain free, gluten free, and paleo friendly! 😋 sub erythritol for the coconut sugar, and it’s Keto too. It’s not cakey like some other paleo cookies out there- it’s crispy, gooey, and chewy 😍
1. In a small bowl, combine 25 g almond flour, 7 g coconut flour, 1/4 tsp baking powder, and a 1/8 tsp salt. Set aside.
2. In a separate bowl, cream together softened 1 1/2 tbs vegan butter, 1 1/2 tbs almond butter (I used @barneybutter), 3 tbs coconut sugar, 1/2 tsp vanilla, and 1/4 tbs flax mixed with 3/4 tbs water.
3. Gently fold the dry mix into the wet. Once your dough has formed, add 1/4 c of chocolate chips (I used a mix of @enjoylifefoods chips and chopped @mastbrothers almond butter chocolate) Pour the dough into a small cast iron skillet.
4. Bake at 350 for 20 minutes until cooked, but gooey 😋😋😋
