This bowl featured a seasoned Toronto beef burger from Whole Foods [beef, black pepper, garlic, sea salt, dill, coriander, chili peppers] over @organicgirl’s 50/50 salad greens with sliced tomato, avocado, red onion & a pickle spear served with roasted chili sweet potato wedges + @tessemaes ketchup. ______ The #whole30’s official “Can I Have...” guide found on whole30.com nixes potatoes/fries if they’re commercially prepared or deep-fried. They recommend making your own at home (as I have here) using coconut oil, duck fat, or ghee, and baking or roasting them in the oven instead of deep-frying them. Wanted to address this as I’ve received questions about whether or not sweet potato wedges are in fact compliant. I doubled my dinner recipe last night so that I could have leftovers for breakfast today! Chicken Sweet potato hash with a fried egg and avocado😍 I’m on the road today so I’m trying the Slow Cook setting on my instant pot for the first time. It is so awesome! You can hit delay start, choose the amount of hours that you want to delay, then set your cook time, then set keep warm. I love it! So much better than my old school crockpot with no settings! FIG PROSCIUTTO SWEET POTATO PASTA I love sweet potatoes. I don’t know about you, but I used to eat a lot of pasta. Thanks to my celiac disease I have been able to discover alternatives that I love a lot more. This sweet potato pasta is just one of those replacements that I love. The flavors are amazing and it is so simple to put together. Ingredients •2 large sweet potatoes, peeled •1 cup dried figs (about 15 figs), roughly diced •1 (4 ounce) package prosciutto (8 large slices), cut into 1 inch squares •1 cup slivered almonds •1 (4 ounce) container crumbled goat cheese (optional)(equals 1 cup) •½ teaspoon sea salt •½ tablespoon olive oil •2 tablespoons water Instructions •Chop the pointed ends off your sweet potato and spiralize it. If you don't have a spiralizer you can use a julienne peeler to make noodles •Cut prosciutto into strips, roughly 1-inch long and ¼-inch wide •Slice dried figs into thin rounds, being sure to remove the hard stems •Place a large saute pan over medium heat with your olive oil •Add your sweet potato noodles and season with sea salt •Cook for about 5-7 minutes or until sweet potato noodles soften and are no longer raw. •Be sure to stir frequently so that the noodles don't burn. •When done, transfer to a plate. •In the same skillet over medium heat, add sliced proscuitto and cook for about 3 minutes, flipping halfway through cooking or stirring often •Add sliced figs and slivered almonds and cook for another 3 minutes until your figs are soft and slightly browned. Stir often •Add ½ cup of your goat cheese and water, stir together to melt the cheese slightly and then add all of the sweet potato noodles •Stir until well combined and remove from the heat •Serve immediately and garnish with your remaining ½ cup goat cheese.

Whole30 Day 2 recap: Went better than day 1. I’m feeling tight and lean already, which is a cool immediate effect. I drank tons of water and a little more coffee than usual to stave off a headache. My body still ached from the past few days of workouts, so I took it easy and went for a walk. I’ve been cognizant of eating enough carbs at each meal, but I still felt pretty off in the afternoon. A Larabar perked me back up.

The moral of the story is that I need to keep eating more carbs than I think!

Meal details: * breakfast was spinach and 3 @vitalfarms fried eggs with a potato, bell pepper hash * lunch was @imperfectproduce cucumber and bell pepper sticks, sweet potato with @fourthandheart vanilla bean ghee, ground turkey, avocado with hemp hearts, and @wildbrine beet and cabbage sauerkraut * dinner was a salad with salmon, @driscollsberry blueberries, cucumber, avocado, and baby kale drizzled with balsamic reduction and olive oil
