Vegan dinner and dessert to celebrate my dad's birthday and father's day - both on the same day too! I found the pine street market which is basically a food court and there were many options. We both opted for the vegan ramen from @marukinramen which was amazing. Then we got vegan soft serve in the same complex from @wizbangbar which was roasted strawberry and coconut milk soft serve. By far the BEST ice cream I've had ever (and I got mine in a waffle cone). Had an amazing Fathers Day! Took baby daddy to the zoo, packed him a lunch, and little babes painted him a picture 😍. I’m wiped! So I decided to make something super easy and quick. Grass fed ground beef on top of a bed of lettuce and veggies, sprinkled with Louisiana hot sauce, I also add green goddess salad dressing from @traderjoes, then I put together a mustard sauce to roast the cauliflower in 🔥♥️😍 it has some heat too 🔥🔥... Dijon mustard, olive oil, nutritional yeast, coconut aminos, and lots of spices, and red pepper flakes! Happy Fathers Day to all you dads!

I was feeling down today, I’ve got a summer cold and frankly my sinuses want to explode. Doesn’t help that it’s beautiful outside and I’m stuck inside, trying to rest... Anyway I decided to cook myself dinner and pull myself out of my funk! This might be my new favorite recipe. Roasted plantains with coconut oil and salt topped with asparagus, cauliflower, avocado and chicken that was roasted in curry powder, Franks hot sauce and some olive oil. The sweetness of the plantains combined with the spicy chicken was incredible. Grain free /gluten-free brekkie 🥚 🥓 🥑 🍅 I don’t know about others who are avoiding certain foods because of IBS, SIBO, Hashimotos, psoriasis and so on but sometimes I get so confused about what is off limits and also I think I should listen to my body and if something agrees with me I should have some. Yesterday I wanted porridge so I had a gf version but the thought of having it every day made me wonder “is that bad for my gut?” “Why do other people completely avoid grains - I should too”. This week I’m going to try variety and have the things I like and are allowed in moderation on fodmap. I love avocados and they are high fodmap but you know what I love them and I know my body does too so they are staying 😂🙌. When it comes to gf grains or no grains at all the jury is still out and it’s been by far the biggest head wreck of this whole journey so far. About 1000x tastier than it looks. Turkey cauliflower instant pot magic that tastes 👌and takes maybe 20 min to make. Ingredients: • 1 package of ground turkey • 1 package of riced cauliflower • 3 chopped leeks • salt, pepper, cumin to taste • tajin and salsa to garnish Directions: 1. Throw everything but the garnish in the instant pot and mash it together well with your hands 2. Use the manual setting and set for 15 min 3. Garnish with tajin, salt if needed and a dollop of salsa

GUT HEALTH: BONE BROTH! A very old tradition in many cultures, making a broth(stock) by boiling fish, chicken or any other organic grass fed bones with vegetables and herbs for about 8 hours in a crock pot (raw bones should be oven roasted first). Broth boosts the immune system (chicken soup when you are sick anyone?) and improve digestion. It’s high calcium, magnesium, and phosphorus content make it great for bone and tooth health. Bone broth also supports joints, hair, skin, and nails due to its high collagen and gelatine content. Broth is very high in the amino acids proline and glycine which are vital for healthy connective tissue (ligaments, joints, around organs) I drink some broth just on it’s own, as a stock in soup, or any cooking with sauces like curries, pasta sauces, stir fries etc. Freeze it in small containers and use as needed.

Salmon cakes to the face! I've been on a bit of a seafood kick now that it is warm out and can't get enough! These are super easy to make and have some great flavor. - 6 oz. canned salmon - 1 egg - 1/2 cup almond flour - 1 tbsp onion powder - 1 tbsp lemon juice - 1 tsp minced garlic - 1 tbsp parsley - Sea salt - Pepper Take a 1/4 cup of mixture and put into a pan of your favorite oil. I like coconut or avocado oil. Use a fork to level out into a patty form and let cook for 3 min or until browned on each side.

These Lemon Poppy Seed Paleo Pancakes are to die for! You need to try them. Lemon Poppy Seed Paleo Pancakes Ingredients 3 eggs 3 tbsp almond milk 2 tbsp honey 1 tbsp coconut oil, melted, plus additional for pan 1 tsp vanilla extract Zest of two lemons 1 ripe banana, mashed 1/4 cup coconut flour 1/4 tsp baking soda Pinch of salt 1-2 tbsp poppy seeds Instructions 1. In a large bowl, whisk together the eggs, almond milk, honey, coconut oil, vanilla, and lemon zest. Add in the mashed banana. 2. In a separate bowl, whisk together the coconut flour, baking soda, and salt. Add the dry ingredients to the wet ingredients. Stir together until just combined. Fold in the poppy seeds. Let the batter sit for 5 minutes to allow the coconut flour to absorb the moisture. 3. Heat a griddle or non-stick skillet to medium-low heat. Coat the pan with coconut oil. Pour about 1/4 cup of batter onto the skillet. Cook for 3-5 minutes until the bottom is cooked through, and then carefully flip. Cook for another 2-4 minutes until lightly browned. { PALEO BROWNIES } All you need to make these is 1/3 cup coconut oil melted and cooled, 1 egg at room temp, 1 teaspoon vanilla, 1/2 cup drippy nut butter, 1/4 cup coconut flour, 3/4 cup coconut sugar, and 1 teaspoon baking powder. How to: Preheat oven to 350 degrees. Grease an 8x8 baking dish well. Mix together wet ingredients then add dry ingredients and mix until combined. Pour into baking dish and bake for 18-20 minutes. Let cool before cutting.
