Vegan No-Bake Passionfruit Slice!😍🍰🌱

Last year we saw A LOT of passionfruit on our dining menus: passionfruit mojitos, passionfruit martinis, passionfruit shake, passionfruit the dong by Drake😘! Okayyy...the last one isn’t a drink, but you know what we mean!! This fruit is ERRRwhere these days but☝🏽we haven’t seen it in dessert form…YET! 😈We took up the challenge and found this great recipe by @kidseatbyshanai !! Thank you so much for this recipe~ we love ittt! It is not only SUPER TASTY, but VEGAN🌱 and NO bake!!💁

SO it’s the perfect late night snack, NO REGRETS guiseeee!
CRUST Ingredients 🔅1 cup raw cashews (soaked in hot water for 1 hour)
🔅1 cup medjool dates 🔅1 cup shredded coconut 🔅1 tbsp lemon juice
FILLING Ingredients 🔅1/2 cup raw cashews (soaked in hot water for 1 hour)
🔅5 passion fruits, pulped 🔅1/4 cup coconut oil, melted
🔅1/4 cup maple syrup
🔅1/2 tsp vanilla extract .
STEP 1️⃣: Line cake tin with parchment paper.
STEP 2️⃣: combine all crust ingredients (soaked cashews, dates, shredded coconut, lemon juice and salt) in the food processor or blender until sticky crumble is formed. (Add a tablespoon of water if doesn’t mix well).
STEP 3️⃣: Transfer to cake tin and press down firmly to form the crust.
STEP 4️⃣: process all the filling ingredients (soaked cashews, passion fruit pulp, coconut oil, maple syrup, cinnamon and vanilla extract) in the food processor or blender until it is smooth and creamy.
STEP 5️⃣: pour filling onto the crust and freeze for 1-2 hours take out of the freezer and let sit for 10-14 minutes before slicing!!
🙋Note: we recommend storing the cake in the freezer so it stays intact and doesn’t fall apart. When you want to eat it, just take it out, let it sit for a few minutes, then cut yourself a big slice!!
