I love the colour "green". It is so earthy and beautiful. Everytime you put some chopped coriander or mint leaves on your dish, it looks fresh even when it might have been cooked days back. There is something refreshing about #green.
I hated coriander leaves as a garnishing when I was a kid. I always used to associate it with grass. I hated it to an extent that my #mom would actually have to put away my share of all sabzis, dals or curries before she garnished because, Dhaniya is dhanno for Bengalis.
But !!! I loved other coriander stuff. For instance, I love chutneys, coriander pakoras, coriander chicken etc. Maa used to serve me this "Dhonne Baata" which is basically a paste of coriander leaves with green chillies, salt and mustard oil. I can have all my rice with just Dhonne Baata. The #flavour is so magnetic you won't forget it easily. Just some spoons of it with hot steamed rice and you're good to go. It's healthy too.
Then comes the quintessential "Mushurir Dal" aka Masoor Dal. Tempered with "Paanch Phoron" or Bengali Five #Spices and #Chillies with sauteed onions and tomatoes, it is a basic side dish with our lunches. A quick note for making a perfect Mushurir Dal is when you're almost done, add a pinch of sugar and a teaspoon of #lemon #juice before shutting off the flame. It tastes heavenly.
My second favourite to Pabda Maach is Paneer. Quite frankly I am also at times shocked at my love for Cottage #Cheese. #Paneer is my bae. I tried Paneer Cutlets today for my friends and they loved it. I mixed Paneer with a bit of boiled Potatoes, Roasted and Powdered #Peanuts, chillies, chopped onions, turmeric and chilli powder, aamchur powder, ginger and garlic paste. Made them into small Tikkis and natter fried them. Batter was Rice Flour + Cornflour + Salt and Chilli powder.
The repeat dish is Chicken Chaap which I've posted before. Let me know if anyone has tried Baata before.... It is always nice to get connected at ground level.
