It can turn a meal into a feast, a house into a home, a stranger into a friend.~ 🙏 . . Living in a developing country can pull you many ways. You can feel so much anger and frustration for the systems in place and so deeply saddened because of the massive divide between the “haves and the have nots.” 😢 Or you can go the other way and have such a deep sense of gratitude for what you have. 🙏 I live in an apartment block and on the corner there are squatters, they have a small farm, a mobile restaurant and they live in a galvanized iron shed. 🌱 They are the loveliest family and they have nothing, I would say they as a family live on $20-$50 per week, they work tirelessly, I see them up at 5am and at 9pm they’re still up selling their food. 🍵 They always have smiles on their faces and they’re genuinely happy, they’re so welcoming and what they have they’ll give. 🤝 We were communicating (I don’t speak Vietnamese) last night and having a laugh at her dog, 🐕 they have a great sense of humor. I said to my partner, they’re truly happy because they accept their lot in life and they’re grateful for what they have, food, shelter, family, love and life. 🌷 What more do we need? 💞 Today I’m grateful for all those things and more. Today will be a magical day filled with acceptance, health, happiness, diligence, laughter and love. ❤️ . . Fruits: Pink and White Dragonfruit, Mangosteen, Rambutan, Mango, Passionfruit and Papaya.

Look at these delicious empandas with garlic spinach by @biancazapatka INGREDIENTS Dough:⠀ 300 g of flour 100 g vegan butter Alsan (optional margarine)⠀ 1 tsp salt⠀ 1 tsp baking powder⠀ 150 ml of plant-based milk (or water) lukewarm⠀ Filling :⠀ 1 onion⠀ 2 cloves of garlic⠀ 300 g of spinach frozen⠀ 150 g of grated vegan cheese (or vegan cream cheese / feta)⠀ salt⠀ pepper⠀ chili (optional)⠀ nutmeg (optional)⠀ To brush:⠀ 3 tbsp soy milk⠀ 1-2 tbsp olive oil⠀ 1 pinch of turmeric (optional)⠀ ⠀ INSTRUCTIONS⠀ Dough:⠀ Combine flour with baking powder and salt in a large bowl. Form a pile and press a hollow into the heaped flour.⠀ Melt the vegan butter in a saucepan. Allow to cool slightly and add into the flour hollow. Pour in plant-based milk (or water) and knead everything to a nice smooth dough.⠀ Then form the dough into a ball, wrap in cling film and place in the fridge to chill for at least 1/2 hour. ⠀ Filling:⠀ Defrost and press the spinach.⠀ Peel onion and garlic and finely chop.⠀ Heat oil in a pan. Sauté chopped onion and garlic briefly. Add spinach and season with salt, pepper, a bit of nutmeg and chili to taste. Then set aside and let cool slightly.⠀ ⠀ Remove the dough from the fridge and knead again on a lightly floured surface. Then roll it out and cut out 10 cm diameter circles (I used a big glass for that). Knead again the remaining dough, roll out and then cut out. Continue this process until the dough is used up.⠀ Place 1-2 tsp filling in the center of each dough circle and fold the empanadas into a crescent. Then press the edges firmly with a fork.⠀ ⠀ Brush a baking tray with oil (or line with baking paper) and place the dumplings on top.⠀ Mix the olive oil, soy milk and turmeric and brush the filled empanadas with the mixture.⠀ ⠀ Bake them in a preheated oven at 200°C for about 20 minutes until golden brown and crispy. (Optionally you can also fry them).⠀ The vegan empanadas can be served hot or cold.⠀ #hungryveganco

One of the worst things about Crohn’s disease for me is the constant worry that a safe food might suddenly become a trigger food. As much as food has helped me heal physical disease it’s helped my mental state even more. Crohn’s flares stop my life causing a chain reaction that then causes my arthritis, pancreatitis and migraines to flare. Generally during these flares I would eat an only white carb diet. My flares would last days to weeks then causing me to fall into a severe depression. Since changing my diet I rarely flare but when I do I live off watermelon, avocado and blueberry smoothies. My flares last a day maybe 2 and I no longer get migraines, pancreatic flares. I’ve spent years pretty much bed ridden eating white carbs being pumped full of toxins waiting to die. I love this place so much and I love how friendly the staff is! Something else that I love about this place is that they don’t advertise a lot that their vegan. There’s a sign that says it near the register and there’s only non dairy drinks and kombucha in their drink fridge, but otherwise, you don’t see it much. I think when people see that a restaurant is vegan, they almost turn away from it, which is really sad to me. #Spaghetti night but I kinda burnt the sauce 🤷🏻‍♀️, but thankfully it still taste good and it hit the spot. I spiralized some organic zucchini and topped it with pasture raised bison, garlic + mushroom spaghetti sauce. For the meaty spaghetti sauce, I used @newmansown #sugarfree sauce and added bison, garlic, organic Italian seasoning, and portobello mushrooms as well as some chopped organic flat leaf parsley, cook with 1 tbsp of @chosenfoods Avocado oil in medium low heat. Cook on low stirring once or twice for 30-45 min. Serve over greens or some GF noodles. #nourishwithwholefoods #dindin
