Fried D'Artagnan Coturnix quail and waffles topped with a foie gras and mustard seed infused maple syrup by Chef Leon Biscoe. 📷: @
Quail is not as mild and white as chicken meat, but not as dark and musky as, say, squab. The meat is reddish with a delicate texture, and is quite lean. We think of quail as game bird 101. Our Coturnix breed quail are the next best thing to wild, raised free-range in spacious, open barns. Coturnix breed quail offer a richer flavor and higher moisture content than the more common Bobwhite breed.
