Biscuits? Scones? Scones made from biscuit scraps? If you picked the last option; you’re correct! But it doesn’t matter what you call them, because these people bad boys are damn delicious!
Buttermilk Chive, Scallion, and Black Pepper Sciscuits. They’re perfect for all your favorite fall and winter soups, stews, and braises.
Chive and Cracked Pepper Sciscuits
2 C AP Flour
1/3 Tsp Baking Soda
1 Tbsp Baking Powder
1/2 C Minced Chives
1/4 C Scallion Greens
1/3 Tsp Salt
1/2 C Butter, cubed and frozen
1 C Buttermilk
1 Tbsp Freshly Cracked Black Pepper •
Preheat an oven to 375 degrees.
Dump all dry ingredients into the bowl of a food processor, along with frozen butter. Pulse until the mixture has the texture of wet sand, about 10 pulses.
Dump mixture into a mixing bowl, and slowly incorporate the buttermilk until a wet, but not too sticky dough, form.
Flour a work surface, and turn out the dough. Knead until no longer tacky, about 5 minutes.
Form the dough into a rectangle, and roll out to 1” thick.
Fold the dough in thirds, roll out again, and then fold again. Roll out one last time, then cut into thirds.
Shape each third into a disc, and cut into thirds, totaling 9 triangles.
Brush the tops with egg wash, and sprinkle with black pepper.
Bake for 15 minutes, or until golden brown. •
