It's "Fit Friday"! A culture of eating alive, living foods is necessary for the strength and stamina to workout and to maximize the benefits of exercise. I made this yesterday evening using some of the vegetables l purchased during my long walk. I am thinking of everyone who is bored and finding it difficult to seamlessly incorporate a vast variety of wholefoods. I hope this inspires you. Here l have candy cane baby beets. They are a heirloom variety, and are not only stunning, but mild tasting and sweeter than the big red beets, which l also love, and used here. I sliced them paper thin and sprinkled some Sel de Guerande. l touched them with some extra virgin olive oil and baked them for a few minutes. They were served amidst mixed greens, Dodoni P.D.O Feta (Authentic Greek Cheese), and very lightly toasted and chopped pistachios, pecans, and walnuts. On the 3rd picture, you would notice red fine droplets of the Orange Honey Dressing l used. It's red because l allowed the baked beets sit in the dressing for a while before making the salad. The salad was finally finished with a touch of La Tourangelle Pistachio Oil. Not only is this salad terrifically great tasting and highly nutritious, it is visually stunning and altogether mesmerizing. Go for it. Au Sante! No Bake Paleo Vegan Chocolate Hazelnut Cookies by @thebigmansworld Headover to her page for loads of deliciously healthy recipes! #recipe 👇 ➕➕INGREDIENTS 3/4 cup coconut flour 2 cups chocolate hazelnut spread of choice 1/2 cup sticky sweetener of choice 1 cup crushed hazelnuts 1 tbsp liquid of choice . ⏩⏩Instructions Line a large plate with parchment paper and set aside. In a large mixing bowl, add all your ingredients and mix very well, until a dough is formed. If the batter is too thick, add liquid of choice. If the batter is too thin, add a little extra liquid of choice. In a small mixing bowl, add your crushed hazelnuts. Using your hands, roll the dough into small balls. Roll each ball into the crushed hazelnuts before placing on the lined plate. Press each ball into a cookie shape and refrigerate until firm. #Repost @anna__middleton ・・・ Today's super quick summer salad.... Kelp noodles and carrots with a Thai style coconut peanut sauce. If you've never used kelp noodles, they're De-lish. Great way to add seaweed to diet. Low carb, very filling. Best place to get them is @wearerawliving - best prices you'll find (and great customer service obvs 😍) . Open a bag of kelp noodles and rinse. Place in bowl of warm water and add a tsp of salt to soften noodles slightly. Leave for 20-30 mins then strain water. Or if you don't mind them crunchy, no need to soak at all, just rinse well.. Marinating noodles will also soften them. . Add veg of choice. Green beans, sweetcorn and tomatoes all work well but today I only had 🥕 carrots in my fridge so that's what I used! Grated carrots and added them to bowl of noodles then used left over bits of carrot in sauce. . Make a sauce. Add ingredients to nutri bullet or blender if choice and blitz. I'm a lover of Thai curry pastes. Easy peasy lemon squeezey - 1 tsp for maximum flavour. Today I used a mix of tom yum and red curry. Add a good slug of coconut oil, a dash of tamari, a squeeze of lemon or lime. I keep kaffir lime leaves in the freezer so also added 1 of those. Bit of ginger, left over bits of carrot after grating, add 🌶 if you like a kick. Then a spoon of nut or seed butter (today was cheeky, added peanut butter... but go for something healthier or alternative nut butter if you prefer). If you have it, a tsp of lecithin for creaminess and to boost our brain cells then blitz blitz blitz. . Mix sauce over carrots and noodles then ready to munch. Variations - mix some salad leaves or fermented veg through. Or if you fancy it warm, either add a little warm water to sauce or steam some veg and mix them through noodles.

Raw Strawberry Tartlet by @thelittleblogofvegan Headover to her page for loads of deliciously healthy recipes! #recipe 👇 ➕➕INGREDIENTS Base 140g hazelnuts 40g of brazil nuts 1 tablespoon of coconut oil (Melted) 100g of dates . Cheesecake Layer 150g of cashew nuts (Soaked + drained) 80g of strawberries compote 1 can of coconut cream (Cream only) 1 tablespoon of coconut oil (Melted) 2 tablespoons of maple syrup . ⏩⏩Instruction Base Grease 4 tartlet tins with coconut oil or dairy-free butter. Place the hazelnuts, brazil nuts melted coconut oil and dates into a food processor/blender and whizz up until like breadcrumbs. Firmly press the mixture into the greased tins and place into the freezer. . Filling Place the soaked cashew nuts, strawberries, coconut cream, coconut oil and maple syrup into a food processor/blender and whizz up on high until smooth. This will take around 5 minutes. Pour into the base mixture and level. Pop back into the fridge to set. This will take around 1 hour. I decorated my tartlets with strawberries, freeze-dried strawberries, flaked almonds, vegan cream and my homemade strawberry macarons (Get my recipe here). To serve, fully defrost. Slice and enjoy! Store in a sealed container in the fridge. Never thought that eating raw foods could be so satisfying. I started eating raw foods years ago, loved it and it got me curious to learn more. At present, a huge part of my diet is raw. I have days I go completely raw. Not intentionally, because I have to. It just feels good and right. Talking about this, reminds me of a documentary I saw years ago. It was about a mother who raised her child on a raw food diet. Many people found it extreme. Some even called it child abuse. Funny thing is, many people don’t find it abusive when “treating” children to the Mac Donalds 5x a week. It’s not my place to pass judgement on what’s “right” or “wrong”. But I do think we can all benefit from the goodness of living foods, regardless of what your food philosophy is. Tried out a new recipe tonight! 😍Hearts of Palm Vegan Fish Taco Bowl from "Vegan Bowl Attack." @veganyackattack I love that one main ingredient is the under appreciated cabbage, which adds a nice crunch. From start to finish, it took 45 minutes to prepare and took 30 minutes to bake the hearts of palm. To speed it up, I used my @blendtec to shred the veggies. Some of last nites dinner.... Stuffed portabello mushrooms (raw vegan) and salad with sprouted lentil hummus That is not all I ate, because that is clearly not enough for a 5 year old. I just want to make that a point. I eat for health not for "dieting". I don't ever calorie restrict. I don't ever deprive myself. I try my best to eat intuitively, but that's not always easy to do with toxicity in your life. When you have toxins in your body you crave the food the unhealthy bacteria and viruses thrive on. When you eat more unprocessed foods and more plantbased foods you starve those parasites. Stuffed mushrooms: food process walnuts, pine nuts, sunflower seeds, tomatos, leeks, italian seasons, sea salt (you could use any nut/seed combo you like) Stuff into 🍄 I dehydrated mine to keep all the nutrition, but you could bake at lowest setting just enough to warm. Now almonds & granola chunky this time. I definitely prefer fresh over frozen🍓🍃 I usually will buy fresh fruit (bananas\strawberries) etc and freeze myself when needed and use my frozen fruit the very next day!
