Eggs are fun to cook with plus they are healthy and yummy 😋 for this recipe: preheat the oven at 200C and prepare a baking tray with olive oil throwing in the asparagus and cherry tomatoes, season with garlic powder, salt, oregano and pepper. Cook in the oven for 10 min before adding the eggs as they need a longer time to cook. Bring out the tray and crack the eggs into it seasoning it with salt and Parmesan cheese. Cook for another 10 minuets or until your eggs are cooked to your liking. Garnish with pepper and fresh parsley. Serve with a side of baked potatoes or brown bread. Tonight for dinner with the @jshealth girls, we had chicken teriyaki. I served mine with brown rice and a mix of curried kale, spinach, asparagus, spring onions and almonds. Yum!!!!!!!! TERIYAKI SAUCE Whisk 1/4 cup tamari, 2 tsp sesame oil, 2 tsp stevia powder, 1 tsp ginger, 1 tbsp Dijon, salt and pepper. TERIYAKI CHICKEN Marinade chicken in sauce for 30mins. Drain from marinade and then pan fry in 1 tbsp coconut oil or extra virgin olive oil. You can either use breast (like I have) or thigh. I suggest 2 breasts between 3 or 6 thighs between 3. CURRIED KALE Fry kale, spinach, asparagus, spring onions and almonds in coconut oil over medium heat. Add salt and 1 tbsp curry powder. Add 1/4 cup hot water and continue frying until cooked.

Desde hace ya bastante tiempo el Porridge es mi desayuno -casi- diario por muchos motivos: es muy saciante en pequeñas cantidades, está delicioso y además me permite comer algo variado y saludable de manera rápida (para mí es como una alternativa mejor a los cereales de desayuno que solía tomar siempre). Nunca me canso de él porque voy variando los toppings: a veces fruta, otras chocolate negro, otras frutos secos... Lo único que no me quito nunca es la Canela, ya lo sabéis 😜. Prepararlo es fácil: cuezo la avena con un poco de leche vegetal (de avena también) y listo. Aunque sí queréis una receta paso a paso, en el blog la tenéis!

Maybe it’s the cooler nights, maybe it’s the shorter days and less chance for exposure to sunny rays, (I’ve been craving mushrooms and they are rich in Vit D! 🍄) or maybe it’s the fact I’m totes jealous my sister is back in Japan enjoying all the amazing traditional ramen bowls I love 😫 Whatever the reason, all the above plus @maggie_beer’s Miso, Mushroom & Soba Noodles recipe, which is jam packed with traditional Japanese flavour made it well worth driving to three different grocers to get hold of 100% buckwheat soba noodles!! 🙌🏼 This could literally have come straight out of a ramen noodle restaurant ⛩I added some firm tofu for extra protein...and because that’s the way I like it! C xx ✌🏼🍏🍃 *Tip: try slow cooked umami broth vs regular stock for that extra hit of flavour to the soup broth!!

Mmm, this No Bake Gingersnap Pumpkin Pie sounds appetising! 😍 Recipe below 👇🏼 . . Ingredients: . For the Gingersnap Crust: • 10 ounces gingersnap cookies, crushed • 2 tablespoons brown sugar • 1 stick butter, melted . For the Pumpkin Pie Filling: . • 1 packet (2 ½ teaspoons) of unflavored gelatin • 1/4 cup water • 3 teaspoons pumpkin pie spice • 1 14-ounce can of condensed milk • 1 16-ounce can pumpkin puree (not pumpkin pie filling) . For Serving: . • Whipped cream • Vanilla Ice Cream . . Directions: . 1) To a large bowl, add the cookie crumbs, sugar, and melted butter. Stir to combine. Press, firmly, into the bottom and sides of a greased 9” pie pan. Place in the refrigerator until firm and you’re ready to add the filling (at least an hour). . 2) To make the filling, combine the gelatin and water in a large pot set over medium heat. Stir until the gelatin is dissolved, about 1 minute. Add the spices, condensed milk, and pumpkin puree and continue cooking, stirring continuously, for about 5 more minutes. Remove from the heat and pour the filling into the prepared crust. Cover with plastic wrap and refrigerate for a minimum of 4 hours, but ideally overnight. . 3) Once the pie has chilled and the filling is set, slice and serve with whipped cream or vanilla ice cream.

To get you through hump day: ALL ABOUT OVERNIGHT OATS. You’ve got questions. I’m going to try and answer them. 🙌🏾🤓🧐. - I eat them cold, straight up out the fridge. But you can heat them up if you prefer. - Instant or rolled oats? If you’re going to eat them the next morning, either one works. Instant oats get softer, while rolled oats hold their texture. You can keep them in the fridge for about a week. - So, yes, overnight oats are a great meal prep addition if you’re into that! - Adding nut butter. Do you need it? No. Why do I like it? Cause, nut butter, duh. And also... protein and extra creamy fluffy oats. - Ground flax seeds. What’s up with that!? Well first off, have you heard of a flax egg? It’s a vegan replacement for an egg in baking, and it’s just ground flax seeds with water. Aka, it adds fluffiness like an egg. So, fluffy goals? check. Also, it’s omega 3 and fiber rich, so I’m all over it. And, bonus, it enhances the nutty oaty flavor I go for. - Any rules? None. But why not: Be playful. Try chia seeds instead of flax. Try different nut butters. Add jam instead of honey. Top your oats off. Drizzle things over it. Get fruits involved. Granola, maybe. Go nuts 🥜 🤣 • INGREDIENTS 1 serving oatmeal unsweetened (I use @traderjoes instant oatmeal or rolled oats) 1 tbsp peanut butter 1 tsp vanilla extract 1 tbsp honey Unsweetened vanilla almond milk 1 tbsp ground flax seeds DIRECTIONS Mix all the ingredients together in a mason jar, with enough almond milk to get things floating. Mash out the PB clumps! Leave in the fridge overnight. You may want to add almond milk if it got too hard over night- and adjust any peanut butter or honey as desired!!! Enjoy!!!!!

GALLETAS INTEGRALES DE AVENA Y COCO 🌴 . . Para 15 unidades: -1 plátano pequeño -1 huevo (🌱veganos: reemplazar por otro plátano o por huevo de linaza mezclando 1 cda de harina de linaza por 3 cdas de agua hasta que queda una mezcla chiclosa) -1/2 taza de harina de avena integral -1/2 taza de avena tradicional -1/2 taza de coco rallado -Stevia (yo les puse 15 gotitas) -Canela (opcional) . . Es tan fácil como moler el plátano, mezclar bien todo, formar las galletitas con las manos y llevar al horno a 180°C por 20 min 🤤♥️ . Chia Seed Pudding 👯‍♀️ 1 cup almond/normal milk 1/3 cup chia seeds 1/2 tsp. vanilla extract 1 tsp. cinnamon 4 dates barriers or fruits for decoration 1. Combine the chia seeds and almond milk in a bowl and stir well. Wash and finally chop the dates. 2. Add the vanilla extract, cinnamon and chopped dates to the mixture and stir well. 3. Leave the mixture in the fridge overnight. Mix it again in the morning and eat. If you cook this breakfast in the morning, you can use warm milk instead of cold and let sit for 20 min before eating. If desired, decorate the pudding with fresh berries or fruits.

Palak Paneer Recipe... for the palak puree: 200 to 250 grams fresh spinach (palak) OR about 7 to 9 oz spinach 1 or 2 green chilies - chopped (hari mirch) 1 or 2 small to medium garlic cloves (lahsun) - roughly chopped (optional) ½ inch ginger - roughly chopped 3 cups water for blanching spinach 3 cups water for ice bath for palak paneer curry: 1 small to medium sized onion - finely chopped OR about ⅓ cup finely chopped onion 1 small or medium sized tomato - chopped OR about ⅓ cup finely chopped tomatoes 4 to 5 small to medium garlic cloves (lahsun) - finely chopped ½ teaspoon cumin seeds (jeera) ¼ teaspoon turmeric powder (haldi) ½ teaspoon red chili powder (lal mirch powder) - optional a pinch of asafoetida (hing) - optional ¼ or ½ teaspoon garam masala powder - add more if required 1 small to medium tej patta (indian bay leaf) 200 to 250 grams paneer or tofu OR about 7 to 9 oz paneer (cottage cheese) ⅓ to ½ cup water or add as required 1 or 2 tablespoon cream - low fat 25% to 35% (i used amul cream) 2 tablespoon oil or ghee or unsalted butter 1 teaspoon kasuri methi leaves (dry fenugreek leaves) - optional. kasuri methi is crushed and added right towards the end. just before adding cream. salt as required. #recipes #palakpaneer #yum #yummy #paneer #foodblogger #foodies #foodporn #foodstagram #foodaholic #follow #like4like
