Almost didn't make it till dinner today as got super hungry out and about at a bridal shower (with nothing around for me to snack on). Lesson learned don't wait till hunger has already set in, way harder to make it through making a great meal that way! But hubby helped me cook and I snagged an apple and we made it to this absolutely delicious meal of Grass Fed New York Strip Steak with mashed potatoes, a little gravy and some arugula salad. Really easy 5 minute Gravy:
- 2 Tbsp fat skimmed off bone broth
- 1 shallot - 1 Tbsp fresh thyme chopped - 1.5 Tbsp cassava flour
- 1.5 cups of bone broth
Cooks onions in fat till slightly brown, whisk in flour, add thyme, and slowly whisk in bone broth. Let simmer for a few minutes to thicken.
