Baklawa Rolls: A wholesome spin on the traditional dessert, rendered both allergen + kid friendly. Homemade Baklawa: Renders 16 small rolls. Ingredients: Dough: 4 coconut wraps Filling: 2/3 cup tigernut flour 10 tbs Nutiva shortening, melted + 1 more for dough brushing 3 tbs maple syrup + 1 tbs for garnish 12 tbs water 1 tsp cinnamon powder Directions: In a bowl, mix filling ingredients & set aside. Lay out your coconut wrap sheets & brush each with some unmelted Nutiva shortening - or simply dab with your hand. Then fill one row of each sheet with a generous amount of the filling. Gently roll each wrap with your hand. Next, divide each of the long rolls into 4 equal small rolls using a knife. Preheat oven to 150 degrees Celcius. Bake rolls for 8 to 10 min. Sprinkle the cooled rolls with 1 tbs maple syrup. #baklawa

Eloise got some breakfast-for-lunch in her bento box today. A baked oat cup (recipe on the blog!) with chopped figs and cinnamon, cottage cheese, hard-boiled egg, dried unsweetened pineapple and coconut chips, and kiwi with pomegranate. A little more fruit than usual, but with the #nutfree and #seedfree restrictions it was hard to come up with something else breakfast-related that I had ready to go. DAY 30/30 AUTOIMMUNE PROTOCOL BREAKFAST Smoked Salmon • Broccolini • Spinach • Avocado Birthday breakfast and still AIP. It’s day 30 of my 30 day challenge and upon reflection I’m happy to say I got everything I wanted and more out of it. My reason for doing it was to reduce as much inflammation in my body before my breast explant surgery coming up this Friday and it really did help. I lost just shy of 2kg which I believe was all inflammation because my body won’t release fat while these implants are in because it’s protecting my organs. But on top of that I definitely had improved quality of life. Don’t get me wrong my energy still burns out really quickly but I felt less like death and had more “better” days. I am going to enjoy my birthday today with a stevia pavlova and some other Keto treats. I made nut free trail mix for the kids. My youngest is starting at school later this week and we still don’t know whether he is in a nut free classroom, so we just made sure everything would be nut free for at least this week. mmmMMMmmm what a meal to start 2018 😍🎉🎆🎊🤗 Some incredibly tasty #Instantpot potato soup (featuring bacon, kale and beef) with a side of bombbbbb biscuits and a delicious fruit/veg spread to top it all off (shout-out to Vardit!!). The soup goes something like this: . . .6 slices of bacon, chopped .1 diced onion .4 minced cloves of garlic .1 lb ground beef .2 tsp Italian seasoning .6 peeled and diced yellow potatoes (sub white sweet potatoes for AIP) .1 bag of chopped kale .1 cup of coconut cream (I used what came in the top of the a Trader Joe's can and reserved the milk for the biscuits) .6 cups bone broth .1 tsp salt .1 tsp black pepper (omit for AIP) . . .Sauté the bacon in the instantpot. Cook until crispy and then set aside, leaving the fat in the pot. Add the onion to the bacon fat and cook sauté for 5 minutes or until translucent. Add the minced garlic for 3 minutes or until fragrant. Add in the ground beef, and season with Italian seasoning (add salt to taste) and sauté until cooked through. Turn the instant pot off sauté and pour in the chicken bone broth, coconut cream or milk, salt, pepper and diced potato. Stir to combine. Lock the lid onto the instant pot and set to 13 minutes on manual (high pressure). After the soup is done, allow the pressure to release naturally. Remove the lid and add in the kale. Salted Caramel Bonbons: Creamy + chestnutty + festive little bites that are both kid- & allergen-friendly. Salted Caramel Bonbons: Renders 18-20 Ingredients: 3/4 cup preboiled/roasted chestnuts 3 tbs tigernut flour 2 1/2 tbs maple syrup 5 tbs water 1/3 tsp pure vanilla powder Sea salt crystals Directions: Puree chestnuts in food processor, then add remaining ingredients, leaving out the salt. Once soft, transfer mixture to glass baking dish lined with parchment paper. Cut into desired shapes with knife, molds, cookie cutters... Sprinkle each with sea salt crystals then refrigerate. I had the sweet potato last night and my smoothie this morning which had over 20 Net Carbs and today when I tested my ketones they came in at 1.2 😱😱😱 I can also report that I had a lot more energy than usual today which is AMAZING. Digestion Boosters: Cooked celery and alfalfa sprouts on beds of Feel Better Crackers. Both celery + alfalfa sprouts are great sources of organic sodium. Digestion requires an ample supply of organic sodium, which balances stomach acidity. Without enough sodium for digestion, the body can start pulling sodium from other areas, which can cause a number of complications, led by fatigue + muscle and joint ache. 🐯🌰➕🎃♥️ I'm honestly surprised it took me this long to add tigernuts to my pumpkin gummies. Such an easy add and adds extra fiber to my already high protein "treat". They eat and feel like a treat, but are nutrient dense and anti-inflammatory 👌 Probably why I make them every week without fail. I often change the ratio of pumpkin to coconut milk based on what else I'm making at the time (so I don't have to open more than one can 😁) so make it your own! And, this is my best guess for spice amounts, since I never measure and just eyeball it now. The base of this recipe is as follows: . . . .1 can coconut milk (trader Joe's is my favorite) .1-2 TBS cinnamon .1 TBS cloves .1 tsp ginger .1 tsp sea salt .1/3c honey or maple syrup .1 can of pumpkin puree .3 scoops of collagen .3 scoops of gelatin (more for a harder gummy, less for a gooier one) .1/4c tigernut flour (optional) . . .Place parchment paper over an 8x8 pyrex pan. Pour the coconut milk in a large pan at med-low temperature (go to low if it ever looks to be about to boil or smoking). Let it reach a liquid consistency and then add the spices. After whisking for a couple minutes, add the honey or maple syrup. After another minute of whisking, add the can of pumpkin and whisk until an even consistency is reached. Add the scoops of collagen in while still whisking to make sure it doesn't get clumpy. Then, add the gelatin the same way, so as not to get clumps. You will inevitably have a few on your first go around, but they still taste just fine 👌 Pour the mixture into the parchment-lined pan and sprinkle the Tigernut flour on top. Also what you do when it snows....right? AIP banana blueberry pancakes 😍💕 I've tweaked my past recipe to add some protein and make them a bit less dense with more coconut milk. The newly updated recipe uses the following for 3 servings (8-9pancakes): . . .1 banana .1/2c cassava flour .1/4c tigernut flour .2 scoops collagen .3/4c coconut milk .1/2 tsp baking soda .1/2 tsp of sea salt .1 tsp cinnamon .1/2 TBS of ACV .coconut oil for cooking .frozen blueberries (optional) . . .Heat your cooking oil on low in a wide skillet or griddle while you prepare the pancakes. Mash the banana in a medium bowl. Add the flours and collagen and mix. Add the coconut milk and continue to mix until your desired pancake batter (smooth but not runny). Bring your heat to medium low(ish) and stir in the rest of the ingredients. Place about 2-3 TBS worth of batter onto your cooking surface for each pancake. Flip after 3-4min. I think I may have made these chocolate chip cookies about 5 times since @grazedandenthused posted her recipe. It has never disappointed!!! My dairy-free version of the recipe is as follows: . . .1c tigernut flour .2 TBS cassava flour .2 TBS gelatin .1 tsp baking soda .1/4 tsp sea salt (I make it a heaping 1/4 tsp) .1/4 cup softened coconut oil .1/4 cup olive oil .1/4 cup maple syrup .1 tsp vanilla extract (alcohol free for #eliminationstageAIP) .1/2 cup enjoy life chocolate morsels (cacao re-intro, but these can easily be replaced by carob chips, or dried fruit to make them #totesaip) . . .Preheat oven to 350 degrees. Line a light-colored cookie sheet with parchment paper. In a medium bowl, whisk together the dry ingredients. Stir in the coconut oil, olive oil, maple syrup, and vanilla extract until you achieve a smooth dough, then add the chocolate chips.  Make 12-16 balls with the dough and evenly space them out on the parchment-lined pan. Then, gently flatten the cookie with the palm of your hand. Bake in preheated oven for 8 -10 minutes, watching closely, until the edges are a light golden brown. 😊 Probably will be making them again this weekend since because that's what you do when it snows, right??? . .Also, SO excited for @grazedandenthused's ebook that she's been working on.
