This is my version of oatmeal. I mixed roasted delicata squash with avocado oil, cinnamon, a little date paste (if your squash is sweet enough, you don’t need this) and a pinch of sea salt. Then I topped it with homemade tigernut milk, fresh blueberries, and crunchy sweet potato rice (this replaced the macadamia nuts I usually put on this). It was soooo yummy! So happy I finally have a #nutfree and #seedfree version of this. In fact it was totally #aip 😃
To roast the squash, cut the squash lengthwise and scoop out the seeds. Place cut side down on a parchment lined baking sheet and roast for 25-35 min at 400 F. Scoop out the flesh into a small saucepan and mix in the cinnamon, oil, salt and date paste on low heat, adjusting amounts to desired taste.
I made the crunchy sweet potato rice by thawing a bag of frozen SP rice, laying it in a flat layer on a parchment lined baking sheet and dry roasting for 15-20 at 350 F. Then I sauté the rice in EVO with a pinch of salt in a non-stick skillet on low heat till golden and as crunchy as you like it. If it doesn’t get crunchy enough or you don’t want to stand at the stove, you can put the rice back into the oven once golden and roast at 200 F until it reaches your desired texture.
