VEGAN CARROT CAKE MUFFINS🥕🥕🥕 ⠀ ⠀ The perfect way to sneak veggies into young-ins or fussy old-ins diet. It's uncommon for most of us to eat veggies as our snacks. We tend to be OK with main meals, but when I hear people struggling to get their 5 serves in, it's often because they're not including veggies in their snacks! 😏⠀ ⠀ Carrot cake is one of my favourites ever so i'd been wanting to healthify it for a while - which resulted in these mini carrot cake muffins! Just saying you should definitely pop these on your weekend baking list (or your late night middle of the week baking list ya know😜) ⠀ ⠀ They're vegan and refined sugar free too and are full of the warming spicy flavour of a good carrot cake😋 ⠀ ⠀ THANK YOU to the lovely Jasmin from @thislifeasjasmin for this super simple delicious recipe. Remember raisins were recently declared low FODMAP in serving sizes up to 30g (3 tbsp). Limit your intake of these to 2 mini muffins to remain low FODMAP! 💜 www.thefodmapfriendlyvegan.com for more on FODMAP load!⠀ ⠀ INGREDIENTS (MAKES 12 MINI MUFFINS)👇⠀ 3/4 C + 1 tbsp oat flour (ground oats)⠀ 3 tbsp flax meal or almond meal⠀ 1/2 tsp cinnamon ⠀ 1/4 tsp salt⠀ 1/4 tsp nutmeg⠀ 1 tsp baking powder⠀ 1 flax egg (1 tbsp ground flaxseed and 3 tbsp water)⠀ 1/4 cup + 1 tsp pure maple syrup⠀ 1.5 tbsp peanut butter⠀ 1 tbsp plant milk⠀ 1/2 tbsp vanilla⠀ 1/4 tsp apple cider vinegar⠀ 1 large carrot, grated⠀ 3-4 tbsp raisins ⠀ ⠀ METHOD 👇⠀ Preheat your oven to 180C and grease a muffin tin. Prepare your flax egg and sit aside. Add all of your dry ingredients into a bowl and mix to combine. Add in your flax egg, peanut butter, maple syrup, milk, vanilla and apple cider vinegar and mix. Fold in your grated carrot and raisins. Spoon mixture into greased muffin tins about 3/4 full and sprinkle with cinnamon. Bake for 16-18 minutes then allow to cool! ⠀ ⠀ Enjoy! 😘😘😘⠀ ⠀

Happy Monday! Start the week off right with these snacks 😋 Protein fat bombs! 2tbs coconut oil 4tbs peanut butter 1 Scoop vanilla protein powder 1tsp cinnamon 2 tbsp coconut flour 1tsp honey 1 heaped tsp Maca powder Sprinkle of salt Mix all ingredients together in a bowl and then pour into mini muffin holes or make it a slice and pour into a slice tin. !!UPDATE!! First of all this was suchhhhhh a #recoverywin!! I haven't eaten normal ice cream for a year now and somehow I managed despite having the shittest of days.. well not quite but still it wasn't the most fun one!! So proud!! - So today I went to the dss (which I totally hate because tbh I'm so scared hahhah) to ask about the weight gain that noone can explain. Bc each time I go on long distance flights, I weigh about 3-5 kg more the next morning and, within the following week, it always disappears again. Well, on my trrip home from australia a few weeks ago I got an infection which is why it might have taken longer. Also I started trying to eat normal again so maybe my bodystarted the 'storage mode' as in storing up all it can for the next hunger period and maybe made me gain 1-2 kg - but 4???? At least it doesn't put me to nw.. So I had an EKG today to check it's not my heart giving up it's job and it isn't. Actually the results were much better than they usually are but I can't rly be happy about that considering it might mean I simply got fat over night somehow. Because despite having lost a little bit I have kept the weight I had when we arrived here, hoping it might sort itself out somehow. Anyway, my doc seemed a bit concerned as there is no 'simple' explanation and will have my bloods, lungs and heart tested another time in two weeks. So wish me luck that they can find the reason for this chaos!! A few years ago, when I’ve started to take care of my body through my eating, one of the things I found to be very difficult was what to eat in between meals or in those times when you just need a boost of energy. If in these moments you don’t have a healthy snack prepared, the chances of eating something not so good increase. So, nowadays, my pantry and fridge are never out of snacks, and where are the ones for this week: - Whole Spelt Bread with oats and seeds (I cut in slices and put them in the freezer. When you want some, just need to take out the amount you need and put it in a toaster) - Energy Balls - Cashew Butter - Granola Dust (I did a big jar of this but this small jar looks better in the picture #whonever?) Chai Spiced Cookies 🍪🍪🍪⠀ ⠀ While chai tea is considered high-FODMAP when brewed strongly, this DOES NOT MEAN you should avoid chai spices. It's the black tea that is high in oligosaccharides, not the gut-healing spices which include cardamon, cinnamon, vanilla, nutmeg etc. 🙅⠀ ⠀ These delicious, super simple cute cookies made by the lovely ladies @panaceas_pantry (my two foodie role models / long-term Instagram buddies) let us low FODMAPpers allow that delish chai flavour we love in guilt-free, crunchy goodness! 👅👅👅⠀ ⠀ Check out www.thefodmapfriendlyvegan.com for more on low/high FOMDAP foods + heaps of resources 😘😘⠀ ⠀ RECIPE BELOW 👇⠀ Makes 12 👇⠀ ⠀ 1 cup (90g) almond meal⠀ 1 cup (125g) all purpose gluten free flour⠀ 1 ½ tbsp chai spice powder ⠀ ½ cup rice malt syrup⠀ 1 tsp pure vanilla extract⠀ ½ cup hulled tahini⠀ 1 Tbsp chia egg⠀ 1 tbsp nut milk of choice ⠀ ⠀ To decorate (Optional); 50 g Vegan chocolate, melted⠀ ⠀ Method chia egg⠀ Mix 1 tbsp chia with 3 tbsp water, set aside 10 minutes until gel forms, (mix through)⠀ ⠀ Method 👇⠀ ⠀ 1. Preheat oven to 175 c and line baking tray with baking paper ⠀ 2. Sieve dry ingredients (flour, almond meal and chai spice) into large mixing bowl⠀ 3. Add the remaining ingredients into a separate bowl (including chia egg) and mix well.⠀ 4. Pour the wet ingredients into the dry bow, and mix to form cookie dough. ⠀ 5. Using wet hands, roll dough into balls (about 2 Tbsp each, or 60g). Place cookies on the lined ray, leaving a 5 cm gap between each cookie. Flatten cookies slightly with your hand, then transfer to the oven.⠀ 6. Bake for 12-15 minutes then turn off oven & leave cookies in the oven for a further 5 minutes to brown. Remove from oven and transfer to a wire rack to completely cool, or enjoy while nice and warm with a cup of tea * To make chai powder, simply add 1/2 cup T2 chai spice to a blender and blitz to forma powder. Store in an air-tight container for future uses.⠀ Enjoy! 😘

Nothing beats a piece of warm, toasted vegan banana bread slathered with rich melted chocolate and slices of nutty almonds 😍 Mash 3 ripe bananas, add in 1 tsp vanilla extract, 1 tsp cinnamon, 3 tbsp melted coconut oil, 100ml almond milk and 3 tbsp maple syrup and stir until combined. Then stir together 90g coconut sugar, 1 tsp baking powder, 60g ground almonds, 165g self raising wholemeal flour and 100g jumbo oats. Add the dry ingredients into the wet and stir through one flax egg (1tbsp ground flaxseed and 2 tbsp water left to sit for 5mins). This is one of my favourite recipes … it is so easy to make, and contains nothing but all natural ingredients. For those that say vegan food doesn’t satisfy … these cookies will keep you going for hours and contain no eggs, dairy, or refined sugar. 👌 #winning⠀⠀ ⠀⠀ Cacao nibs are cacao beans that have been roasted, separated from their husks, and broken into smaller pieces. They have a chocolatey taste, but they're not quite as sweet as chocolate, making them a more versatile recipe ingredient. Cacao beans are also bursting with nutrition, and are one of the best dietary sources of magnesium — a mineral needed for more than 300 biochemical reactions in our bodies, including important muscle and nerve functions that keep the heart rhythm steady. Cacao nibs are also a rich source of fibre, important for maintaining bowl regularity and digestive health. My blender is an essential tool in my kitchen as a way to create healthy blends for my babies. And it is one kitchen tool (I believe) each home needs. Fruit, veg, protein, fat, and superfoods/supplements go into the #smoothies that I create 💃🏼It is one of my mama-magician tricks in the kitchen and I find that it makes a great after-school-sipper for everyone. The possibilities are endless but I find the biggest challenge for some mama’s is just making sure there is some good fat and protein in them. Try to avoid an all fruit blend. Some of my go-to additions are avocado 🥑 (fresh or frozen - get this at Costco!), hemp hearts, chia seeds, nut butter, almonds and even a simple protein powder (I use #manitobaharvest and #geniunehealth). Focus on nutrient dense, mix up the ingredients all the time, add some greens, and at this time of the year I love to add in a quality probiotic + my fav @younglivingeocanada #NingXiaRed 🌿 Create, blend, repeat.
