I really wanted to get back into my food prep routine today, and I managed, but it took a looong evening, of which the first half was spent on fun unplanned experiments.
Experiment 1 was jaffa cakes, with underbaked vanilla cookies from @eat_heal_thrive for the cakey bottom, a jelly layer of organic orange juice + gelatin, all covered in 85% chocolate. They turned out pretty nice, and I used the last bit of chocolate to cover some jelly trimmings for another fun candy. Experiment 2 was #totesaip mojito cheesecake. I made a tigernut/coconut/tapioca flour crust and the filling was one courgette, half an avocado, juice and zest of two limes, a handful of mint, a good squeeze of honey, and 100g coconut butter. It's not setting as solidly as I'd hoped but that is easily remedied next time. Also obviously if you swap the honey this is a #vegancheesecake.
All the sweet stuff I prepped is on the left, including mango slices, and the next row is all animal stuff. From top to bottom: fishcakes with salmon and broccoli, boiled eggs, beef patties, turkey pieces. And then there's veggies: broccoli, carrot salad with green herbs, green beans, beets, pak choi, yellow and green courgettes, sweet potatoes, samphire, and fennel.
