❤️Healthy Herby Salad is bursting with flavour and is a perfect choice for a summer BBQ.
35g Coriander leaves
40g Flat leaf parsley leaves
20g Dill leaves leaves
35g Tarragon leaves
40g Rocket leaves
50g grass fed butter
150g whole almonds
1/2 tsp Himalayan salt
1/2 tsp Black Pepper
2 tbsp lemon juice plus a couple of slices to garnish
1 tbsp extra virgin olive oil
Gently wash all the salad leaves taking care not to bruise them, dry in a salad spinner or by spreading on a clean kitchen cloth. (Once dry will keep in a sealed container in the fridge for with a few layers of kitchen paper for up to 2 days)
Heat butter on a LOW heat in a frying pan and add the almonds Himalayan salt and black pepper to the pan, sauté for 5-6 minutes until almonds are golden. Transfer to a colander and drain making sure you keep the melted butter, leave it somewhere warm so it doesn't set. Once the almonds are cool enough chop with a large knife or if you prefer leave them whole.
