Made these delicious flapjacks for a family meal yesterday and thankfully have some leftover for me to enjoy all week! For once I actually measured the ingredients (ish!) Here’s the recipe:
Gooey Date Flapjacks
2 – 3 Cups Oats
Handful of Mixed Seeds/Chia Seeds
¼ Cup Agave
¼ Cup Coconut Oil
Cinnamon to taste
1-2 Cups Dates
Soak Dates in boiling water and set aside.
Melt Agave, Coconut Oil and Cinnamon together and pour over Oats and Seeds and mix well until everything is coated.
Take 2/3 of the mixture and put in a lined baking tin and press down so it’s packed tightly. Bake at 180 degrees for 10 mins.
Drain dates and blend until smooth and gooey.
Once out of the oven, spread the date mix on top of the flapjack and top with the remaining oat mixture and press down.
Bake for another 15 minutes or until golden! *baking the base first helps the whole thing stay together, and you still get that flapjack crumble from the topping!
