Amazing smoking skills from @nishious Today we have got jerk chicken, rice and beans with a pineapple salsa and smoked garlic cloves 🙌🏻 Yum yummy yum! 😁
Serves 2 (plus a lunch and enough chicken for 2 more meals): Chicken: Jerk paste, 1 whole chicken. Cover with the paste and marinade over night and cook on the smoker for 5 hours. Rice and Beans: 1 pack of wholemeal rice, 1 can of black beans drained, 1 can of small sweetcorn drained, 1 red onion chopped, 2 tsp dried thyme, 1 tbsp dedicates coconut, 1/2 tbsp coconut oil, salt and pepper. Melt oil in a frying pan and cook off the onions for 5 mins. Add the beans, corn and thyme cook for 2 mins. Add the rice, coconut and a splash of water, cook for 3 mins and serve.
Pineapple salsa: 1/3 pineapple chopped small, 8 cherry toms chopped small, 1/4 cucumber chopped small, 1 red chilli chopped, 2 spring onions chopped, 1 tbsp fresh mint chopped, 1 tbsp chopped coriander, salt and pepper. Add all ingredients in a bowl and mix well.
