DAY 1 - Lunch 🥙: Butt-Kicking Taco Bowl
Here comes part two of my first day home cooking everything. This I also changed up a little bit. Instead of salsa from the shop I decided to make my own. 🍅 Next to that we have sprouts and organic hummus, plus kale. Now, kale... Sorry, but it simply tastes so horrible raw!! 😫 Eww. Raw kale in my taco bowl? Hell no, henny. So I blanched it for a few minutes, then drained it and seasoned it with a little white wine vinegar and salt. Much better!! Phew. 😅 Again I added a bit more spices as well as Dijon mustard to the beef mix but mostly stuck to the recipe. Big fan of the cumin 👌🏻 and quite proud of myself. 👊🏻 Yum! ✔️ Call me a wuss but also not the biggest fan of raw meat 🥩 in any shape or form. Making this took longer than I thought because reasons and I was thinking to myself how the hell I’m supposed to keep this up ✔️ Are sprouts supposed to taste like anything? Because I’m not getting much. Texture is nice though, conclusion: meh
✔️ Very happy with the mince once cooked. Also the kale was yummy once I figured out how to make it not taste like kale ✔️ Feel like I’ve ended up with a supersized version of the meal. But it’s all healthy right? So who cares! Ate it all up without feeling so bad in the end.
