DAY 6 - Dinner 🌮 : Chili (no Chicken) Quesadillas I know there was no post for Day 5 but a few dishes are repeating themselves so I had the granola for breakfast, Day 4’s Chili sin carne for lunch and made the lovely quinoa and aubergine bowl for dinner. Day 6 started with brunch with friends and lunch on the go (had a veggie burger with the tastiest cucumber relish and pickled 🥒. Heaven!) so for dinner it was the quesadillas. Since I wasn’t able to find summer squash here in the UK and it was already quite late for cooking and dissembling the butternut squash I had got instead, so I added green asparagus in the mix which ended up being quite nice actually! DAY 3 - Lunch 🥗: Grains ‘N’ Greens Nutty Salad starring baby spinach, quinoa, toasted pecans, cranberries, sliced #braeburn apples and feta (instead of cottage cheese). Yesterday I started struggling a bit, again not feeling too hungry to cook day two’s dinner: Rainbow Chicken Quesedillas. So I ended up just snacking an apple 🍏 and went to bed happy. This morning followed the second struggle: the carb-free eggy muffins. I decided no can do with all those huevos, so had day two’s granola instead. Really enjoyed the pecans, which completely make the salad! DAY 2 - Breakfast 🍌 : Nutty ‘Nana Bowl with blueberries, blackberries, lingonberries, açai powder and chia seeds as well as raw coco nibs. For the #granola mix I used coconut and almond oil. I also reduced the amount of honey 🍯 in the recipe because I thought it might be too sweet considering the grilled bananas. They could still be less sweet but pretty happy with the results. DAY 1 - Dinner 🥘: Keep-On-Track Quinoa with feta, grilled aubergine 🍆 and baby spinach. Almost wanted to skip dinner because I wasn’t too hungry after late lunch earlier today. The boyfriend was hungry though so I got up and made this quickly. Going to watch some 📺 #netflix now. This is going to be hard because I’d normally get a snack to munch while being comfy. Hmm 🤔 Fingers crossed! #overandout ✔️ Felt good about cooking everything and using fresh ingredients ✔️ Felt even better replacing some of the suggested processed components of the recipe with hand cooked versions ✔️ Had my breakfast a little bit too late so felt like snacking loads after eating it pretty quickly. Had some banana 🍌and peanut 🥜 butter snacks with almond yoghurt and didn’t feel like snacking at all for the rest of the day ✔️ Worried if I can keep the schedule when going back to work on Wednesday. Too many temptations and less time to focus on cooking everything. ✔️ Realised our fridge is too small to keep all the fresh food. Now considering buying a new one but also conscious this thing might not work out. DAY 1 - Lunch 🥙: Butt-Kicking Taco Bowl Here comes part two of my first day home cooking everything. This I also changed up a little bit. Instead of salsa from the shop I decided to make my own. 🍅 Next to that we have sprouts and organic hummus, plus kale. Now, kale... Sorry, but it simply tastes so horrible raw!! 😫 Eww. Raw kale in my taco bowl? Hell no, henny. So I blanched it for a few minutes, then drained it and seasoned it with a little white wine vinegar and salt. Much better!! Phew. 😅 Again I added a bit more spices as well as Dijon mustard to the beef mix but mostly stuck to the recipe. Big fan of the cumin 👌🏻 and quite proud of myself. 👊🏻 Yum! ✔️ Call me a wuss but also not the biggest fan of raw meat 🥩 in any shape or form. Making this took longer than I thought because reasons and I was thinking to myself how the hell I’m supposed to keep this up ✔️ Are sprouts supposed to taste like anything? Because I’m not getting much. Texture is nice though, conclusion: meh ✔️ Very happy with the mince once cooked. Also the kale was yummy once I figured out how to make it not taste like kale ✔️ Feel like I’ve ended up with a supersized version of the meal. But it’s all healthy right? So who cares! Today marks day one of my challenge to try to be a little healthier and kinder to myself and my body. I’ve never been a fan of meal planning and shopping, not to mention cooking ahead for a whole week, so I decided to push myself with this challenge. This is not sponsored, I’ve bought the @bodybossmethod guide spontaneously online and 10 days later it arrived. It includes a fitness as well as a superfood nutrition guide. For 12 weeks everything is planned out for you, from workouts, shopping lists to recipes and idea to make it easier for you to get going. So every now and then I’ll post the food I’m making to keep track. DAY 1 - Breakfast 🍳: Carb-Free Eggy Muffins I’ve made mine in these little rectangular trays because I couldn’t find a muffin tray for baking. The original recipe is adding ham but I skipped that and added a little bit of cheddar 🧀 instead. Not having bread with it was a bit of a challenge for me because I don’t love eggs but it was actually quite nice. I also added a little bit of onion, paprika and pepper to the mix to give it more flavour. So far so good. 😊 ✔️ I *hate* (raw) eggs 🥚 ✔️ Questioned whether I’ll be able to eat this every now and then going forward because I’m normally cheating myself by adding a slice of rye bread with my omelette or scrambled/fried eggs ✔️ Distracted eyes and nose with ketchup on top 🙈 Is this allowed? ok. so I fell off the wagon this weekend. Friday came as my ‘cheat day’ and I just couldn’t stop. now it’s Sunday and I feel about a stone heavier, i was meant to go to the gym twice and haven’t left my house once, and I’m just feeling a bit shit about myself. I know that this journey is full of ups and down but recently in a week I go 4 days which are up and the other 3 are down. Right now I am not the person I need to be to become successful.
