Made two variations of talapia for lunch today.. First, the classic masak lemak cili api talapia + eggplant, the other is pan fried talapia (my wee son favors it like that😉) .
Masak lemak cili api base :
2 cloves of garlic
1 inch of fresh tumeric (can substitute wt powder version)
6 pcs of birds eye chillies
4 pcs of shallots
Blend them, put it into a pot.
Put in a few kaffir leaves, 1 pc of lemongrass , add 3 cups of water and boil them all together.
Once boiled, add in a cup of coconut milk , keep stirring ,then once almost boiling, add fish and eggplant.
Add salt and 1-2 tspn of lime juice for taste. Let it cook for a bit and u r done 😁😊
