Without a doubt one of my proudest of 2018... .
The "where everything grows" 🍸 is all about respecting the incredible ingredients we're lucky enough to work with nowadays... 🌿🥕🍋 and the best way to do that is, in my opinion: To use every single bit of those ingredients whilst leaving zero ♻️. Luckily 🙏 you see the term popping up more and more lately, but what does it mean to you?
For me the most beautiful example I can think of is: the forest🌲🌳 where it goes from 🍂 in autumn to barren and ❄️ in winter to fresh and vibrant ☘️ in spring and brimming with life in summer🌻 and then back in endless repetition♻️. This , I made for Is all about this passing of seasons: ♥️ @ Ten.

🍋 Fresh lime juice (with the husks we make our lemonade's).
♦️ Beetroot and carrot balsamic shrub.
Now there are some things leftover, which goes a bit against the point to do that, so let's make them contribute💪🏼. With the eggyolk we make salted "earth", served with basil 🌿. The skins of carrot are dried and used as garnish and the skins of beetroot are infused in @ Whisky and sprayed over the top.
So... nothing is wasted, my mom will be proud👌🏼❤️. 📸: @ .
