Spicy salmon stir fry. Recipe: 1 salmon fillet per person 1tsp miso in 1 1/2 cups boiling water I onion diced Handful chopped green beans 1 carrot in small sticks Handful small broccoli florets 1tsp chilli flakes Fresh ginger peelings Method: Heat pan to medium heat. Cook salmon skin down for 3 minutes and turn and cook for 3 minutes. Remove from pan. Add all veggies with stock, chilli and fresh ginger peelings and cover with a lid. Reduce to a simmer for 6 minutes. Now peel skin off salmon, flake onto stir fry and cover for 3 minutes. Serve in bowls and enjoy... We all take loads of photos now but they stay in our phone or computer. I love looking at photos. These are my only ones from when I was 10-12 years old. We were always active kids, playing out, climbing trees, swimming as we grew up near the coast. My grandparents took me on holiday camping every year with cousins. I was always slim I suppose because we were active and fed proper dinners. My weight came from carb snacks and becoming a Mum who worked and “didn’t have time “. We have to find time. However I started the gym at 21 after my Nan died after 6 years ill health with heart attacks and strokes. She was only 72, not old. Diet was definitely the issue, saturated fats, dumplings, pies and friedfoods. I looked at these today and remember why I train, why I believe in good nutrition and how much I miss Nan and Grandad. Had a tough day yesterday shopping minimal for Xmas food. Traffic! So didn’t get to post these yesterday! These are my last “bare shots” proving I do what I ask clients to do. I’ve been balancing the right food with what exercise I’m allowed as still rehabbing hip operation. See consultant in January. I’m 2kg down. 2 inches off waist. I’ve gained muscle on leg now it’s working properly even though I have to say it’s been sore doing it. You can even see in yesterday’s photo I’ve lost fat off arms and getting muscle grooves back in. Most of all I have bum muscles back just with rehab exercises ! This will protect my back from injury. The last 2 years I’ve had so much pain. I still tried to exercise and hope it would improve. Now I’m exercising and challenging myself and loving it! You can do anything if you want it enough. I’m making changes to my approach to my business in 2018. So these are my last “bare shots”. We were at a very important fundraiser last night. An amazing rugby player Mr Doddie Weir many will know, has been diagnosed with a terrible illness but is striding out to make a difference for others. “We never know what cards life will give us” he said. So true. The food was perfect with a Scottish theme, there wasn’t anything I thought “oh I can’t eat that” . I made a decision to drive(people don’t heckle you to drink) and I ate everything including trifle for pudding. I’d rather eat nice food than drink. All these compromises add up to long term changes. A deeply personal post from me this morning. I help clients all the time with tags in their memory bank to foods. This photo is an example of how it works. Its about fighting back. To the outside world this is a happy photo. To me its the saddest. Why? because the tag with this in my memory is how life was at its lowest at this point. The days when you are really wondering how to go on. I was doing what many Mums do, painting on a smile and trying to convince Jay and everyone else I was ok. We were trying to keep everyone happy, we'd had a huge burden dumped on us that hubby was trying to work out what to do and my depression was about as bad as it got. I also had finally admitted in treatment what had happened to me as a child. Whats the point in this post? We all face things we never think we can overcome, we all have times that test us to the limit and there are days we think the world is against us. Being a parent made it harder to deal with but forced me to recover. I have blips but not much considering my diagnosis. We can find a way but we have to want it. This was my treat day little number yesterday after training. 1 slice of granary seeded bread which is the equivalent to half a baked potato in carbs. This proves that nutrition/ diet helps but will not cure weight gain alone. Progress so far on rest and strict recovery for almost 6 weeks now. I haven't been able to exercise for 8 weeks! It's driving me nuts!!! So good news no weight gain on my nutrition plan I did the week of operation. But muscle tone softening by the day and joints are suffering without exercise as body gets tighter. Pretty uncomfortable I have to say. Exercise manages my muscles contraction and release easing my pain from hypermobility. Shaping your body comes from the program you do on exercise and mines varied all the time to prevent repetitive strain and plateaus. And I can't wait to get back to shaping mine! Happy with no weight gain when I've literally spent most the 4 1/2 weeks sat down in chair resting and recovering. I trained mainly in muscle work weight training to get as much muscle on as possible to get a good metabolic rate. Recipe Alert! Sausage and bean casserole Ingredients 2 sausages per person (substitute 1 sausage for half a chicken breast if weight loss is your goal ) Small tin of kidney beans drained (or beans in tomato sauce drained for fussy eaters) 1 onion diced 1 pepper chopped 10 baby mushrooms 2 sticks of celery finely diced 1 Carrot chopped 1 cup of frozen peas (optional) 1 tin of tomatoes 3 cloves garlic crushed 1tsp paprika 1/2 tsp thyme 1/2 tsp oregano Method Grill or dry fry sausages until brown and set aside. Add all the ingredients to a large pan or a slow cooker pot. On hob simmer ingredients for up to 30 minutes and test vegetables with a knife to see if tender. Alternatively cook in slow cooker overnight on low or high for 4 hours. Cut each sausage into 4 pieces and add to mix for last part of the cooking. This stops them going soggy. Bingo wings! Most of us suffer them at some point. Women have a higher storage of fat here than men and although you can't spot reduce (sorry it's true), you can shape up and burn fat off all over. Give a little squeeze to the outside at the bottom and start with a set of 10-12 reps. Build up to 3 sets.
