LUNCH 1/4 Freezer Stash Roast Chicken • Okra . . You may call them lady fingers or okra but I grew up calling them Bumyas, which is the Turkish word for them. . . My family’s cultural background is Cypriot and although we are Greek Cypriot, Cypriot cuisine is heavily influenced by their closest neighbors in the Middle East. . . This is one of my favorite traditional Cypriot dishes and with the colder weather it’s the perfect comfort food. . . My Mum’s Tips When Cooking Bumyas . Toss the okra through a tablespoon of apple cider vinegar first so they don’t split when you cook them . . The easy way to make this dish. Preheat oven to 180c 1 can Tomatoes Drizzle with a good dose of Olive oil Salt & Pepper All together in a baking dish and cook until tender and the tomatoes and the onions have made a beautiful rich sauce. Top up with a bit of water as you’re cooking if needed. I added it twice for this cook . . BREAKFAST Ellenie’s Raspberry Kisses Noatmeal... again! . . I tweaked the recipe and added more coconut milk this time and I think I prefer the consistency . . 1 cup Unsweetened Coconut Milk 1/2 cup Raspberries 2 tbsp. Hemp hearts 2 tbsp. Almond flour 2 tbsp. Shredded unsweetened coconut 1 tbsp. Flaxseed meal @melrosehealth 1 tbsp. Chia seeds 1 tbsp. Pumpkin seeds 1 pinch Himalayan salt 1/2 tsp. Pure vanilla essence 1/2 tsp. Cinnamon . . Add all ingredients except for the vanilla essence into a small saucepan over a low heat and cook until thickened, stirring continuously (keep some seeds, coconut and berries back for garnish) Should take about 3 to 5 minutes. . Remove from heat and stir through vanilla essence. Serve warm 👌🏻🍃 . . You can also make this in the microwave. Add all the ingredients except for the vanilla essence and anything you want to use as your garnish to a large microwave safe bowl. Microwave for 1-minute, stir and microwave for an additional 1-minute or until thickened. Stir through vanilla essence, top with garnishes and enjoy warm! . . . BREAKFAST My Seeded Crackers • Homemade Onion & Chives Cashew Cheese • Cherry Tomatoes • Dill • Jalapeños . . . If you miss Crunch in your LCHF Keto life then you need try my Seeded Crackers... total game changer!!! . . Ellenie’s Seeded Crackers ELLENIE’S SEEDED CRACKERS 1⁄3 cup almond flour 1⁄3 cup sunflower seeds 1⁄3 cup pumpkin seeds 1⁄3 cup flax seed or linseed 1⁄3 cup sesame seeds 1 tablespoon psyllium powder 2 tablespoon Chia Seeds 1 teaspoon salt 1/4 tsp Fennel seeds (optional) 4 tablespoons melted coconut oil 1 cup boiling water . . . Instructions Preheat the oven to 150°C / 300°F. . . Mix all dry ingredients in a bowl. Add boiling water and oil. Mix together with a wooden spoon. Let sit for 5 mins so the Chia Seeds can swell . . . TIP: if you’re using solid coconut oil melt it in with the boiling water first . . Cut the dough in half and roll 1 half and then the other, thinly out between 2-pieces of baking paper / parchment paper and remove the top layer of parchment paper, pop them on a tray and put them in the oven . . . You can choose the cut them now into shape or crack them after they're cooked for a more rustic look . . . Bake on lower rack for about 30-45 minutes, check every 15-mins as Seeds can heat up really quickly and burn. For an additional 15-mins leave the oven door ajar and the oven on to let them dry out on the low heat . . . Turn off the oven and let them dry in the oven or on a baking wire rack . . . Break into pieces and store in a container in the fridge. I line mine with baking paper . . . LUNCH Makeover of last nights Japanese Style Coconut Cauliflower Rice with freezer stash shredded chicken which I flavored up with lime juice, Japanese Seasoning, Coriander, Chilli, Spring onion... OMG THIS WAS SO GOOD!!! . . . JAPANESE COCONUT CAULIFLOWER RICE 2 cups or 1/2 Cauliflower, riced 2 tbsp Sesame Oil 2 tbsp Apple Cider Vinegar 1/2 cup Coconut Milk 1 tbsp Black Sesame Seeds 2 tbsp Shredded Nori 1 tbsp Coconut Liquid Aminos 1 tbsp Ginger, diced 1 Garlic Clove, minced 1/2 Chilli, diced . . Cook cauliflower in sesame oil on a medium to high heat stirring constantly for 2 minutes. Stir through apple cider vinegar and then add collagen. . . Add coconut milk and stir constantly as it comes to the boil. It’s ready when all the milk has evaporated and you can see the bottom of the pan. . . Transfer to another dish. Fry off the garlic, ginger and chilli in some sesame oil. . . Stir through fried garlic, ginger, chilli and sesame seeds, coconut liquid aminos and shredded nori through the cauliflower rice. . . So I’m continuing to avoid tuna as per @medicalmedium recommendation so I’ve switched to wild Atlantic salmon and Im very happy with the switch. . . It’s convenient and in the research I did if it says it’s “wild Atlantic” Salmon and in a can, then it’s “wild Atlantic” Salmon. . . The @johnwestaustralianz one was $4 and the @woolworths_au one was $1.90 for the same size can... DINNER Freezer Stash Osso Bucco • Cauliflower Puree . . Ellenie's Osso Bucco 3-4 Veal Osso Bucco 1 Onion, sliced along the lines not rings 4 Garlic cloves, finely chopped 1 Chilli, chopped diagonally 1 tbsp. Tomato paste 2 tbsp. Meadow & Marrow Natural Bone Broth 1 1/2 cups Beef stock 1 1/2 cups Red Wine 400g can Diced tomato 2 Bay leaves Olive oil Add as much oil as you need to brown the Osso Bucco, season with salt and take out of the pan. Sauté onion, garlic and chilli to the same pan with a bit more oil if you need it for about 3-4 mins or until the onions are translucent and not brown. Stir through tomato paste and cook for another minute. Add tomatoes and stir through. Add stock and stir through. Add wine and stir through. Add Meadow and Marrow Bone Broth and stir through. Add bay leaves, stir and bring to the boil. Add Osso Bucco and to ensure all the meat is submerged in liquid add some extra water if needed. Any meat poking out will be tough and dry so turn it every 15 - 30 mins. Simmer for about an hour and a half minimum. COOKING HACKS: I made this one last night so I could leave it summer for 2 hours with the lid on so the stock wouldn't evaporate and then when I got home tonight I bought it back up to the boil then reduced to a simmer and allowed it to cook for another hour and a half which is all it needed for the Osso Bucco to be so tender it fell off the bone. When the meats cooked you may want to thicken up the sauce. I didn't need to do this but if you do just remove the meat and set aside under foil. Place the sauce on a medium heat and boil until the sauce is as thick as you like. DINNER Salmon Fillet • Cucumber Ribbon Salad with Fresh Dill, Spanish Onion, Capers, Chilli and Seeded Mustard Vinaigrette . . . So in my Health Coach Course we’re looking at when to eat and when to stop eating and I’ve realized I have a lot to learn. . . In this LCHF Keto world we talk about only eat when hungry and stop when full, although as I discovered last week when I tried my hand at fasting again it might not necessarily be the best thing for everyone and here’s why. . . If hunger was a scale of 1-10 and 2 is I’m just starting to think about food and 10 is I’m starving, is waiting till your starving the right thing to do? . . I learned last week that under fasting conditions waiting to hit 10 does not set me up for a day of satisfied, controlled eating. I use the word “controlled” because on those days I didn’t feel like I had control over my body and my body was controlling me & what I ate and I DO NOT LIKE THAT! . . So over the last few days I’ve eaten when I feel like I’m at a level 5 and it’s resulted in smaller serves of food across 3 meals, that are satisfying and I’m not over eating because I’m not starving to begin with. . . So I’m really starting to tune into my body to recognize what 2 feels like on the scale, and then 5 to create a new understanding of what hungry actually feels like in my body... not starving! . . BREAKFAST Ellenie’s Blueberry Crunch Noatmeal . . 1/2 cup Coconut Milk 1/4 cup Blueberries 2 tbsp. Hemp hearts 2 tbsp. Almond flour 2 tbsp. Shredded unsweetened coconut 1 tbsp. Flaxseed meal @melrosehealth 1 tbsp. Chia seeds 1 tbsp. Pumpkin seeds 1 pinch Himalayan salt 1/2 tsp. Pure vanilla essence 1/2 tsp. Cinnamon . . Add all ingredients except for the vanilla essence into a small saucepan over a low heat and cook until thickened, stirring continuously. Should take about 3 to 5 minutes. . . Remove from heat and stir through vanilla essence. Serve warm 👌🏻🍃 . . You can also make this in the microwave. Add all the ingredients except for the vanilla essence to a large microwave safe bowl. Microwave for 1-minute, stir and microwave for an additional 1-minute or until thickened. DINNER If I feel like something sweet at night I always just switch my dinner out for dessert, rather than eating dinner + dessert and feeling overfed! . . I’ve put eggs on low rotation and being lactose intolerant dairy is on an absolute minimum. So when I’m going to eat it has to be good and this is so good!!! 👌🏻🍃 . . . CINNAMON CHOCOLATE LAVA CAKE 20g 90% Lindt dark chocolate 20g Butter 1/4 tsp. Vanilla essence 1/4 tsp. Ground cinnamon 1 Egg Extra butter to grease ramekin . . PREHEAT OVEN ON 200c GREASE RAMEKIN . . Chop chocolate and butter into smaller pieces and melt over a double boil. Make sure the water doesn’t touch the bottom of the bowl. . . Stir through vanilla essence and cinnamon, take bowl off the water bath and set aside to cool slightly. I like to use a glass measuring jug because it’s easier to handle. . . Crack egg into a bowl and beat for about 2-3 minutes until it’s become nice and fluffy . . Pour chocolate into egg batter and stir through with a fork or wooden spoon until the batter is even in color and smooth . . Pour batter into ramekin, pop them straight in the oven and drop the temperature to 175c and cook for 5 minutes. . . Always better to pull them out a bit under rather than over because they’ll continue to cook in the ramekin and you want them light and fluffy, with a gooey center . . I don’t buy processed meats because I like to keep them to a minimum but Mum’s in town and she bought some so I’m eating them!!! . . Ham tastes good... Hot salami tastes good! 🤤 . . Ellenie’s Seeded Crackers ELLENIE’S SEEDED CRACKERS 1⁄3 cup almond flour 1⁄3 cup sunflower seeds 1⁄3 cup pumpkin seeds 1⁄3 cup flax seed or linseed 1⁄3 cup sesame seeds 1 tablespoon psyllium powder 2 tablespoon Chia Seeds 1 teaspoon salt 1/4 tsp Fennel seeds (optional) 4 tablespoons melted coconut oil 1 cup boiling water . . . Instructions Preheat the oven to 150°C / 300°F. . . Mix all dry ingredients in a bowl. Add boiling water and oil. Mix together with a wooden spoon. Let sit for 5 mins so the Chia Seeds can swell . . . TIP: if you’re using solid coconut oil melt it in with the boiling water first . . Cut the dough in half and roll 1 half and then the other, thinly out between 2-pieces of baking paper / parchment paper and remove the top layer of parchment paper, pop them on a tray and put them in the oven . . . You can choose the cut them now into shape or crack them after they're cooked for a more rustic look . . . Bake on lower rack for about 30-45 minutes, check every 15-mins as Seeds can heat up really quickly and burn. For an additional 15-mins leave the oven door ajar and the oven on to let them dry out on the low heat . . . Turn off the oven and let them dry in the oven or on a baking wire rack . . . Break into pieces and store in a container in the fridge. I line mine with baking paper . . . BREAKFAST My Seeded Crackers • 1/2 Avocado • Cherry Tomatoes • Capers • Coriander . . Okay so there’s been another reason why I’ve been posting a daily Essential Oil post and it’s because I wanted to try back at 16:8 fasting to see how my body responds now that I’ve healed so much and here’s what I’ve learned. . . When I don’t eat I’m not hungry. I can fast 16-20 hours with ease. BUT once I eat I’m starving and I want to eat everything. . . I’ll have my normal size lunch which usually holds me for 5-6 hours when I’m eating 3 times a day but when fasting I need a snack to make it to dinner and if given the chance I’d eat every hour and let me be clear - I HATE THAT FEELING!! I feel deprived 👎🏻 . . Upon reflection I’m actually eating more food/calories/unnecessary energy when I fast but here’s the clincher... I never feel satisfied!!! . . I had the biggest AHA moment!!! . . Digestion starts with the preparation of food. As soon as we see, touch and smell food our body starts to prepare for that meal triggering off a host of bodily functions. . . I’ve realized the process of preparing my meals, which is something I love and find deeply grounding and therapeutic plays a major role in my sense of feeling satisfied. . . Removing that joy from 1 meal a day triggers a host of other attempts to regain that joy but no amount of food I eat can fill that void. . . So I’m back to eating 3 times a day and to honor my hunger as my body regains it’s health and appears to require less food, by managing my portions - something I clearly need to work on! DINNER Roast Chicken with Sofia @mingleseasoning Mix • Avocado • Roasted Cauliflower • Spinach Salad • Jalapeños • Sunflower & Pumpkin Seeds • Seeded Mustard Vinaigrette . . . . I spatchcocked the chicken and prepped it 6 hours earlier by patting the skin dry with a paper towel, then gave it a salt and season rub and put it in the fridge uncovered so I could get a nice and crispy skin. . . . BRUNCH Seeded Crackers • Homemade Beetroot & Horseradish Cashew Cheese • Avocado • Jalapeños . . . ELLENIE’S SEEDED CRACKERS 1⁄3 cup almond flour 1⁄3 cup sunflower seeds 1⁄3 cup pumpkin seeds 1⁄3 cup flax seed or linseed 1⁄3 cup sesame seeds 1 tablespoon psyllium powder 2 tablespoon Chia Seeds 1 teaspoon salt 1/4 tsp Fennel seeds (optional) 4 tablespoons melted coconut oil 1 cup boiling water . . . Instructions Preheat the oven to 150°C / 300°F. . . Mix all dry ingredients in a bowl. Add boiling water and oil. Mix together with a wooden spoon. Let sit for 5 mins so the Chia Seeds can swell . . . TIP: if you’re using solid coconut oil melt it in with the boiling water first . . Cut the dough in half and roll 1 half and then the other, thinly out between 2-pieces of baking paper / parchment paper and remove the top layer of parchment paper and pop them on a tray before you put them in the oven . . . You can choose the cut them now into shape or crack them after they're cooked for a more rustic look . . . Bake on lower rack for about 30-45 minutes, check every 15-mins as Seeds can heat up really quickly and burn. For an additional 15-mins leave the oven door ajar to let them dry out on the low heat . . . Turn off the oven and let them dry in the oven or on a baking wire rack . . . Break into pieces and store in a container in the fridge. I line mine with baking paper . . . BEETROOT & HORSERADISH CASHEW CHEESE . . 1 cup Cashews, soaked 1-4 hrs 1 small Beetroot, cooked till soft 1 tbsp Horseradish Juice of 1 Lemon 1/2 tsp Himalayan Salt 2 tbsp Water 1 tbsp Chives, chopped . . Soak cashews in 750ml of water from 1-4 hours. Rinse and drain well. Pulse all the ingredients into a food processor. Add 2 tbsp of water and blend till smooth. Just add more water if you want it smoother. Last day of my @medicalmedium no eggs, dairy, pork and tuna. And adding dulse, spiralina, barley grass juice powder and all the healing food allies protocol . . . These are the foods I’ll continue to avoid after the 30-days while I’m healing for all the reasons he mentions in his book Thyroid Healing - Anthony Williams. . . Including foods that I didn’t really eat anyway but will be mindful to continue to avoid - kefir, gluten, canola, corn, soy, swordfish and bass . . Pork is problematic because it takes more time, in fact hours for the fat to disappear from the blood stream which doesn’t allow your blood to get a chance to oxygenate which is so important in the management of EBV. If I do eat it I’ll be mindful not to eat it in back to back meals. . . SHOWING UP FOR YOURSELF . . Getting back into exercise is the last piece in my healing journey and I realized I had allowed myself to sit behind some excuses to keep me from getting started because I was scared. . . I realized that fear had got the better of me - Why? Because for over 20 years I was in the gym at 6am training every morning and I LOVED IT!!! But in the last 7-years the breast implant illness slowly took that away from me. . . Despite exercising and eating well I gained almost 20kg in 6-years because my body was storing fat to protect my brain and organs from the implants which were bleeding silicone into me... now that’s what you call a HEADF@CK!!! . . And my energy was going down, body pain up - and I was experiencing the complete opposite of what exercise had always promoted in my body. . . I realized I had unfortunately created some new beliefs around exercise and they had me stymied! . . So I decided to stop using the fact that I leave home at 5.30am as an excuse to not fit in exercise and made a plan to make it inevitable that I show up for myself instead. . . So I came up with the following plan - I can do a 20 minute kettlebell work out or yoga session so long as I get started at 4.30am the latest, wear my hair tied back to work, have my lunch ready from the night before, finish eating dinner by 7pm and get to sleep by 9.30pm. . . For me it’s about putting things in place to make it inevitable that I can do it while I’m building back my relationship and love for exercise and then I’ll want to jump out of bed at 4.15am to do it. . .
