LUNCH Salad Mix of Purple Cabbage + Wombok + Spinach • Wild Atlantic Salmon with Homemade Mayonnaise + Dill + Chives + Capers • 1/4 Avocado • Cherry Tomatoes • Jalapeños • Seeds • Seeded Mustard Vinaigrette . . This meal marks the last of my 7-day budget challenge. I spent $96 on groceries and have made 17 meals. . . That brings my average to $96 / 17 = $5.65 per meal and I still have food left to get through the rest of the week. . . I did use some pantry and freezer stash but even if I added that into cost it would still be around $110 increasing each meal by $1. . . It just goes to show this WOE doesn’t have to be expensive and I still bought free range and organic meats and eggs and mostly all organic veggies. . . BREAKFAST Easy Pâté using @thecastawaykitchen awesome recipe • @alwaysfreshau Pickled Dill Cucumber • Cherry Tomatoes • My Seeded Crackers . . So decadent and soooo yum! If you’re looking at getting more organ meat into your diet I highly recommend Cristina’s recipe 👌🏻🍃 . . . Ellenie’s Seeded Crackers 1⁄3 cup almond flour 1⁄3 cup sunflower seeds 1⁄3 cup pumpkin seeds 1⁄3 cup flax seed or linseed 1⁄3 cup sesame seeds 1 tablespoon psyllium powder 2 tablespoon Chia Seeds 1 teaspoon salt 1/4 tsp Fennel seeds (optional) 4 tablespoons melted coconut oil 1 cup boiling water . . . Instructions Preheat the oven to 150°C / 300°F. . . Mix all dry ingredients in a bowl. Add boiling water and oil. Mix together with a wooden spoon. Let sit for 5 mins so the Chia Seeds can swell . . . TIP: if you’re using solid coconut oil melt it in with the boiling water first . . Cut the dough in half and roll 1 half and then the other, thinly out between 2-pieces of baking paper / parchment paper and remove the top layer of parchment paper, pop them on a tray and put them in the oven . . . You can choose the cut them now into shape or crack them after they're cooked for a more rustic look . . . Bake on lower rack for about 30-45 minutes, check every 15-mins as Seeds can heat up really quickly and burn. For an additional 15-mins leave the oven door ajar and the oven on to let them dry out on the low heat . . . Turn off the oven and let them dry in the oven or on a baking wire rack . . . Break into pieces and store in a container in the fridge. I line mine with baking paper . . . LUNCH Pork Belly • @slendier Konjac Noodles • Wombok Stir fry • Egg • Bok Choy • @niulife Teriyaki Coconut Amino Sauce . . . I had a few comments about eating sweet potato wedges yesterday and I can understand why some people get stymied by that... especially if they’re new to this WOE because by all accounts it should kick me out of ketosis right?... wrong! . . I checked my ketones today and I’m at 0.6 which is nutritional ketosis. . . After following this WOE for over 2 years I’ve achieved what’s called #metabolicflexibility which means the ability of the human body to ramp up the use of fuels that are more available in the diet. . . Eat more fat - the body will burn more fat. Eat more carbs - the body will favor carbs for fuel... and then switch straight back to burning fat again. . . I’ve also learned in all this time and experimenting that not all our answers are found in restricting more. . . If I eat too low carbs - under 20g it spikes my cortisol which spikes my insulin and kicks me out of ketosis. . . Eating 30-50g (I just follow my hunger on the day) I read higher ketones. Yesterday I was in optimal ketosis at 1.8. . . It’s really important to take the guidelines and figure out what works best for your unique body. . . Never Fail Mayonnaise 400ml light olive oil 1 tbsp Dijon mustard 4 Egg yolks 1/2 a lemon, juiced or ACV Himalayan salt to taste In a jar or jug put your eggs yolks, then mustard, lemon juice, salt and top with oil. Use a stick blender and put it on the bottom, on top of the egg and just hold it there until it starts to thicken up and at least 3/4 has emulsified and then gently lift the blender to the top and back down to blend all of it together. Viola you have mayonnaise! DINNER Flat Mushrooms • Grass Fed Beef Burger • Homemade Mayonnaise • Spinach • Fried Onions • Avocado • Sriracha • American Mustard • Dill Cucumber . . . This was the 💣 . . . Grass Fed Beef Patty Serves 2 250g Grass Fed Beef 1/2 tsp Onion Powder 1/2 tsp Garlic Salt 1/2 tsp Italian Herbs 1 tbsp Parsley, finely chopped 1 tbsp Spanish Onion, finely chopped Salt to taste . . Combine everything together and shape into 2-patties . . Cook on a medium to high heat, 2 minutes each side and then it might need a bit more depending on how thick you make them . . . I roasted the flat mushrooms with fresh rosemary from the garden, olive oil and salt in the oven at 200c for 30 minutes . . I think this bag full had over 40 for $5! I separate them into batches and freeze what I’m not cooking for another day. . . Preheat oven 175c . . Wash and dry them properly. Cover a baking tray with baking paper and lay the skins out flat. Season with salt and I used @mingleseasoning Spicy flavor. . . Cover with baking paper and place another tray on top to weigh them down. . . I did another layer on top of that and baked for 45 minutes to an 1 hour in the oven. . . BREAKFAST Roasted Mushrooms • Serrano Ham • Avocado • Homemade Onion & Chives Cashew Cheese . . . CASHEW CHEESE - Onion & Chives 1 cup Raw Cashews 1 Lemon, Juiced 1/2 tsp Himalayan Salt 1/2 tsp Onion powder 1-2 tbsp Chives, finely chopped . . Soak cashews in 750ml of water from 1-4 hours. DINNER Freezer Stash Creamy Lemony Chicken • Cauliflower Puree • Zoodles . . . . CREAMY LEMONY CHICKEN . . Here's what you need:
. . 6 bone-in, skin-on chicken thighs
1 Tbsp. paprika
Salt and Pepper to taste
1 tsp. dried thyme
3 Tbsp. unsalted butter
3 cloves of garlic
1/2 cup chicken stock 1 tbsp. Meadow & Marrow Lemon & Herb 1/2 cup heavy cream
1/4 cup Parmesan
1 lemon
2 cups baby spinach
. .
Instructions:
1. Season chicken thighs with salt, pepper, and paprika.
2. Melt 2 Tbsp. butter in a large ovenproof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown. Drain excess fat and set aside.
3. Melt 1 Tbsp. butter in the skillet. Add garlic, stir until fragrant, then add chicken broth, Meadow & Marrow Lemon & Herb bone broth, heavy cream, Parmesan, lemon juice, thyme, and stir. Bring to boil, then reduce heat to low.
4. Stir in spinach, simmer until spinach has wilted and the sauce has thickened. Return chicken to the skillet.
5. Bake at 400˚F / 200˚C for 25 minutes.
6. Ellenie’s Seeded Crackers 1⁄3 cup almond flour 1⁄3 cup sunflower seeds 1⁄3 cup pumpkin seeds 1⁄3 cup flax seed or linseed 1⁄3 cup sesame seeds 1 tablespoon psyllium powder 2 tablespoon Chia Seeds 1 teaspoon salt 1/4 tsp Fennel seeds (optional) 4 tablespoons melted coconut oil 1 cup boiling water . . . Instructions Preheat the oven to 150°C / 300°F. . . Mix all dry ingredients in a bowl. Add boiling water and oil. Mix together with a wooden spoon. Let sit for 5 mins so the Chia Seeds can swell . . . TIP: if you’re using solid coconut oil melt it in with the boiling water first . . You can choose the cut them now into shape or crack them after they're cooked for a more rustic look . . . For an additional 15-mins leave the oven door ajar and the oven on to let them dry out on the low heat . . . Turn off the oven and let them dry in the oven or on a baking wire rack . . . I ate breakfast and then I was hungry again 3 hours later, I can usually go 4-5 hours... so I ate some leftover roasted veggies in the fridge... AND THEN 2 hours after that hungry again SO I ate the naked burger and 2 squares of 90% chocolate and then... nothing! . . Full to the brim and didn’t want dinner! . . So my last meal was around 4pm yesterday and it’s almost 10am now. . . I don’t mind fasting so long as it’s incidental and not forced. If I force it my body hates it . . . Another lesson in following my hunger and trusting my body. Just because it’s hungry 1 half the day it doesn’t mean it will be all day. . . And even if it is who cares because I know from past experience I’ll probably wake up less hungry the next day. . .
