This took me about 18 months to figure out. . . I wasn’t losing so my first inclination was to restrict more and who wouldn’t agree! . . The first line of advice from anyone is usually to cut your carbs more, or fast longer. . . Well I did all that, I have amazing discipline and when I set my mind to something I just do it. . . I dropped my carbs well below 20g and had my daily fasting up to 16-20 hours with at least 1 or 2, 24-48 hour fast a week. And once a month I did a 5 day water fast. . . I thought I felt great but looking back it was way too much pressure on my adrenals and I was clenching my jaw and suffering from tension headaches. . . Not only that any weight I’d lose I would just regain once I returned to my normal Keto eating... SUPER FRUSTRATING!! . . Then one day I decided after lots of research to try the other way and stopped restricting. . . It took some guts to do this because I was worried that I was going to gain weight. But I didn’t and something amazing happened... I lost weight, my blood ketones were higher and more stable and my headaches were gone! . . I had some 99% dark chocolate at home which was a bit too bitter so I decided to turn it into this! Chocolate Bark 99% Dark Chocolate, block 90% Dark Chocolate, block 3 tbs Almond Butter 25g Grass Fed Butter . . Melt all the ingredients together in a double boiler on a low heat . . Pour out into a tray lined with baking paper. Topped with sunflower and pumpkin seeds, medjool dates and salted coconut chips . . Meal One - 1pm Sardines in Tomato @brunswickfoods + 1 cup Kale + 2 Cherry Tomatoes + Pine nuts + the last of the Caramelized Onions I made the other night with @niulife coconut balsamic vinegar + Homemade Mayonnaise drizzle + Seeded Mustard Vinaigrette . . You’ll notice I’m noting time of meal and some measurements as I learn how much food my body really needs these day to get to 70% full and go at least 4 hours between meals. . . I usually would have added avocado and an egg to this... Now that seems excessive! . . Once again as I continue to heal my body’s needs have changed and it’s time to mix it up again! . . It’s not about what to eat... I’m very clear on that... it’s back to how much to eat! I need to figure out exactly how much food I do need these days to feel satiated, keep my hormones balanced and ensure I’m eating enough not to trigger eating frenzies later in the day because I think my needs have shrunk! . . So I’m bringing mindfulness back to my meals to ensure that I’m not overeating because otherwise I’ll just always eat everything that’s on my plate... yes I’m one of those people! 🙋🏼‍♀️ . . This is my leftovers from the salad I had for lunch which I’m now finishing off for dinner. . . I’m a little bit blown away how little I did need to eat at lunch to hold me over for 4 hours... very surprised! . . This is going to be interesting!

If there’s one thing I’ve learnt in the over 2 years of being in ketosis is we’re all different and the macro equation of 85% Fat 10% Protein 5% Carbs is not a guarantee you’re going to achieve a state of ketosis, lose weight and be healthy. . . For some it may, but for others like me it could throw out your hormones, causing things like adrenal issues, hair loss, headaches, migraine, problems sleeping, etc. and as a result you’re not as healthy as you could be. . . It’s important to find out what amount of carbs, protein and fat is right for you and as quickly as possible. . . For me my body prefers it when I eat 30-50g of carbs sourced from nutrient dense vegetables and I actually read and sustain higher ketone levels when I do. . . If I eat too low it puts too much pressure on my body, spikes my cortisol, high cortisol causes insulin to spike and that kicks me out of ketosis. . . Hello summer fruit! Coconut yoghurt with my granola and mango . . Before any folks out there tell me mango’s not Keto well it can be if you don’t eat a lot and manage it into your day. . . I’m obsessed with this breakfast at the moment so I’m just going to mix up the presentation to keep it interesting . . . If you haven’t tried a Keto granola you must... just be warned you too will be obsessed 🤩 . . . Ellenie’s Spiced Coco-Crunch Granola 2 cups Coconut Chips 1/4 cup Sunflower Seeds 1/4 cup Pumpkin Seeds 1/4 cup Flax Seeds 1/4 cup Shave Almonds 2 tbsp Chia Seeds 2 tbsp Hemp Hearts 2 tsp ground Cinnamon 1 tsp ground Ginger 1 tsp Allspice 3 tbsp @melrose Coconut Oil and Ghee . . Preheat oven to 120c / 250f and line a baking tray with baking paper. . . Combine all the dry ingredients together and then stir through Coconut Oil and Ghee. . . For a sweet treat I split the batch and added 1 tablespoon of Cacao and 1 x 90g sachet of @nuvia sweetener. . . Spread evenly on the pre-lined baking trays and cook for 30-45 minutes until golden and crunchy, turning every 15 minutes. The darker the coco-crunch, the crunchier it will be. . . Remove from the oven and allow to cool completely before transferring into a large glass container or jar. . . It will keep for 2-weeks in an airtight container in the pantry and you can freeze for even longer. . . I’m planning to serve this with some Greek yoghurt and berries or chia seed pudding! . . So many good things on this plate tonight. I made up two new dishes... . . 1. Rockling Fish Parcel with @niulife Coconut Sweet Chilli Sauce + Ginger + Garlic + Onion. Aluminum Foil, lined with baking paper, place onions, fish, ginger, garlic and coat with the sweet chilli sauce. Seal the parcel and bake for 10-20 minutes. Mine took 18. . . 2. Sesame seed Eggplant. Diced the eggplant into large pieces, deep fried in a neutral olive oil and drained on paper. Dressed with sesame seed oil, sesame seeds, fish sauce, chilli, spring onions and @niulife sweet chilli sauce . . Served with @slendier spaghetti noodles cooked with onions, garlic, chilli, fish sauce, @niulife sweet chilli sauce, sesame seeds, chilli. Stirred through purple cabbage at the end and season with sesame oil. . . Garnish is a fresh cucumber, chilli and spring onion salad with sesame oil, pickled ginger and fresh lime. . . . There’s always so many jokes about “women” and their “hormones” and how it effects the people around them... you know the “scary”, “crazy” hormonal women! . . But truth be said they don’t affect anyone as badly as the individual going through it... and men let’s cut the bullshit because your hormones rule your body too! . . I’ve gone through some stuff this weekend, which has totally knocked my well balanced hormones to the curb, reminding me of the role they play in our moods and the importance of keeping them balanced. . . As estrogen affects brain chemicals like serotonin and dopamine, which are largely responsible for how we feel... a sudden increase in this hormone can lead to mood swings, whereas anxiety can be due to lower progesterone, and depression could be due to lower estrogen levels. . . I’ve suffered the lowest of lows today and it’s very easy to feel betrayed and trapped by your body. . . The need to remember that this is not me, it’s just something my body’s working through to bring me back to balance can be hard to do... but I just have to! . . The flavors are so nice and the crunchy texture adds such a great edition to Greek yoghurt, Coconut yoghurt, chia seed pudding, smoothie bowls, anything really. . . Here’s the recipe for you to enjoy too. I cooked this batch for 45 minutes. . . . Spiced Chia Seed Pudding + My Spiced Coco-Crunch Granola + Frozen Berries . . It’s going to be 38 degrees today here in Melbourne so this is the perfect summer breakfast! . . . I need to make more of my granola... it was so good! . . Ellenie’s Spiced Coco-Crunch Granola 2 cups Coconut Chips 1/4 cup Sunflower Seeds 1/4 cup Pumpkin Seeds 1/4 cup Flax Seeds 1/4 cup Shave Almonds 2 tbsp Chia Seeds 2 tbsp Hemp Hearts 2 tsp ground Cinnamon 1 tsp ground Ginger 1 tsp Allspice 3 tbsp @melrose Coconut Oil and Ghee . . Preheat oven to 120c / 250f and line a baking tray with baking paper. . . Combine all the dry ingredients together and then stir through Coconut Oil and Ghee. . . For a sweet treat I split the batch and added 1 tablespoon of Cacao and 1 x 90g sachet of @nuvia sweetener. . . Spread evenly on the pre-lined baking trays and cook for 25-30 minutes until golden and crunchy, turning every 10 minutes. The darker the coco-crunch, the crunchier it will be. . . Remove from the oven and allow to cool completely before transferring into a large glass container or jar. . . It will keep for 2-weeks in an airtight container in the pantry and you can freeze for even longer. . . I’m planning to serve this with some Greek yoghurt and berries or chia seed pudding! . . How to survive eating out during the festive season... eat animals and don’t do your head in about the sauces they use. . . My theory is that so long as there’s no flours, grains, etc. I’ll accept a bit of sugar. . . Order entree / main so you feel satisfied and don’t want dessert. . . I choose not to drink at every lunch. If I did I’d be drinking daily. So I save maybe one glass a week, if that. . . I usually make my chia seed pudding with coconut cream so that when I have it for breakfast it actually keeps me full for more than 2 hours! . . But because this is as a dessert I used almond milk instead to keep it lighter. . . We served it with fresh strawberries, blueberries and my Spiced Coco-Crunch Granola . . . Why did I go so long avoiding yoghurt on Keto!?!?! I was such a purest at the start I just shut it down but now I realize that’s crazy! . . For me 150g fits into my carb count and my gut thanks me for it. My yoghurt of choice is the Farmers Union Greek Yoghurt... sooo good! . . But to mix it up next week I might go the Nudie coconut yoghurt. . . I’ve served it with organic mixed berries and my Spiced Coco-Crunch Granola... so good! . . . Easy Liver Pâté from @thecastawaykitchen + My Seeded Crackers = Best lunch ever!!!! . . Topped with cherry tomatoes and jalapeños! . . . Ellenie’s Seeded Crackers 1⁄3 cup almond flour 1⁄3 cup sunflower seeds 1⁄3 cup pumpkin seeds 1⁄3 cup flax seed or linseed 1⁄3 cup sesame seeds 1 tablespoon psyllium powder 2 tablespoon Chia Seeds 1 teaspoon salt 1/4 tsp Fennel seeds (optional) 4 tablespoons melted coconut oil 1 cup boiling water . . . Instructions Preheat the oven to 150°C / 300°F. . . Mix all dry ingredients in a bowl. Add boiling water and oil. Mix together with a wooden spoon. Let sit for 5 mins so the Chia Seeds can swell . . . TIP: if you’re using solid coconut oil melt it in with the boiling water first . . Cut the dough in half and roll 1 half and then the other, thinly out between 2-pieces of baking paper / parchment paper and remove the top layer of parchment paper, pop them on a tray and put them in the oven . . . You can choose the cut them now into shape or crack them after they're cooked for a more rustic look . . . Bake on lower rack for about 30-45 minutes, check every 15-mins as Seeds can heat up really quickly and burn. For an additional 15-mins leave the oven door ajar and the oven on to let them dry out on the low heat . . . Turn off the oven and let them dry in the oven or on a baking wire rack . . . Break into pieces and store in a container in the fridge. I line mine with baking paper . . . I have two problems with the “eat everything in moderation” saying. . . First thing is what does “moderation” even mean anyway... how do you gauge it? Is it once a day, once a week, once a month or once a year... which is it?!? . . If you’ve got a bay leaf and a cinnamon stick add that in too, but I didn’t have any for this one! . . Bake at 180 for about 45 mins to an hour until cooked through. . . Serve with cauliflower purée 👌🏻🍃 . . CAULIFLOWER PURÉE - SINGLE SERVE: Boil 1/4 cauliflower in water without salt because it causes it to retain water. Drain and I blitz it in my nutribullet with 1 tbsp butter or garlic butter and season to taste. . . - FYI - if you’re using a NutriBullet just let the cauliflower cool off a bit before you put it in because the heat will create a suction and you will not be able to open it...
