Tomato, harissa, and @ Farmstyle Cut Triple Cheddar Shredded Cheese galette. Tomatoes with cheddar cheese is one of my favorite flavor pairings. This savory rustic open faced pie is perfect for entertaining. Juicy tomatoes, spicy harissa, shallots, garlic, and three types of cheddar cheese are encased in flaky dough and baked until the crust becomes golden, the tomatoes collapse, soften, and releases their juices, and the cheese melts. Buttery tender dough is layered with sharp, medium, and medium white thick shreds of cheese. The cheese is topped with pan fried shallots and garlic. Thin slices of tomatoes are then layered over the cheese-onion mix. The layer of cheese under the tomatoes ensures that the crust stays nice and crisp. A blend of cheeses adds so much extra flavor. Finally, a bit of spicy harissa paste is mixed with olive oil and brushed all over the top of the tomatoes. The harissa gives this dish a touch of deep robust spicy flavor from its blend of roasted red peppers, garlic, red chili peppers, and vinegar. This was so good that we ate it at my counter and it didn’t even make it to a plate. It’s a great make-ahead dish too as it can be served warm or at room temperature.
