One of the visions I had for my blog was including a page where I could post all the recipes I’ve crafted from the kitchen of my RV. If we’ve been friends for a bit, you probably remember I used to post about my culinary creations on the reg. Unfortunately, since we started traveling I seemed to have lost my passion for cooking (but not eating 🤦🏻♀️) and there have only been two recipes I’ve worked on and only one that made it to my blog. .
Tonight I prepared a super simple gluten-free, red rice pasta and was reminded of how much fun cooking can be. I’ve tried many rice pastas but @ might be my new favorite. Sometimes gluten-free pastas can be blah-tasting and tricky to cook, leaving you with a bland pot full of gummy or mushy noodles. Not this pasta! This pasta was flavorful, perfectly al dente in 7 minutes, and delicious tossed with a bit of avocado oil and Parmesan. I’m already dreaming of my next plate and thinking of fun new recipes to try. .
