Stuffed shells with cashew ricotta and kale by @veggies.fruits.grains 💚 via @vegangotgame #vegangotgame . parboil medium sized shells • drizzle with olive oil and set aside to cool . sauté 1/2 large onion • one bunch of dinosaur/lacinato kale stemmed and finely chopped • 1/2 tsp each salt • pepper • garlic powder • onion powder • when softened set aside to cool . Cashew Ricotta Recipe 1 1/2 cups cashews soaked in water for a few hours • drain and add to blender with 1/2 cup of water • blend until creamy • add 1 Tbsp apple cider vinegar • 2 Tbsp fresh lemon juice • 1 tsp white miso • 1/2 tsp garlic powder • 1/2 tsp salt • 1/2 tsp black pepper • blend until combined • I like the texture to be creamy ( you can double this recipe and use it for lasagna ) . start adding creamy cashew ricotta to the sautéed kale mixture a bit at a time until you get a nice ratio • you may have some left over and that’s ok because it works as a dip too. . now the fun part • in a large baking dish pour 1 jar of store bought red sauce • double up the shells and start filling them • placing them open side up in the baking dish • cover with foil and bake at 350F for 20 mins • remove the foil and broil for 1 minute • I sprinkled on some red pepper flakes and fresh parsley before serving.

This bowl of YUMM GRANOLA is a gift from the gods. It’s seriously the easiest thing ever. Just mix all the ingredients together and bake in the oven. 🌱🌱🌱 I used: •1 cup unsweetened shredded coconut •1 1/2 cups slivered almonds •1 1/2 cup pecans •3/4 cup walnuts •3/4 cup sunflower seeds •rolled oats •2 Tbsp flax seed •handful of dried craisins (don’t add yet!) •3 Tbsp ground cinnamon •2 tsp grated ginger •1 tsp cardamom •1 tsp all spice •1/2 tsp of sea salt •1/2 cup coconut oil, melted •1/2 cup maple syrup •1 Tbsp vanilla extract 🌱🌱🌱 How I did it: •mix all the dry ingredients (besides the craisins) in a large bowl. I added as many oats as looked good to me •melt the coconut oil, maple syrup, warm water, and vanilla together •dump liquids over dry and mix together •spread over two large baking sheets and bake at 350 for 25 minutes •pull out and add craisins, mixing together and flipping the trays •put back in and bake until golden and perfect!

Seriously, how sensational does this look!! I made these roast veggies with peri peri sauce by @evergreenkitchen on the weekend & they tasted as good as they look —. Swipe to see the lunch I made on @solbreads GF Rice & Pumpkin. Not quite as good & professional as the photo by @evergreenkitchen 🤣🤣🤣🤣, but healthy, easy to make & tasted fantastic. And that’s what food is all about for us. This will definitely be on high rotation 👍👍 —. Recipe is vegan & GF & can be found on @evergreenkitchen website. Next time I’ll make the peri peri sauce in bulk. It’s soooooo good. Oh and I’ll cut my veggies a tad thicker- some got burnt. —. Ingredients for peri peri 2/3 cup white vinegar 1/2 cup white onion, diced 6 cloves garlic, peeled 1 roasted red pepper, from jar 2 tablespoons grapeseed oil (or substitute other neutral oil) 2 teaspoons lemon zest 1 teaspoon salt 1 teaspoon paprika 1/2 - 1 thai red chili (stem removed) 2-3 teaspoons fresh lemon juice, to taste Blend all ingredients & then heat to reduce & thicken. About 30 mins. Add to both sides of veggies when they are 2/3 roasted & continue roasting for about 10 mins. —. Have a happy healthy day everyone 🌱👍👍👍🍞

I’ve been experimenting with high protein breakfasts I can take with me for after my morning cardio classes. These banana chocolate protein muffins turned out great! At only 190 calories per muffin you get 24 grams of protein in 2 muffins. They’re tasty and easy to carry in my backpack between classes. I used 3 small overripe bananas, 3/4 applesauce, 1 1/2 cups of rolled oats, 1 cup of @legionath Thrive vegan protein powder, 1 tbsp vanilla extract, 1 tsp cinnamon, 1 tbsp baking powder and optional chocolate chips for the top. If you like you can add nuts like pecans or hazelnuts. Bake at 350 for 20-25 minutes. New breakfast.... our gut loves variety and we should try to aim to eat at least 30 different types of plants a week to make sure we keep our microbiome happy and diverse. This is a large organic English and seasonal apple which I grated and then added 3 tablespoons of porridge oats and 2 desert spoons of whole flaxseeds to this - mixed it up and then stirred in 100g of plant yoghurt. I also added some dried sour cherries to make it look pretty. We already had 2 servings (1 of them man sized🤣) out of this and I’m taking what’s left to work for breakfast with me tomorrow..... I’ve topped it off with some more yoghurt, a sliced date, a couple of cranberries and a sprinkle of polyphenols in the cacao nibs. Let’s talk 👉🏻 Foodwaste: I am pretty lucky to be working in a cafe that uses and reuses as much of their food as possible. We juice, blend or stew a lot and when things can’t be sold because they don’t look appealing anymore or they’re about to go bad the workers can take them home. But still: places like ours are rare. Here are some shocking food waste facts you should probably know: 🌎40% of all produced food never gets consumed by humans 🌎Families with children in the uk waste approx 700£ of food each year 🌎Up to 40% of fruits don’t meet cosmetic standards and are thrown away 🌎1,3 bill tonnes of food are wasted a year 🌎Almost a billion people go hungry whilst we waste 1/3 of our food 🌎Every year, consumers in rich countries waste almost as much food as the entire net food production of sub-Saharan Africa (230 million tonnes) ⚡️There are many more shocking facts which you can just research online. But here are some practical tips on how to reduce waste(and save those $): 🤙🏻 Go to the shops more often (instead of 1x a week) and buy only what you need (grocery list!) & prepare only the food you’ll eat 🤙🏻Buy canned and dried goods that don’t waste so easily 🤙🏻Make your freezer your best friend 🤙🏻Make soups and stews or juices with overripe fruit and veg 🤙🏻Adapt recipes and use what you have (if you have a recipe that asks for some sort of veg use the ones you have already for example) 🤙🏻Store smarter (know where what goes in the fridge) 🤙🏻Pickle or preserve (make your own sauerkraut from left over cabbage for example) This way you not only save a lot of money but you also contribute to less food being wasted and thrown out 😌✨ have you ever looked into food waste? Nothing like a big bowl of warming oatmeal when it's raining outside🌧. It's supposed to rain the whole week, so... not a lot of things to do outside probably. I currently am in an amazing hostel called "Fat cats"🤣. It's fully vegetarian and we are having breakfast and dinner together😊. It's just a super cozy and familiar atmosphere! Happy to be here😍🤗! ↪German: Es gibt doch nichts besseres als eine große Schale Oatmeal, wenn es draußen regnet und kalt ist🌧. Es soll noch die ganze Woche weiterregnen, also gibt es vermutlich nicht viele Wanderungen etc.. Ich bin gerade übrigens in einem richtig tollen Hostel, in dem absolutes Fleisch Verbot herrscht💪. Außerdem ist es super familiär hier, zum Beispiel essen wir morgens und abends zusammen und es ist einfach eine mega gemütliche Atmosphäre😊. Ich bin froh, hier zu sein😍!

“What do vegans eat for Thanksgiving?” ☝🏻 . This was just 1️⃣ of 4️⃣ options I had to chose from at @sprouts and looks like I’m gonna have some leftovers. . Looking for other #plantbased ideas this week? Ideas include stuffed squash, lentil loaf, shepherd’s pie, or even a loaded vegetable crescent roll ring. All google-able, all figure-out-able, and all just as good as the “real thing.” . Just some fun facts about the Turkey/meat industry: ⤵️ . 🔹46 million Turkeys are killed each year for Thanksgiving (most of which were factory farmed & are genetically manipulated to grow extremely fast to reach “market weight” which is unhealthy for the birds) 🔸Farmed turkeys typically have 2.5 to 4 sq feet of floor space to live it’s entire life. Talk about unjust enslavement. 🔹Stress from being overcrowded and mistreated can cause Turkeys to injure one another, so instead of giving the birds space, producers cut off parts of their beaks and toes which IS very painful for the birds. 🔸Farmed turkeys only get to live 3 to 5 months, that’s if they make it to be slaughtered. 🔹BONUS: According to @nutrition_facts_org, a single meal of #meat, dairy, and eggs triggers inflammatory reaction inside the body within hours of consumption. 😳 . It’s not my job to convince you to #govegan this Thanksgiving. It’s my job to share the facts as a conscious eater. #Conscious eating meaning being keenly aware of how are food was produced & got to our plates... and I don’t know about you, but I don’t want to ingest the stress and trauma going into making these “traditional” holiday staples. 👎🏻🤷🏻‍♀️

{Unbezahlte Werbung/Markierung & Markennennung} || The most important thing I learnt today: steamed pak choi is a pain in the ass to arrange in a way that looks half decent😂 but I think the result wasn't too bad, right?🙈 lunch was a kind of asian-inspired(ish) bowl with steamed pak choi & green peas, cucumber, smoked tofu, @tildarice wholegrain rice & veg mix - all sprinkled with black sesame and drizzled with a miso tahini sauce😍 // Didn't quite get as much done as I'd have liked to today, but I did work for a few hours after a bit of a relaxed morning - my mum and I have recently started taking the time to go to a café in town every once in a while for a bit and I'm so grateful for getting to spend some time with her without having to stress about anything. Purple blackberry swirl 💜. 🇪🇸🇬🇧⤵️ Ultimamente, tenia a mis amadas berries un poco olvidadas, así que hoy traigo un elixir de juventud gracias a las moras. ¿Sabias que las moras es una de las frutas que tienen mas poder antioxidante, incluso el acai? En concreto, son ricas en antocianina y pterostillbene,  dos potentes antioxidantes que ayudan a mantener a nuestro organismo protegido de los radicales libres. También son ricas en vitamina C y E, que ayudan a reforzar nuestro sistema inmunológico y a la regeneración celular. Además, su elevado poder antioxidante consigue que nuestro cuerpo aumente el DHL o colesterol bueno, disminuyendo de esta manera las posibilidades de sufrir una dolencia cardiaca. INGREDIENTES: 1 plátano maduro congelado 4 rodajas gruesas de calabacín congelado (3/4 taza aprox.) 100 gr. de moras congeladas ( o 1 taza) 1 cucharada de tahini Chorro de leche de coco casera o bebida de coco.
