Another easy and nutritious recipe from my recipe book: Indian Style Lentils (Dahl) 👇🏼
This is a comforting and warming meal! Lentils are packed with protein for all of those who want to build strong and long-lasting muscles 💪🏻
Prep Time 20 minutes makes 2 servings Ingredients:
1 1⁄4 C of red lentils soaked overnight and rinsed 2 red potatoes cut in cubes
2 minced cloves of garlic
1⁄2 red onion chopped
1 1⁄2 C coconut milk
1 1⁄2 C of tomatoes from a jar (or fresh no skin no seeds) 2 1⁄2 Tsp of Curry powder
1 tsp turmeric
3⁄4 tsp of chili powder
1⁄2 in of minced ginger
1⁄2 tbs of sugar or 7 drops of Stevita
Salt, black pepper and cayenne pepper to taste.
Fresh cilantro leaves
1. In a large saute onion, garlic, ginger and spices. In another pot cook the potatoes until soft, and drain.
2. Remove the onion & spices, and cook the tomatoes until soft, add coconut milk, potatoes and lentils. Add cayenne (1⁄4 tsp for spicy), sugar or stevita, salt and pepper to taste.
3. Simmer for 20 minutes, smash some of the potatoes to thicken and let the lentils cook until open. Serve with fresh cilantro leaves and naan bread
