So we have hit the half way point of my #TrueStrength3 fitness challenge ! 4 weeks down, and 4 weeks to go! Iโ€™ve lost 8 pounds and I can honestly say Iโ€™m starting to feel even better than I did before. Physically (besides the numbers on the scale) I havenโ€™t really felt much different. However, emotionally I feel more confident, which is something I never thought I could feel. . . . Iโ€™m very hard on myself (as Iโ€™m sure a lot of people can relate with). I remember the few weeks leading up to the challenge I would feel so disgusted looking at pictures of myself and how round my face looked. Before the challenge started I worked out and I ate healthy. But I also over ate almost every day and especially on the weekends. Since this challenge has started I have cut down on the amount of times I over eat. Itโ€™s crazy to me how much diet and exercise can have a toll on your emotional well being. I donโ€™t know if itโ€™s mental or not but I feel like in the past 4 weeks I look and feel slimmer. The most recent pictures Iโ€™ve been in I havenโ€™t hated the way I look. And ultimately I feel happier. At the end of the day thatโ€™s the most important thing ! I wanted to start this challenge to help me change my life habits permanently and I know itโ€™s gonna take some work. But Iโ€™m happy with the results Iโ€™m getting. And Iโ€™m proving to myself that I can control how much I eat if I really put my mind to it! . . So hereโ€™s to the first four weeks!!! I hope the next four weeks I can continue to grow in my will power and freakin kick this challenges a$$ #veganfitness #veganfitnessdotcom @veganfitnesscom

Japanese and Regular Sweet Potato Fries by @starinfinitefood ๐ŸŸ Recipe:โ € Beet ketchup:โ € Blend together: 2 large beets roasted (peeled and cubed), 1/2 Cup apple cider vinegar, 14 pitted dates, 1/4 tsp clove, 1/2 tsp fresh ginger, 1/2 tsp onion powder, 1 clove toasted garlic, 1/2 teaspoon salt, 1/2 teaspoon pepper and a pinch of red pepper flakes. When it gets coldโ„๏ธ, when we get sick๐Ÿค’, when weโ€™re simply craving ๐Ÿœor when we try to not spend all our money ๐Ÿ’ธ @fulins_easttn (๐Ÿ˜†) we make ๐Ÿ‘†๐Ÿผthis๐Ÿ‘†๐Ÿผ soup. Itโ€™s a staple in our home and even Rayma enjoys the flavorful broth! We were out of ramen, but angel hair spaghetti was just as satisfying. ๐Ÿ‘Œ๐Ÿผ . *Swipe for Ingredients* . Directions: Add all ingredients, except the noodles, to a crockpot. Cook on high for 3 hours. Or you can cook on the stove, medium boil, for about 30 minutes. Cook noodles according to package and add to soup and let simmer together for a few minutes. Simple as that and tasty AF. . Top with cilantro, red pepper or spinach. Be sure to add your favorite veggies! I added cabbage, celery and carrot.๐Ÿงก
