Happy sunday everyone! 😘 What are your plans today? I could eat pancakes for breakfast, lunch or dinner. Who else? 🙆😋 Today I enjoyed these delicious chocolate pancakes topped with a peanut sauce and berries. 🍫😍 Here's the recipe for you, if you want to try it out! Ingredients - 1 banana - 3/4 cup non-dairy milk (I used almond milk) - 3/4 cup oatflour - 2 tbsp cacao powder - 1 tbsp baking powder - 4-5 tbsp warm non-dairy milk - 1 tbsp peanut butter 1) For the pancakes blend the banana, milk, flour, cacao powder and baking powder until it is a smooth batter. 2) Cook the pancakes in a non-stick pan for about 1 minute from each side. 3) For the peanut sauce mix the warm milk and peanut butter until well combined. 4) Layer your pancakes, top it of with the sauce and with your favorite toppings. Mix all the ingredients except the chocolate until everything is well combined. Pour one big tbsp of the batter into each muffin cup, press in two pieces of the chocolate and cover it with one more tbsp of the batter. More if you need. Bake the lava cakes for 10 minutes and serve it warm. Happy wednesday everyone! 😘 Who else loves berry season as much as I do? 😍🍒🍓 Today I have a great vegan recipe for you. It's a raw vegan chocolate tart with raspberries and hidden avocado! ❤️🍰 Ingredients Crust: 6 big medjool dates. 1/4 c (35 g) almonds. 2 tbsp sunflower seeds. 2 tbsp flax seeds. 1 tbsp coconut oil. Chocolate mousse: 1 ripe banana. 1/2 ripe avocado. 2-3 tbsp cacao powder. 2 tbsp maple syrup. 2 tbsp melted coconut oil. Berries for topping. Put all the ingredients for the crust in a food processor and pulse until everything is well combined or it forms a ball. Press the crust mixture into the bottom of a small tart pan. Blend all the ingredients for the chocolate mousse until completely smooth. Pour the filling into the crust, top it of with your favorite berries and chill for at least one hour. Red pesto pasta by @bosh.tv 🍝 Ingredients: For the pesto 1 cups sundried tomatoes 2 roast red peppers 1 chilli Juice of half a lemon 1/3 cup olive oil 1/2 cup water 3 cloves garlic 1 tsp pepper 2 tsp salt 1 cups ground almond Half cup nutritional yeast 1/3 cup pasta water For serving: Enough spaghetti for 4 people Toasted pinenuts (optional garnish) Make the pasta according to the instructions on the pack. We will make our sauce whilst this is cooking. Add all the ingredients for the pesto into a blender and whizz together until smooth. Add more water/oil if needed for the desired consistency. Once your pasta is done, save 1/3 cup too add to the pesto to loosen the sauce. Drain the pasta and add back to the pot along with the pesto and pasta water. Mix well. Filed under: Keep Yo Man - “Mexican Stuffed Bell Peppers” . Rub olive oil on halved/seeded bell peppers and bake 350 degrees covered for 35min . In pot Sauté 1 small sweet onion with 2 cloves garlic, 1 minced seeded jalapeño with olive oil (2-3min) Add: 1 tsp cumin, chili powder, paprika (cook 1 min) Add: 1 cup vegetable broth 1 cup quinoa 1 can black beans (I used black eye peas cuz my huzbund is from the south) 1 cup kernel corn 1 can fire roasted diced tomatoes s&p Bring to boil, simmer 20min . Stir in zest of 1 lime, 1 lime juice, 2TBSP cilantro leaves and 1/2 diced cook sweet potato . Once peppers are done stuff quinoa mixture Add toppings (vegan sour cream, vegan cheddar cheese, salsa) . Roasted eggplant • Ingredients: 2 eggplants chopped in to bite sized pieces 1/2 tsp salt 1/2 tsp pepper 1/2 tsp garlic salt 5 garlic cloves 1/4 tsp oregano 1/4 cup diced tomatoes ———————————— Directions: 1. Preheat oven to 450 degrees. Line a baking sheet with parchment paper. 2. Place bite sized pieces of egg plant onto the prepared baking sheet. Season with salt, garlic salt and pepper. In a small bowl, whisk the garlic and oregano. Stir in tomatoes. Spoon the mixture over the eggplant. 3. Bake for 30 minutes. Sprinkle with some extra oregano. Prepare Bell peppers by removing the seeds and white insides. Leave the tops of the peppers intact. YELLOW RISOTTO Make it green... INGREDIENTS: - 1,5 cups precooked brown rice - 1/4 onion, finely diced - 1-2 cloves of garlic - 1 large carrot - 1 cup fresh spinach - 1/2 cup peas (frozen) - parsley - salt + pepper - vegan parmesan or nutritional yeast INSTRUCTION: Cook rice and put aside. Heat oil (or a dash of water) in a medium saucepot, add onion, garlic and and stir constantly for 60 seconds. Add carrots, a dash of water or vegetable broth and stir until it becomes soft, add precooked quinoa, salt + pepper and stir until it is hot, then add peas, spinach and mix together. Serve on a plate with parsley and vegan parmesan or nutritional yeast. Guten Appetit:)

Lately, my favourite recipes have been rather, the most improvised leftover dishes. Feels so good to clean loose ingredients in the fridge! This is a vermicelli noodle salad with left over red cabbage, lettuce, cucumber, kale and salt pepper tofu! Garnish with remaining coriander and green onion! 🌈

Thai Chopped Salad with Crispy Onions and Peanut Dressing🌿✨ Recipe by @purplecarrotxo plant-based meal delivery. Ingredients 1 eggplant 1 package organic extra firm tofu 1 romaine heart 2 scallions 2 Thai chiles 1 lime 3 tbsp peanut butter 1 tbsp tamari 1 tbsp rice vinegar 4 oz coleslaw blend ½ cup crispy onions Fresh cilantro 2 tbsp vegetable oil Salt and pepper Method 1. Trim and chop the eggplant into 1 inch pieces. Transfer to a paper towel-lined plate and sprinkle with salt. Drain the tofu and pat dry with paper towels, then chop into 1 inch cubes. Roughly chop the romaine heart. Thinly slice the scallions. Mince the Thai chiles. 2.Place a large nonstick skillet over medium-high heat with 1 tbsp vegetable oil. Once hot, add the eggplant and cook until browned in places, about 4 to 5 minutes. Season with salt and return to the plate. 3. Return the skillet to medium-high heat with 1 tbsp vegetable oil. Add the tofu and a pinch of salt and cook until browned and crispy in places, about 4 to 5 minutes. 4. In a medium bowl, add the juice from the lime, peanut butter, tamari, rice vinegar, and ¼ cup warm water. Whisk the peanut dressing until smooth. 5. The @bestofvegan Pasta Challenge: Couscous with sautéed shallots in olive oil, garlic, sliced carrots, green olives, salt and pepper. Sauté the shallots first in olive oil over medium heat, add the carrots, about 1/2 teaspoon of minced garlic, salt and pepper. Cook and stir occasionally until warmed thru and shallots start to brown. Add *cooked couscous and sliced olives. (I used manzanilla green olives in a sesame soy brine.) After many trails and testimonials, this recipe seems to be one of the best, which is very helpful to know when one craves study-stress comfort 🍪😉 Enjoy~ Ingredients: -75g vegan butter -1/2 cup brown sugar -1/2 cup white sugar -1 egg replacer (you can use the “Orgran” boxed stuff from the supermarket OR use 1 flax egg, which is 1 tbsp ground flaxseed to 3 tbsp water, let it sit for 10 minutes in the fridge) -1/2 cup vegan chocolate chips -1/2 tsp baking soda -1 1/4 cups plain flour Directions: 1. Preheat oven to 180 degrees Celsius. 2. Microwave butter for 1 minute. Add both measures of sugar and the “egg” to the butter and beat with a fork until well combined. 3. Line an oven tray with baking paper or liner. Divide the mixture into about 12 small balls, leaving enough room between them to allow for spreading. Gently flatten each ball slightly. 4. Place the cookies in the oven and bake for 10-12 minutes or until golden brown. 5. Some of you have asked for more lunch content (cough @candicecristine 😉) so here’s a lil peek behind the curtain: TLT Sandwich (tempeh lettuce & tomato) with @justforall vegan mayo on @traderjoes multigrain sprouted bread (and @lacroixwater obvi!!) For the tempeh “bacon”, I marinated sliced tempeh overnight in soy sauce, maple syrup, liquid smoke, thyme, apple cider vinegar, sesame oil, paprika, and black pepper. Then I baked at 375 for 30 minutes, flipping once halfway! Ingredientes 3 1/2 tazas agua 1 taza (140 g) almendras, remojadas en agua por una noche 1 pizca de sal 1/4 cucharadita de vainilla 1 cucharada de lavanda (grado culinario) 1/4 cucharadita de canela (opcional) 1 dátil sin semilla (opcional) Procedimiento 1. Coloca las almendras y la lavanda a remojar con agua durante la noche (adicional a las 3 tazas de la receta). Como opcional puedes colocar aquí un dátil sin semilla. 2. Al día siguiente escurre el agua usando un colador y remueve la piel de las almendras, sera fácil porque estuvieron en remojo. 3. Coloca todos los ingredientes en la licuadora y agrega el agua. Licúa hasta que sea una mezcla homogénea. 4. Utilizando un “cheese cloth” o tela para colar leche de nueces procede a colar, usa un tazón limpio y colador. Coloca la tela en el colador y vierte la mezcla, cierra tomando los extremos y procede a exprimir. Debes exprimir con cuidado para obtener la mayor cantidad de leche de almendras. 5. Vierte la leche de almendras en un recipiente de vidrio con tapa y mantén refrigerado, revuelve bien antes de usar!!
