My favorite meal preps are the ones that involve dumping all the ingredients in the slow cooker. Set it and forget it. 😜 . Ingredients: coconut milk, Thai red curry paste, Veggie broth, baby potatoes, cauliflower florets, peas, kale, cilantro. 🥘 . Instructions: dump in pot. Cook on high for 4 hours. A work week of lunches is served and life is good. 🤩

🌱 Encouragement > Judgement 🌱 ... I had the privilege of gaining a new meal-prep client this past week (applause button👏), and while curating her menu I struggled with the idea of partially plant-based meal prep. For some out there, it's "plant-based or get outta my face" 😅 but I hate that mindset.👎 ... Would a personal trainer refuse a client who wanted to start off at a slow place? Would a language teacher brush off a student who couldn't speak fluently right off the bat? So why do some in the plant-based/vegan community pass judgement on those who are entering a new space and choose not to dive right in? ... Just like that dangerously obese person in the gym, there has to be a day ONE! Encouragement will always produce more fruit than judgement. Out of the first 6 meals I prepped for this client, 4 of them were vegan. That's 4 more vegan meals than she ate the week before. 4 less animal-based meals. Applaud progress. ... Let people enjoy the transition, whether it's eating 80/20 vegan, 50/50 vegan or something as simple as #meatlessmonday. And for all my fellow plant-based chefs out there, don't turn your backs on these clients! It's up to us to inform, introduce, instruct & inculcate a desire in them to initiate a plant-based lifestyle...even if it's one meal at a time. ✌️ #pwrplants #veganmealprep #vegetarianmealprep ... Baked veggie spring rolls with peanut dipping sauce 🌯 . . I had a really hard time trying to make these but honestly, they were worth it. They seemed very light compared to store bought spring rolls or even ones you can get at a Vietnamese restaurant. I filled the spring rolls with just a few ingredients (you can add whatever you like) and then wrapped them in phyllo pastry, creating that light flaky crust. The peanut dipping sauce was like the cherry on top; something super different and just a bit is needed to provide a blast of flavour. . . When you master tofu scramble it can be a game changer, I used to fuck this simple and delicious dish up till I learned three crucial things: ⠀ ⠀ 1) use firm or extra firm tofu only ⠀ 2) prior to cooking with the tofu, wrap it in a paper tower and drain it, really try to get the juices out so it’s dry as possible ⠀ 3) spices, spices, spices give tofu scramble life... pro tip: use curry and tumeric to make the tofu look like actual eggs if your into the traditional look and feel of things. ⠀ ⠀ ⠀ Pictured above is fried onion, kale, tofu and red bell pepper (season veggies w/ garlic salt and season tofu with curry, tumeric, salt and pepper) + chickpeas roasted and seasoned with cumin, salt, black pepper and cayenne pepper + Trader Joe’s salsa authentica 👌 ⠀ ⠀ #heaven #tofuscramble #veganrecipes #veganlife

Heaven vegan banana bread 😇🍌 ⠀ ⠀ Let me tell you how to make it and what you will need, but first let me say that many of those cake mix boxes can be made vegan. ⠀ You can use any cake mix of choice so if you don’t like bananas use any cake mix! ⠀ ⠀ Here’s what ingredients you will need for the cake: ⠀ ⠀ -1 box Duncan Hines banana supreme cake mix ⠀ -1 cup water ⠀ -3 bananas (to replace 3 eggs) ⠀ -3/4 cup vegetable oil ⠀ ⠀ Mix the ingredients in a bowl and then bake the mixture for the amount of time that the box recommends. ⠀ ⠀ As for the frosting, here is the site from which I got the recipe for the frosting: ⠀ ⠀ https://www.elizabethrider.com/vegan-vanilla-buttercream-frosting-recipe/⠀ ⠀ let me just say this recipe is amazing and here are the ingredients you need: ⠀ ⠀ -1 cup of earth balance vegan butter -3 cups of any organic powdered sugar (I used Wholesome brand organic powdered confectioners sugar) -2 teaspoons soy milk ⠀ -3/4 teaspoon vanilla extract ⠀ ⠀ 1. Happy Friday loves! I know it’s not breakfast time but I just love eating breakfast meals at all hours of the day. Are any of you guys like that as well? I tried a new twist on my normal oatmeal today and it was AMAZING! The ingredients are: . 1/2 cup oats 1 cup cashew/coconut milk blend 1 tbsp organic raw cacao powder 2 tsp brown sugar (you can use dates instead if you want) . I topped it off with half a banana, chia seeds and hemp seeds (if you haven’t gathered by now those are my favourite toppings😂)
